How to Cook Less Familiar British Seafood Species: A Practical Species-by-Species Guide

The dependable way to cook unfamiliar British seafood is to match the method to the cut and texture. Delicate fillets need brief, gentle cooking; a small whole fish can be enclosed or cooked over high heat; firm fish can carry stronger seasoning in stews, fishcakes and croquettes. Thickness and species determine the timing, so use a recipe written for the fish rather than a universal minute-per-side rule.

Start with the cut and texture

Species names are useful, but the piece in front of you is the more immediate cooking clue. A thin fillet loses moisture quickly, while a whole fish has skin, bones and a cavity that protect the flesh. A firm fillet or steak can be broken into a robust dish without falling apart.

As an Amazon Associate I earn from qualifying purchases.

  • Delicate fillets: pan-frying, shallow-frying, grilling, roasting, baking or steaming can work. Handle them as little as possible and support them with a broad turner when turning.
  • Small whole fish: cooking enclosed in paper or foil keeps the juices around the fish; grilling or roasting gives the skin more colour but demands attention in the final stage.
  • Firm fish: assertive seasoning, broths, fishcakes and croquettes make use of flesh that stays flaky after cooking.
  • Cephalopods: squid and cuttlefish need the method and timing specified by the individual recipe. The sources for these species do not establish a universal timing rule.

Before cooking, tell the fishmonger how you intend to use the fish. They can scale, gut or fillet an unfamiliar species, and can explain whether the piece supplied is a whole fish, steak or fillet. That preparation affects both the method and how easily you can serve it.

How the less familiar species compare

Species Typical form in this guide Flesh and skin Methods and dishes Flavour and handling Availability note
Megrim (Cornish sole) Flatfish fillet or small whole fish Soft flesh; thin skin that can crisp Pan- or shallow-fry, grill, roast, bake or steam; megrim with crushed potatoes and seaweed tartare Delicate texture; protect the flesh while turning Ask locally; seasonal supply changes
Saithe (coley) Fillet, flakes for a mixture Firm and flaky when cooked Asian broth, fishcakes, croquettes and other full-flavoured dishes Distinctive, stronger flavour than a very mild white fish Stock health varies around the UK; check current advice
Gurnard Small whole fish or fillet Suitable for enclosed cooking when whole En papillote; red gurnard with peperonata and salsa verde; spicy fish-finger sandwich Choose a preparation that suits the bones and size supplied Port and fishmonger supply is local and changeable
Cuttlefish Steak or prepared pieces Works as a substantial seafood piece Barbecue cuttlefish steaks; crispy cuttlefish Use the recipe’s specified treatment and timing Ask what preparation the fishmonger has done
Squid Whole cleaned squid or prepared pieces Needs recipe-specific handling Stuffed squid and other preparations in the recipe index Follow the named recipe rather than transferring timing from another species Availability depends on local trade and season

The table is a planning aid, not a set of interchangeable timings. A thick steak and a thin fillet of the same species will not cook at the same rate, and a whole fish behaves differently from a skinned portion.

How do I cook megrim, also called Cornish sole?

What to expect

Megrim has soft flesh and thin skin. The skin can become crisp when the fish is fried, grilled or roasted, while baking and steaming offer gentler alternatives. Treat it as a flatfish: keep the fillet supported, avoid excessive handling and choose a pan or tray large enough that it lies flat.

Pan-frying or shallow-frying

  1. Ask for the fish to be scaled and filleted if you do not want to deal with the flatfish’s bones yourself.
  2. Pat the surface dry. Moisture on the skin prevents it from colouring and encourages sticking.
  3. Heat a lightly oiled pan and place the fish skin-side down when the recipe calls for crisp skin.
  4. Leave it undisturbed until the skin has browned and the flesh is beginning to turn opaque at the sides.
  5. Turn with a fish spatula or another broad, thin turner, then finish according to the recipe. Because the flesh is soft, one careful turn is preferable to repeated movement.

Use the recipe’s heat setting and timing: the appropriate duration depends on the thickness of the fillet and whether it has skin and bones.

Grilling, roasting, baking or steaming

Grilling and roasting expose the thin skin to direct heat and can produce a crisp surface. Baking is more forgiving when the fish is in a covered dish; a small amount of liquid creates steam and helps prevent the surface from drying. Steaming keeps the texture soft and is useful when crisp skin is not the goal. In each case, arrange the fish in a single layer and use the recipe’s stated temperature and timing.

A complete dish to start with

Discover Seafood’s recipe index lists megrim with crushed potatoes and seaweed tartare. That pairing gives the mild, soft fish a substantial side and a briny, strongly flavoured sauce. Use the recipe as written for the fish size, cooking temperature and timing rather than adapting a cod recipe by assumption.

What can I cook with coley (saithe)?

Why coley behaves differently from delicate flatfish

Saithe is also called coley. Its cooked flesh is firm and flaky, and its distinctive flavour is useful when a dish can support more than a very mild white-fish taste. The texture makes it practical for mixtures that are shaped and cooked again, including fishcakes and croquettes.

Fishcakes and croquettes

Use a recipe that specifies cooked coley, then flake the fish into the mixture without crushing it into a paste. Firm flakes should remain visible so the finished cake has structure. Chill and shape the mixture as directed, coat it if the recipe calls for a crumb, and cook until the exterior is browned and the centre is hot. Seasonings with clear character work well with coley; the point is to complement its flavour rather than disguise the species.

Coley in an Asian broth

Discover Seafood lists an Asian broth with coley. A broth is a useful format when you want the fish’s flakes to remain intact while absorbing a strongly seasoned liquid. Add the fish at the stage specified by the recipe, keep the broth at the stated heat and avoid prolonged boiling, which can break up the pieces. Serve as soon as the recipe says the fish is cooked.

Is coley a good alternative to cod?

Coley can fill a similar role when you need a white fish that flakes and can be shaped into fishcakes or used in a strongly flavoured dish. It is not a flavour-identical replacement: coley has a more distinctive taste, so a cod recipe built around a very neutral flavour may need its seasoning adjusted. Compare the supplied cut and thickness, and follow a coley-specific recipe when one is available.

How can I cook gurnard?

Small whole gurnard en papillote

Discover Seafood’s general guide includes small whole gurnard among the fish suited to en papillote. The method encloses the fish in a sealed paper parcel with a small number of aromatics. The parcel traps the fish’s own juices and creates a moist cooking environment.

  1. Use a piece of baking parchment large enough to hold the fish with room for a sealed fold.
  2. Place the prepared whole gurnard in the centre and add only the aromatics and liquid specified by your recipe.
  3. Fold and crimp the paper securely so steam cannot escape easily.
  4. Put the parcel on a tray and cook at the recipe’s stated temperature.
  5. Open carefully away from your face; escaping steam is hot. Remove the fish and deal with the bones at the table or ask the fishmonger to prepare it before cooking.

Do not treat the parcel as a timing shortcut. Fish size, the number of fish in the parcel and the recipe’s heat setting determine when it is ready.

Two recipe directions

  • Red gurnard with peperonata and salsa verde: a vegetable-and-herb combination that gives the fish both sweetness and acidity. Follow the recipe for whether the fish is cooked whole or as portions.
  • Spicy gurnard fish-finger sandwich: a practical option when the fish has been prepared into portions suitable for coating and frying. Keep pieces of similar thickness together so they finish at the same time.

How should I cook cuttlefish and squid?

Cuttlefish steaks

The general guide lists cuttlefish steaks for barbecuing, and the recipe index includes crispy cuttlefish. Barbecue heat is intense: it can dry seafood if the pieces stay over the heat after they are cooked. Set up the grill before the seafood goes on, use the recipe’s preparation and timing, and move the steaks off the heat as soon as the recipe says they are done.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Ask the fishmonger whether the cuttlefish has been cleaned and cut into steaks. That avoids confusing a prepared steak with a whole animal, which requires different preparation. Use the named recipe for seasoning, surface treatment and timing; no general timing rule is established for cuttlefish here.

Stuffed squid

Discover Seafood’s index includes stuffed squid. Stuffing changes the thickness of the seafood and introduces a second component that must heat through, so do not borrow the cooking time from a thin ring or a cuttlefish steak. Follow the recipe’s order for cleaning, filling, securing and cooking. If the fishmonger has supplied whole cleaned squid, confirm which parts are intended for the recipe before you begin.

Crispy preparations

For crispy cuttlefish or a coated squid preparation, keep the pieces evenly sized and avoid overcrowding the cooking surface. Overcrowding lowers the heat and produces a wet coating; excessive time over high heat can dry the seafood. The recipe’s instructions take priority over a generic seafood timing.

Choosing a method without overcooking the fish

Baking with a little liquid

Baking can be gentle when the fish sits in a dish with a small amount of liquid. The liquid produces steam and reduces the chance of a dry surface. This is particularly useful for a delicate fillet or a portion that is not being browned. Cover the dish only when the recipe calls for it, because covering changes the cooking environment and the time required.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

En papillote

A paper parcel is a focused version of steaming and baking. Keep the aromatics restrained: too many ingredients release water and can crowd the fish. Seal the parcel well, place it on a tray and use the recipe’s specified heat and timing. The parcel should be opened at the table only if the recipe intends that presentation; otherwise open it carefully in the kitchen.

Pan-frying and shallow-frying

These methods suit cuts that can lie flat and be turned once. Dry the surface, preheat the pan, leave room between portions and use a broad turner for fragile fillets. A fish spatula is optional rather than essential; its thin, flexible edge simply makes it easier to support a delicate piece during the turn.

Grilling and roasting

Direct heat develops colour quickly but gives you less margin for error. Use it for species and cuts whose recipe calls for grilling or roasting, keep the fish at the recommended distance from the heat and watch the final stage closely. Thin skin can crisp, as with megrim, but the flesh can still overcook.

Barbecuing

Barbecue heat is especially unforgiving. Cuttlefish steaks are listed as a suitable preparation, but intense heat can dry seafood when cooking continues after the correct point. Have the serving dish ready, use the recipe’s timing and remove the seafood promptly.

A practical workflow for an unfamiliar fish

  1. Identify the exact species and form. Confirm whether you have a whole fish, steak, skin-on fillet, skinless fillet or prepared pieces.
  2. Ask for preparation help. A fishmonger can scale, gut or fillet the fish and explain what bones remain.
  3. Choose a species-led recipe. Discover Seafood’s index provides starting points for coley, gurnard, megrim, squid and cuttlefish.
  4. Match the method to texture. Use gentle methods for soft fillets, enclosed or direct heat for suitable whole fish, and robust dishes for firm flakes.
  5. Measure the piece, not just the name. Thickness, bone-in structure, stuffing and the number of portions all change the cooking rate.
  6. Prepare the equipment first. Have the pan, tray, parchment, turner and serving dish ready before the seafood is heated.
  7. Follow the recipe’s heat and timing. There is no reliable universal timing that covers every species and cut.
  8. Serve promptly. Residual heat continues cooking seafood, particularly in a covered dish or parcel.

Sourcing less familiar British seafood

The Fishmongers’ Company describes Discover Seafood as a UK-wide resource connecting consumers with ports, fishers, fishmongers, retailers, seasonal seafood, recipes and preparation guides. Its purpose includes helping people move beyond the familiar “big five”. That makes it useful for finding a recipe and understanding how a species is normally prepared, but it cannot guarantee that a particular fish is available in your town on a particular day.

Availability is local and changeable. Ask the fishmonger what arrived recently, which cuts are available and whether the fish is suitable for the recipe you have chosen. A species appearing on a national recipe site is not proof that it is in season or landed nearby.

A 5 June 2026 article from the Fishmongers’ Company describes UK businesses using hake, coley, monkfish and rock salmon as menu options. That demonstrates commercial use, not a promise of retail supply or a judgement about which species is most sustainable for your location.

Checking sustainability and stock advice

Sustainability is not fixed by a species name alone. Area, fishing method and the latest assessment matter. The Discover Seafood saithe page notes that stock health varies across UK areas and directs readers to the Marine Conservation Society’s current Good Fish Guide. Check that current, location-specific advice before buying, especially when the fish has travelled through several parts of the supply chain.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.
  • Ask where the fish was caught and which fishing method was used, if the seller can provide that information.
  • Use current regional guidance rather than relying on an old article or a general reputation.
  • Treat “British” as a description of the fishery or market context, not as an automatic sustainability certification.
  • Be prepared to choose another species or cut if the current advice or local availability makes your first choice unsuitable.

Troubleshooting common problems

The fillet sticks to the pan

The surface may be wet, the pan may not be hot enough, or the fish may have been moved before the skin formed a crust. Pat the fish dry, preheat the pan and leave it in place until it releases more easily. A broad turner reduces tearing during the eventual turn.

The fish falls apart

Soft flesh, repeated turning and overcrowding are common causes. Cook portions in a single layer, turn once where possible and choose a tray or pan that supports the whole piece. If the fish is already flaking, transfer it with a wide spatula rather than trying to flip it again.

The outside is dry before the centre is ready

The piece may be thick, the heat too intense or the method unsuitable for that cut. Use the recipe’s temperature, reduce direct exposure when instructed and consider an enclosed or lightly moistened baking method for a delicate portion.

The barbecue seafood is tough

High heat can carry seafood past the point intended by the recipe. Prepare everything before the fish goes on, keep the pieces a consistent size and remove them promptly when the recipe says they are cooked.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

I cannot tell which preparation to buy

Show the fishmonger the recipe and ask for the closest matching cut. Explain whether you need a whole fish for a parcel, skin-on fillets for crisping, steaks for a barbecue or boneless flakes for fishcakes. This avoids buying a form that requires a different method.

Putting together a first meal

For a crisp, delicate plate, choose megrim fillets and use a pan-frying, grilling or roasting recipe; pair the fish with the crushed potatoes and seaweed tartare listed for megrim if you want a complete starting point. For a stronger, more substantial dish, choose coley and make fishcakes, croquettes or the listed Asian broth. If you want to cook a whole fish, small gurnard in a sealed parcel keeps the preparation contained and moist. For a barbecue, use the cuttlefish-steak recipe and plan the cooking so the seafood comes off the heat immediately when done. Squid is best approached through a named preparation such as stuffed squid, because its filling and shape change the cooking requirement.

These choices let the cut do the decision-making: soft fillet, firm flakes, small whole fish or prepared cephalopod. Once you know the form supplied and have a species-specific recipe, unfamiliar British seafood becomes a manageable change of method rather than a gamble.
