Why crunchy toppings get soggy in ice cream

Ways to preserve crunch
Add toppings when you serve
Keep cereal, cookie pieces, and wafers separate from the ice cream until serving. This limits how long they are in contact with the moist dessert, so it is the simplest approach when crunch matters. It is a practical inference from the moisture-transfer mechanism, not a measured timing rule: the available sources do not establish how many minutes or hours a topping will stay crisp.
Keep unused toppings dry and airtight
Store toppings that have not been mixed into ice cream in a sealed plastic or glass container, away from dampness. Try a thin fat-based coating for prepared mix-ins
Edible coatings with low water-vapor permeability can reduce moisture migration, and hydrophobic ingredients are one approach discussed in the food-science literature. A thin chocolate or cocoa-butter coating is a practical category to consider for pieces you want to mix in, but the sources do not test a particular home recipe, topping, or storage duration. Keep the ice cream properly frozen
