At 0°F (−18°C) or below, the storage times below are quality guides—not safety deadlines. Plain bread and cakes are different from pastries or cakes with cream, custard, or cheese fillings, which need more careful thawing and temperature control.
How to freeze baked goods
- Freeze while fresh. Freezing preserves the condition an item is in; it will not make stale bread or a dried-out cake fresh again. Let everything cool completely before wrapping to reduce trapped moisture.
- Choose a useful portion size. Freeze a loaf whole or slice it first; divide cakes and pastries into portions if you expect to thaw only some. Place freezer paper between pieces that might stick together.
- Wrap to limit air exposure. Use heavy freezer-weight plastic bags, heavy plastic wrap, aluminum foil, or freezer paper. Wrap snugly, press out excess air from bags, and protect delicate or frosted items from being crushed. For extra protection, use more than one layer of freezer-suitable wrapping.
- Freeze promptly and label. Put packages in a single layer with space around them until frozen solid, then stack them. Mark the contents and date so you can use older packages first.
These packaging materials are listed by the USDA Food Safety and Inspection Service (FSIS). The agency also recommends freezing at 0°F or below.

How long bread, pastries, and cakes keep their quality
The following are University of Illinois Extension recommendations for freezer quality at 0°F. The page does not state a publication year, and estimates can vary with recipe and category.

Other extension guidance differs: the University of Missouri gives about 3 months for baked bread, coffee cake, rolls, and cakes, and 2–4 months for quick breads. Oregon State Extension also varies its advice by cake and pastry-crust type. Use the item-specific estimate as a practical target rather than a precise cutoff.

Thawing: plain baked goods versus filled or frosted ones
Plain bread, rolls, quick breads, and unfilled pastries
For most baked goods without fillings, thaw in the wrapping at room temperature. Keeping the package on while the item thaws helps limit drying and moisture forming on the surface. Missouri Extension recommends this approach for most unfilled baked goods.
Cakes with frosting or fillings
Missouri Extension recommends thawing frosted or filled cakes in the refrigerator. A whole cake that needs to keep its shape can be frozen on a tray first until firm, then wrapped and protected from pressure. For the best results with cake and frosting, the extension suggests freezing them separately where practical.

Cream, custard, and cheese fillings
Do not treat a cream-, custard-, or cheese-filled pastry as an ordinary loaf of bread. Use refrigeration and follow any applicable directions for that product. FSIS lists refrigerator, cold-water, and microwave thawing for foods generally and warns against thawing perishable food on the counter; room-temperature thawing advice for plain baked goods is not a blanket rule for perishable fillings.
What freezer time does—and does not—mean for safety
FSIS says food held continuously at 0°F or below remains safe almost indefinitely, while recommended frozen storage times are for quality. Freezing inactivates microbes while food remains frozen; it does not sterilize food, and microbes can become active again after thawing. The quality periods above therefore do not mean food becomes unsafe as soon as that time passes.

After a freezer outage, use the specific product and temperature guidance in the FoodSafety.gov power-outage chart. In the chart’s stated circumstances, breads, rolls, muffins, and cakes without custard fillings may be refrozen; cakes, pies, and pastries with custard or cheese filling should be discarded after exposure above 40°F for more than two hours. This is outage guidance, not a universal rule for every temperature-abused baked good. Do not use appearance or smell alone to decide whether an item is safe.
