Make a satisfying meat-free chicken pot pie by building a savory vegetable gravy, adding plant-based chicken prepared according to its package, and baking the filling under pastry until the crust is golden and the center is hot and bubbling. Choose a full double crust if you want pastry all around, or a puff-pastry top for a simpler route.
Choose your pot-pie style
| Format | What to expect | Best fit |
|---|---|---|
| Double crust | Pastry covers the bottom and top, giving the pie a more traditional, fully enclosed crust. Making dough adds work and requires chilling time; Beyond Meat’s Beyond Steak Pot Pie lists 2 hours of prep, including at least 2 hours of dough chilling, and 80 minutes of cook time for its particular recipe. | When you want homemade pastry and have time to plan ahead. |
| Puff-pastry top | A sheet of pastry covers the filling without a bottom crust. It bakes into a light, flaky lid; the filling should bubble beneath it. Daring Foods’ recipe says to bake 15–20 minutes, or until its pastry is golden and the mixture below bubbles. | When you want an easier, top-only crust; check the pastry label if you need a non-dairy option. |
These are two source recipes’ methods and timings, not universal bake-time guarantees. Follow the pastry package and check that the filling is hot throughout.

Pick plant-based chicken that suits the filling
Meatless chicken pieces or strips can provide the familiar bite in a chicken-style pot pie without using poultry. Published recipes have used products such as Gardein Chick’n Scallopini, MorningStar Chick’n Strips and Beyond Meat; those examples come from an older recipe, and product availability and formulations can change. Choose a product whose shape, seasoning and ingredients suit your pie rather than assuming every substitute works identically.

- Shape: Cut larger pieces into bite-size portions if appropriate for the product. Strips, scallopini and chunks may need different preparation.
- Breading and seasoning: Breaded or strongly seasoned pieces will change the texture and flavor of the gravy. Check the package and adjust the seasoning of the filling accordingly.
- Preparation: Cook or warm the plant-based protein as its own package directs before combining it with the filling. Do not assume it can be handled raw or cooked the same way as another brand.
- Dietary needs: Check the current ingredient and allergen information for the specific product, pastry and broth.
Build a hearty vegetable gravy
A dependable filling starts with onion and vegetables softened in a pan, followed by flour and vegetable broth to make a thick gravy. Potatoes add substance; carrots, mushrooms and peas bring texture and sweetness. The Beyond Meat pot-pie recipe uses potatoes, onion, carrots, mushrooms, peas, broth and oat milk as one example of this combination.

- Prepare the protein. Follow its package directions. If the cooked pieces are large, cut them into bite-size portions when suitable.
- Soften the vegetables. Cook chopped onion and the other vegetables in a pan until they begin to soften. If using potatoes, cut them into small pieces so they can become tender in the filling.
- Make the gravy. Stir flour through the vegetables, then gradually add vegetable broth, stirring to reduce lumps. Simmer until the liquid thickens. Add a splash of non-dairy milk if you want a creamier filling and its ingredients meet your needs.
- Season and combine. Add herbs and seasonings to taste, then fold in the prepared plant-based chicken. The filling should be thick rather than watery so it stays beneath the pastry.
Assemble and bake
For a puff-pastry top
- Heat the oven according to the pastry package or the recipe you are following.
- Spoon the hot filling into an oven-safe pie dish or baking dish.
- Lay the pastry over the top and trim or tuck the edges to fit. Cut vents if the pastry instructions call for them.
- Bake until the pastry is deeply golden and the filling bubbles at the edges. Daring Foods’ recipe gives 15–20 minutes as its own bake instruction; dish size, filling temperature and pastry can affect timing.
For a double crust
- Prepare and chill pastry dough. Beyond Meat’s recipe uses flour, cold or frozen butter and ice water, then chills the dough; that recipe lists at least 2 hours of chilling.
- Line the pie dish with the bottom crust, add the filling, then place the top crust over it and seal the edges.
- Cut steam vents in the top crust. A pastry cutter can help with dough preparation, but Beyond Meat’s instructions also allow two forks or fingers.
- Bake according to the recipe for your chosen pastry. Beyond Meat’s Beyond Steak Pot Pie specifies 375°F for 45–55 minutes, then a 15-minute rest. Those are instructions for that recipe, not a universal timing for every pie.
Check the finished pie safely
Look for golden pastry and bubbling filling, then allow the pie to rest briefly so the gravy settles before serving. Use the plant-based product’s package directions for that product’s preparation and doneness; there is no single temperature established here for all plant-based chicken substitutes.
USDA FSIS recommends that poultry reach 165°F measured with a food thermometer. That guidance applies to poultry, not automatically to meatless products. Beyond Meat separately gives a 165°F instruction for its own Beyond Chicken Tenders, but that product-specific direction should not be transferred to another plant-based protein. USDA FSIS explains that a food thermometer is the sure way to know food has reached a temperature high enough to destroy foodborne bacteria: Doneness Versus Safety.
