How to Compare Vertical Farming With Greenhouse and Field-Grown Produce

There is no universal winner. A fair comparison depends on the same crop, geography, season, electricity supply, yield assumptions and life-cycle boundary. Compare impacts per kilogram of saleable produce, then add productivity per square metre when land demand matters. A vertical farm may save substantial land and direct water while using far more electricity; a field may avoid lighting energy while requiring more land, irrigation, fertilizer or pesticides in a particular setting. Greenhouses fall between those extremes, but their results vary enormously with natural light, heating, cooling and supplemental lighting.

This framework answers the practical question, “How do vertical farms compare with greenhouse and field-grown produce?” It explains what to measure, shows the main lettuce studies without turning them into universal averages, and identifies the assumptions that can reverse a conclusion.

Start with the comparison question, not the technology label

“Vertical farming,” “greenhouse,” and “field-grown” describe production environments, not fixed environmental profiles. A warehouse with fully artificial lighting is different from a sunlit multilevel greenhouse. A naturally ventilated greenhouse is different from a heated, cooled facility with carbon dioxide enrichment. Field production ranges from irrigated, input-intensive plots to rain-fed systems.

The first decision is therefore the question being answered. If the question is land productivity, report kilograms per square metre per year. If it is climate impact, report kilograms of carbon-dioxide equivalent per kilogram of saleable crop. If it is water, specify whether the number is a farm withdrawal, consumptive use, or a life-cycle water-impact result. A single ranking cannot answer all three.

Use a functional unit that reflects what is sold

For most environmental comparisons, use one kilogram of marketable produce as the main functional unit. Include rejected or unsold material in the denominator only if the study defines it that way, and state the convention. Add output per square metre when the purpose is to compare land occupation or land sparing. Reporting only “per farm” or “per building” can make a high-yield system look better or worse simply because the facilities have different sizes.

Set the life-cycle boundary before collecting data

Write down whether the result includes farm construction, growing media, nutrient manufacture, electricity generation, packaging, refrigeration, transport, storage, retail losses and waste management. A production-stage result cannot be compared directly with a result that includes delivery to a shop. Electricity should be counted at the generation level when the study provides that information, not treated as impact-free energy at the facility meter.

What each production system actually controls

Vertical farms

Vertical farms stack growing layers and usually control light, temperature, humidity, irrigation and nutrient delivery. Stacking can sharply reduce land demand per unit of output. The trade-off is that indoor lighting and climate control can dominate energy use, especially when all light is supplied by electricity. The carbon result then depends on the grid or other power source as much as on the crop recipe.

Greenhouses

Greenhouses use a transparent enclosure, so sunlight can provide much of the crop’s light. Their energy profile can range from low-energy, naturally lit structures to highly controlled facilities that heat, cool, dehumidify and add artificial light. Calling both simply “greenhouse production” hides the variables that determine the result. A greenhouse with supplemental lighting may approach some vertical-farm energy burdens, while a mild-climate, sunlit structure may not.

Field production

Field crops receive sunlight without a lighting installation and generally avoid the building and climate-control burden of an indoor farm. They may, however, require more land per kilogram and, depending on climate and management, more irrigation water, fertilizer or pesticides. Weather, soil, yield variability and seasonal availability are part of the system rather than engineering settings.

What published lettuce comparisons show

Most directly comparable evidence concerns lettuce. These studies are useful for understanding trade-offs, but they do not establish a ranking for grains, roots, fruiting vegetables or every leafy green.

Yuma, Arizona: hydroponic greenhouse versus field lettuce

Barbosa et al. (2015) compared theoretical hydroponic greenhouse production with local conventional production data in Yuma, Arizona. The hydroponic figures were 41 ± 6.1 kg/m²/year, 20 ± 3.8 L/kg of water and 90,000 ± 11,000 kJ/kg of energy. The conventional field scenario produced 3.9 ± 0.21 kg/m²/year, used 250 ± 25 L/kg and required 1,100 ± 75 kJ/kg.

On those assumptions, hydroponics yielded 11 ± 1.7 times more per area and required 82 ± 11 times more energy than the conventional scenario. The study therefore illustrates a sharp land-and-water advantage paired with a very large energy burden. Its theoretical hydroponic estimates and local conventional data are not universal modern averages; changing climate, equipment, electricity and management can change the relationship.

United Kingdom: vertical-farm and field scenarios

A 2026 national-scale assessment of UK lettuce scenarios reported 17.25 kWh/kg lettuce for its vertical-farm cases. Production-stage emissions were 0.932–0.935 kg CO2e/kg for those vertical scenarios, compared with 0.531 kg CO2e/kg for the study’s field lettuce baseline. The vertical scenarios used 93% less land demand than the field comparison.

Those values describe the modeled UK systems, not every vertical farm or field. The study found higher emissions per kilogram before any accounting for the possible consequences of repurposing land spared by vertical production. That distinction matters: a land-sparing scenario is a separate land-use analysis, not a reason to relabel the farm’s production emissions as zero.

Controlled-environment life-cycle assessment

A life-cycle assessment by Banboukian, Chen and Thomas, published in July 2025, compared open-field, high-hoop greenhouse and fully controlled hydroponic lettuce systems. It reported higher impacts for open-field and low-energy greenhouse production in several non-climate categories associated with fertilizer, pesticides, land and irrigation water, while fully controlled hydroponics carried a high energy and climate burden.

The study’s authors conclude: “To match conventional agriculture, energy consumption and greenhouse gas emissions of controlled environment hydroponic agriculture must be substantially reduced.” This is a conclusion about the modeled lettuce systems, not a claim that every crop or facility has the same profile.

Energy and emissions: why electricity can decide the result

Artificial lighting is often the primary energy driver in controlled-environment hydroponic lettuce. The energy used to produce a kilogram is converted into emissions according to the electricity source, so a facility on a low-carbon grid can have a different result from an otherwise identical facility on a carbon-intensive grid. Heating, cooling, pumps, dehumidification and construction add further loads.

The 2025 assessment identifies low-carbon electricity and greater use of natural light as ways to reduce impacts. A 2025 analysis of vertical-farm sourcing likewise found that outcomes changed with the electricity mix and supply-chain context. In its Swedish-grid scenario, vertical farming had lower greenhouse-gas emissions but higher life-cycle water-use and land-use impacts than conventional sourcing in some categories. This is not a contradiction with the UK or Arizona findings: the studies used different locations, system boundaries and electricity assumptions.

Separate farm energy from upstream impacts

“Energy used on the farm” and “life-cycle energy or emissions” are not interchangeable. The first may count electricity at the facility. The second can include generation, fuel extraction, equipment, buildings and distribution. If two studies use different boundaries, compare the definitions before comparing the numbers.

Do not treat local production as automatically low-carbon

A nearby indoor farm can avoid some transport, storage or seasonal supply requirements, but its electricity and infrastructure may outweigh those savings. Local distance alone cannot establish a lower carbon footprint. The calculation must include the conventional alternative’s transport and storage under the same boundary.

Land, water and yield: report all three

Land productivity

Stacked production can produce more crop per building footprint. The UK assessment’s 93% lower land demand and Barbosa et al.’s 11 ± 1.7-times-higher hydroponic yield are examples of this advantage. Neither number tells you the total environmental result without the associated energy, materials and land-use assumptions.

Water measurements need labels

The Yuma comparison reported 20 ± 3.8 L/kg for hydroponic greenhouse lettuce and 250 ± 25 L/kg for its field scenario. These are study-specific water-demand figures. A direct withdrawal at the farm is different from a life-cycle water-impact indicator that includes water used to generate electricity or manufacture inputs. State which measure is being used and avoid presenting one as a substitute for the other.

Yield changes every “per kilogram” result

If a system produces more saleable heads from the same area, fixed building or equipment impacts may be distributed over more kilograms. Conversely, a lower-than-expected yield, crop loss or short equipment life increases impact per kilogram. Yield assumptions should therefore be shown alongside energy and emissions, not hidden in a footnote.

A step-by-step method for making a fair comparison

  1. Define the crop and product. Specify the variety, growth stage, packaging state and whether the comparison is fresh, trimmed or saleable produce.
  2. Fix the geography and season. Record climate, latitude, growing season and whether the field system is irrigated, rain-fed or protected. Do not compare a winter indoor crop with a summer field crop without explaining the seasonal question.
  3. Describe each facility. For a vertical farm, record stack height, lighting hours, lamp efficiency, climate-control loads and crop-cycle length. For a greenhouse, record glazing, natural-light share, heating, cooling and supplemental lighting. For field production, record yield, irrigation, fertilizer, pesticide and machinery assumptions.
  4. Choose the functional unit. Use kilograms of saleable produce for impact comparisons and kilograms per square metre per year for land productivity. Report both when land sparing is part of the decision.
  5. Match the life-cycle boundary. Include or exclude construction, electricity generation, packaging, transport, storage, waste and land-use change consistently across systems.
  6. Use the actual electricity mix. Identify the grid or generation source and the period represented. If a facility buys renewable electricity, specify whether the accounting is physical supply, contractual certificates or another convention.
  7. Show uncertainty and sensitivity. Recalculate the result for plausible yields, lamp loads, heating demand, electricity mixes and facility lifetimes. A conclusion that changes under reasonable assumptions should be presented as conditional.
  8. Report categories separately. At minimum, show climate emissions, energy, land, direct water and relevant upstream water or material impacts. Do not collapse unlike impacts into a single “sustainability” score without explaining the weighting.

How to read a result without overclaiming

Check whether the number is production-stage or full life-cycle

The UK figures of 0.932–0.935 kg CO2e/kg for vertical lettuce and 0.531 kg CO2e/kg for field lettuce are production-stage results from that assessment. They should not be compared with a full supply-chain footprint that includes retail refrigeration and waste unless those stages are added consistently.

Check whether the systems are truly comparable

A high-hoop greenhouse, a naturally lit greenhouse and a fully controlled vertical farm have different lighting and climate-control requirements. A study that compares only “greenhouse” and “vertical” labels may conceal the engineering choices that drive energy use.

Check what happens to spared land

Lower land demand can be valuable if the released land is restored, protects habitat or avoids conversion elsewhere. It does not automatically erase the farm’s electricity emissions. Land-use consequences must be modeled as a separate scenario with explicit assumptions.

Check the crop before generalizing

Lettuce has a short cycle, a leafy edible portion and no requirement for fruiting or grain filling. Results for lettuce cannot be transferred automatically to tomatoes, peppers, wheat, potatoes, tree fruit or all leafy greens. The available evidence does not provide a matched, three-way comparison across multiple crops.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Questions this evidence cannot answer by itself

The cited comparisons do not establish a general taste, nutrition or food-safety ranking. They also do not provide a universal price, availability or seasonality advantage. Those outcomes depend on cultivar, harvest timing, handling, market and operating model and require matched crop-specific evidence. Treat claims in those areas as separate questions rather than inferring them from land, water or energy data.

Choosing the right comparison for a real decision

If land is the binding constraint

Prioritize output per square metre and examine whether the vertical system’s electricity and construction burdens are acceptable under the local grid and facility lifetime. Include the intended use of any spared land.

If climate emissions are the binding constraint

Start with electricity intensity, grid emissions, heating and cooling, then add construction and supply-chain stages. A low-carbon power source and natural light can materially change a controlled-environment result; distance to market alone is not enough.

If water scarcity is the binding constraint

Distinguish farm withdrawals from life-cycle water impacts. Compare the field system’s irrigation demand with the indoor system’s electricity-related water burden and input manufacturing under the same regional assumptions.

If resilience or year-round supply is the question

Define the specific failure or supply gap being evaluated—weather volatility, seasonal absence, transport disruption or another risk—and model it directly. Environmental figures alone do not prove resilience.

The practical verdict

Vertical farming is strongest where land is scarce and reliable, low-carbon electricity is available, while field production can retain an energy advantage because it uses sunlight directly. Greenhouses are not a single middle category: their performance depends on how much natural light and climate control they use. The defensible comparison is therefore conditional and multi-metric. Use the same crop, location, season, saleable-yield basis and life-cycle boundary; show energy, emissions, land and water separately; and keep lettuce-specific findings tied to the systems that produced them.
