How to Make Footlong Pizza at Home With Store-Bought Dough

You can make a footlong pizza by stretching refrigerated store-bought dough into a narrow rectangle, topping it lightly, and baking it on a prepared sheet pan. The reliable method is simple: follow the temperature and handling instructions on your dough package, allow cold dough to relax, stretch it to roughly 12 inches long, and judge doneness by a browned crust and fully melted cheese.

“Footlong” describes the long, narrow shape rather than a standardized recipe. The exact width, thickness and baking time depend on whether you bought a rolled refrigerated crust, a dough ball or another fresh-dough format, plus the pan you use.

What you need for a footlong pizza

Use the ingredient list and storage directions supplied with your dough. The following checklist covers the method without locking you into a particular brand or dough style.

  • One package of refrigerated store-bought pizza dough or crust
  • Pizza sauce, used sparingly so the narrow base does not become soggy
  • Shredded or sliced cheese that melts well
  • Cooked or ready-to-eat toppings cut into small pieces
  • An oven-safe cookie sheet or rimmed baking sheet
  • Oil for the pan when the recipe or dough format calls for it
  • Oven mitts, a spatula or cutting board, and a sharp knife or pizza cutter

A rimmed baking sheet is useful because its edges contain oil and toppings while you press the dough into a rectangle. A pizza stone is not required for this adaptation.

Choose the right store-bought dough format

Package formats behave differently. Read the package before opening it, and use its oven temperature, pan recommendation, storage limits and handling instructions as the controlling directions.

Dough format What to expect Handling approach Likely texture
Rolled refrigerated crust Already flattened and usually easy to unroll Unroll gently, then press and stretch the sheet into a longer, narrower shape Often thinner and crisper, especially when prebaked if the package allows it
Refrigerated dough ball More elastic and likely to spring back Let it warm according to the package, press from the center outward, and rest it if it resists Can be soft and breadier unless stretched thin
Other fresh or refrigerated dough Resting time, pan type and temperature may differ Follow the specific package method rather than borrowing timings from another product Varies by formulation and thickness

The footlong proportions are an editorial adaptation, not a tested standard from the published recipes used for this method. The dough package remains more authoritative than a generic chart.

Set the oven and prepare the pan

Start with the temperature printed on your dough package. As one example, Pillsbury’s refrigerated crust directions specify 400°F on a nonstick cookie sheet and 425°F for other pan types. Those settings apply to that product’s instructions, not automatically to every refrigerated dough.

  1. Check whether your package calls for a cookie sheet, rimmed pan, greasing, prebaking or any other special preparation.
  2. Move an oven rack to the position recommended by the package. If no position is given, a center rack is a practical starting point.
  3. Prepare the pan as directed. If oiling is appropriate, apply a thin, even film over the surface and lightly along the rim. Excess oil can make the bottom greasy and cause toppings to slide.

Do not put a cold, topped pizza into an oven that has not reached the package temperature. A fully preheated oven helps the narrow crust set before the sauce and cheese can soak into it.

Let cold dough relax before shaping

Cold dough is harder to stretch and more likely to tear or contract. Use the package’s warming instructions and never leave dough out longer than its storage guidance permits. Pillsbury’s sheet-pan recipe allows about 30 minutes at room temperature; another published dough method uses 15 to 30 minutes. These are examples, not a universal rule.

  1. Keep the dough covered or in its package while it comes toward room temperature so the surface does not dry out.
  2. When it feels flexible rather than stiff, transfer it to the prepared pan or a lightly floured work surface, depending on the package directions.
  3. Avoid forcing a still-cold dough. Stretching aggressively can create thin spots that burn before the thicker center cooks.

Shape the footlong rectangle

Aim for a strip roughly 12 inches long. The narrow width is your practical choice: make it narrow enough to read as a footlong but wide enough to hold a light layer of sauce, cheese and toppings without spilling.

  1. Place the dough in the center of the prepared pan.
  2. Press gently from the middle outward with your fingertips or the flats of your hands. Work toward the ends, then along the sides.
  3. Stretch lengthwise first, checking that the dough remains an even thickness. If you need to lift it, support it with both hands instead of pulling one corner.
  4. Leave a slightly thicker border if you want a defined rim. Keep the center thinner so the toppings do not sit on a raw, doughy layer.
  5. Square the ends with your fingers. A perfect rectangle is unnecessary; an even, narrow shape matters more than straight corners.

A rectangular pizza method republished by the Associated Press from Milk Street uses an oiled rimmed baking sheet and presses from the middle outward. That approach is useful here because it limits tearing and keeps the dough anchored to the pan.

When the dough keeps shrinking

Elastic dough often needs a pause. Stop stretching, leave it in the pan, and let it rest for 5 to 10 minutes. Then press and stretch again. If it still contracts, repeat a short rest rather than fighting it; gluten relaxes with time, and forcing the dough can produce a tough edge or holes.

Top a narrow pizza without weighing it down

A footlong base has less surface area than a conventional round pizza, so a heavy topping load can leave the center wet and the edges undercooked. Build the pizza in thin, even layers.

  1. Spread a modest amount of sauce from end to end, stopping short of the rim. Too much sauce adds moisture faster than the narrow crust can evaporate it.
  2. Add an even layer of cheese. Keep uncovered patches small enough that the crust is protected but not buried.
  3. Distribute toppings in small pieces. Thick slices, wet vegetables and large piles of meat can create cold or soggy pockets.
  4. Press unusually tall toppings down lightly so they do not roll off when you move the pan.

If you want a crisp bottom, use less sauce and avoid ingredients that release a lot of water unless they are cooked or drained first. If you prefer a softer, thicker bite, leave the dough a little more substantial while still keeping the topping layer moderate.

Bake until the crust and cheese show doneness

Use the package’s baking method and timing as your starting point. There is no tested universal bake time for this exact footlong shape, and the same dough can finish at different speeds in a nonstick cookie sheet, a dark metal pan or a lighter rimmed sheet.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
  1. Place the topped pan in the fully preheated oven.
  2. Begin checking at the earliest time listed for your dough, especially if you stretched the center very thin.
  3. Look for a deeply golden or browned crust around the edges and underneath, plus cheese that is fully melted and visibly hot.
  4. If the cheese is melted but the bottom is pale, continue baking in short intervals and check the underside. If the top is browning too quickly, move the pan to a lower rack if your oven and package directions permit.
  5. Remove the pizza with oven mitts and set the hot pan on a heat-safe surface.

For one Pillsbury canned refrigerated crust example, the instructions call for an 8-minute prebake followed by 6 to 10 minutes after topping. That timing is specific to that product and method; do not transfer it automatically to a dough ball or to your footlong adaptation.

Choose between a thin, crisp crust and a softer crust

Goal Shaping choice Topping choice Baking consideration
Thinner and crisper Stretch the center evenly and avoid a thick middle Use a restrained layer of sauce and well-drained toppings Use the package’s prebake option if provided, then top and finish baking
Softer and thicker Leave more dough in the center and a fuller rim Use moderate toppings so the thicker dough can cook through Follow the package method and allow extra checking time if the dough is visibly thick; do not assume a fixed added time

Prebaking is not mandatory unless the package requires it. It is a technique for improving crispness when the dough instructions present it as an option.

Cool, slice and serve

Let the pizza stand briefly after it comes out of the oven. A short rest lets melted cheese settle and gives the crust time to firm enough for clean cuts.

  1. Transfer the pizza to a cutting board if the pan is safe to move and the crust has set.
  2. Slice across the width into strips or small portions. Crosswise cuts preserve the long shape while making the pieces easy to lift.
  3. Serve while the cheese is hot, taking care with very hot sauce and toppings in the center.

If the crust is difficult to release, run a thin spatula under one long edge, then work toward the middle instead of lifting the entire pizza at once.

Store leftovers safely

Cool leftovers promptly and refrigerate them within two hours after cooking, following Pillsbury’s general home-pizza guidance. Divide a long pizza into smaller portions so it cools more quickly, place it in a covered container or wrap it, and refrigerate. Reheat until hot throughout. Do not leave slices at room temperature while waiting for the next meal.

Troubleshoot the most common problems

The dough tears while stretching

It may still be cold, or you may be pulling one spot too thin. Stop, let it rest, and resume pressing from the center outward. Patch a small hole by folding nearby dough over it and pressing the seam closed; do not keep stretching that area.

The dough springs back repeatedly

Give it a 5- to 10-minute rest, then try again. Repeated contraction is a sign that the dough needs more relaxation, not more force.

The center is soggy

Reduce sauce, drain wet toppings, and verify that the oven reached the package temperature. A very thick center may need more time, but judge by the browned underside and cooked dough rather than by a generic minute count.

The bottom burns before the cheese melts

The pan may be dark, heavily oiled or positioned too close to the lower heating element, or the center may be stretched too thin. Use the pan and rack guidance on the package, check earlier, and move the pan higher if your oven instructions allow it.

The cheese browns before the crust is done

Lower the pan position or loosely shield the top only if your package and oven instructions permit. Next time, use a lighter topping layer and check whether the dough was left unusually thick.

The pizza sticks to the pan

Follow the package’s greasing recommendation and make sure the pan is suitable for the dough. Let the baked crust set briefly, then loosen it with a thin spatula. Scraping while the cheese is still fluid can tear the base.

A practical serving plan for one footlong pizza

For an even bake, organize the work before the dough leaves the refrigerator: preheat the oven, prepare the pan, portion sauce and toppings, and have the cutting board ready. Once the dough is warm, shape it without long pauses, because an uncovered surface can dry out. Keep the center free of large topping piles, and check the underside before deciding the pizza is finished.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The result should be a compact, shareable pizza that is easy to cut into strips. Its exact thickness and crispness come from the dough format, the amount of stretching and the pan, so two packages prepared with the same 12-inch target can still bake differently.

Key points to remember

  • Use the exact temperature, pan type and handling directions printed on your dough package.
  • Warm refrigerated dough according to its instructions; published examples range from 15 to 30 minutes, while one Pillsbury sheet-pan method allows about 30 minutes.
  • Press from the center outward and rest the dough for 5 to 10 minutes if it springs back.
  • Keep sauce, cheese and toppings modest on the narrow base.
  • There is no universal tested bake time for this footlong adaptation; rely on a browned crust, a cooked underside and melted cheese.
  • Refrigerate leftovers within two hours of cooking.
