Get refrigerated and frozen groceries into temperature-controlled storage promptly, keep raw animal foods away from ready-to-eat items, and freeze surplus portions before their safe-use windows close. A large shop does not change the food-safety rules: the key is to unload, sort and store perishables quickly.
What to do first when you get home
- Make room before unloading. Clear space in the refrigerator and freezer so cold air can circulate. Check both appliances with thermometers rather than relying only on their control dials; the U.S. Food and Drug Administration and USDA recommend appliance thermometers for checking temperatures.
- Unload chilled and frozen items promptly. FDA and USDA guidance sets a maximum of two hours outside temperature control at ordinary room temperatures, or one hour when the air is above 90°F. Treat those limits as a safety cutoff, not a shopping or unpacking target. The FDA gives the same rule for meat, poultry, seafood, eggs, produce and other foods that require refrigeration in its Are You Storing Food Safely? guidance.
- Separate raw animal foods. Keep raw meat, poultry and seafood apart from produce and ready-to-eat foods in shopping bags and while putting groceries away. At home, place raw items in leak-proof packaging or a container on a shelf where juices cannot drip onto other food. Keep refrigerated foods covered or sealed.
- Sort by when you will use each item. Refrigerate what you can use within its safe storage window. Divide the rest into meal-sized portions and freeze it promptly. Marking packages with the date or intended meal can help you use older portions first; a label is an organizing aid, not a safety guarantee.
Set refrigerator and freezer temperatures
Keep the refrigerator at or below 40°F (4°C) and the freezer at or below 0°F (-18°C), the targets in FDA and USDA consumer guidance. Check with an appliance thermometer, since a dial setting alone does not tell you the actual temperature. See the FDA’s storage guidance and USDA’s Food Safety Basics.

Choose what to cook or freeze first
Prioritize foods with the shortest refrigerator windows. USDA Food Safety and Inspection Service guidance gives these timeframes for raw meat and poultry kept refrigerated at 40°F or below:

These are refrigerator storage windows, not guarantees that food remains suitable if it was mishandled earlier. For particular food categories beyond these examples, follow package directions and consult USDA’s detailed storage chart. If a purchase exceeds what you can use in time, freeze portions while they are still within their safe window.

Cool and store leftovers safely
Divide a large batch of cooked food or leftovers into shallow containers so it cools more quickly, then refrigerate or freeze promptly. USDA says most cooked leftovers should be used within three to four days in the refrigerator. Reheat leftovers to 165°F. Its detailed advice is in Leftovers and Food Safety.
Use the freezer to prevent waste—not as a quality guarantee
Food kept continuously frozen at 0°F remains safe indefinitely, according to FDA guidance; recommended freezer storage times generally relate to quality, which can decline over time. Portioning bulk purchases before freezing makes it easier to thaw only what you need. Use freezer-safe bags or covered containers if helpful, and label portions so you can identify and rotate them. Freezing does not undo unsafe time spent at room temperature.

Buy perishables to match your household’s use
Bulk buying can be less useful when it leaves more produce or dairy than you can consume before quality or safe storage becomes a concern. The FDA specifically cautions consumers against impulse or bulk purchases of produce and dairy with limited shelf life. Plan meals around the most perishable items, check package storage directions, and buy a quantity your household can realistically use. Warehouse-club shopping does not call for special food-safety rules; ordinary U.S. guidance for storing groceries applies.
