Use a tightly lidded container, empty it every few days, and rinse it each time; wash it with soap at least weekly. Drain wet scraps and use paper to soak up excess moisture. If you need to keep scraps longer, store the container in the refrigerator or freezer. These steps apply to a kitchen collection pail—an active compost pile or worm bin needs different care.
Keep a kitchen scrap pail clean, covered, and short-lived
Choose a lid that fits
A reused tub with a secure lid works; you do not need to buy a special countertop bin. Portland recommends a lidded container, while King County advises a tight-fitting lid. A carbon filter under the lid is an optional feature mentioned by King County, not a substitute for emptying and cleaning.

Empty scraps every few days
Portland advises not letting scraps sit for more than a few days to help prevent odors and fruit flies. Empty the pail sooner if scraps are wet or already smell. Follow your local collection instructions for when and where to transfer scraps; schedules vary by service.

Rinse and wash the container
Rinse the pail whenever you empty it. Portland recommends washing it with soap at least weekly or cleaning it in the dishwasher. Seattle recommends washing the kitchen container thoroughly with detergent and water after every use. If residue or odor remains, wash it rather than relying on a deodorizer.

Reduce moisture and food residue
Drain liquid from scraps before putting them in the pail. Paper, newspaper, or paper towels can absorb moisture and make the container easier to clean; Seattle also suggests baking soda to help reduce odor. Baking soda does not replace regular emptying and washing.
Liners can reduce mess, but collection rules differ. Check your local program before using a compostable bag; paper liners may also be subject to local instructions.

- Odor Control - This kitchen compost bin with lid comes with charcoal filters that trap odors naturally, so food scraps can build up for a full week without any bad smell taking over your kitchen, no matter how close you get to trash day.
- Easy Care - Line the bottom of this small compost bin with newspaper or cardboard to absorb liquid, and drain excess moisture from food scraps before adding them. A quick weekly rinse with water, mild soap, or vinegar keeps things smelling fresh.
Use cold storage if you cannot empty the pail soon
If scraps need to wait longer than a few days, keep the container in the refrigerator or freezer. Portland and the U.S. Environmental Protection Agency identify cold storage as an option, and King County specifically recommends freezer storage to reduce odor. This can delay trips to an outdoor cart, but it uses refrigerator or freezer space.

If you have an active compost or worm bin
For an active compost pile
A foul smell from an active home compost pile may mean it is too wet or lacks enough air. The EPA recommends adding dry “browns” and turning the pile to improve airflow. This is separate from washing a kitchen collection pail.

For an indoor worm bin
In its guidance for indoor worm composting, the EPA says, “Exposed food attracts fruit flies, but covered food scraps don’t.” Cover all food scraps with soil and moist paper, then close the bin. That advice is for a worm bin, not a general claim about every kitchen pail.
Independent reader supportYour contribution helps us test, update, and keep practical guides available for everyone. What to do if fruit flies appear
Remove exposed food scraps, empty and wash the pail, then keep new scraps covered by the lid and empty them regularly. For a worm bin, cover scraps with soil and moist paper as described above. Seattle Public Utilities notes that fruit flies “will not harm you or the food waste, but they can be pesky.”
