Espresso usually needs very fine, precise adjustment and easy, repeatable dialing in. Pour-over, drip and immersion brewing need a suitable range, consistent particles and a workflow that fits your batch size. A setting number is not transferable between grinders, so use manufacturer guidance only as a starting point and tune the cup from there.
Start with the brewing method that sets the requirement
Every grinder has a usable range, an adjustment mechanism and a workflow. The right combination depends less on a label such as “all-purpose” than on what you brew most often.

Make espresso the deciding method if you brew it regularly
Espresso uses a very fine grind and a narrow adjustment window. A small change can alter shot time and extraction, so the grinder needs fine increments, stable adjustment and a way to return to a previous setting. A stepped grinder can work, but the ideal point may fall between two clicks; that makes dialing in more time-consuming.
Prioritize range and consistency for filter or immersion brewing
Pour-over, automatic drip and French press generally use broader grind regions. You still need enough adjustment range to account for brewer geometry, flow rate, filter characteristics and batch size. A grinder that is excellent for filter coffee may not offer the precision needed for espresso.

Account for how often you switch methods
If you move between espresso and filter every day, look for clearly marked settings, repeatable adjustment and a practical way to record your settings. If you make one large batch of cold brew or drip coffee, hopper capacity, dosing workflow and coarse-range performance matter more than espresso-level micro-adjustment.
Grinder requirements by brewing method
The ranges below are broad starting points, not universal recipes. The same number on two grinders can produce different particle sizes.
| Brewing method | Broad starting point | Look for | Important qualification |
|---|---|---|---|
| Espresso | Very fine | Fine adjustment increments, repeatability and a stable setting | On a stepped grinder, the desired shot may fall between settings. |
| Moka pot | Medium-fine | A fine range without assuming espresso-level fineness | Moka pot is not the same grind as espresso. |
| V60 and other pour-over brewers | Medium-fine | Enough range to tune flow, brewer shape and filter behavior | The correct setting varies with the brewer, filter and recipe. |
| Automatic drip | Medium | Consistent grinding for both small and large batches | Use the coffee maker and grinder instructions as the starting reference. |
| French press | Coarse | An evenly coarse setting and easy adjustment or cleaning | The metal filter leaves oils in the cup, so uneven fines are especially noticeable. |
| Cold brew | Coarse end of the range | A coarse setting and a workflow suited to the intended batch size | There is no single numeric cold-brew setting that transfers across grinders. |
Why adjustment design matters
Stepped adjustment
A stepped grinder has defined click positions. The settings are easy to record and return to, which is useful when several people use the grinder or when you alternate between recipes. The trade-off is resolution: widely spaced steps can make espresso dialing difficult.
Baratza describes the Encore as having 40 stepped settings and says it is excellent for filter brewing and French press. The manufacturer also cautions that espresso may require more care because the desired grind can sit between steps. This is manufacturer guidance, not an independent performance test.

Stepless adjustment
A stepless grinder has no fixed clicks between positions, allowing very small changes. That can help with espresso, where a tiny adjustment may correct a shot. The downside is less convenient switching: without clear markings or a reliable reference, returning from a coarse filter setting to an espresso setting can take longer.
Hybrid or multi-stage adjustment
Some grinders combine a broad stepped range with a second, finer adjustment. This can provide both coarse method coverage and espresso-level control, but the workflow matters. Learn which ring makes large changes, which makes minor changes and how to record both positions.
Can one grinder do espresso and pour-over?
Yes, but only if the exact model reaches a usable espresso range and offers enough adjustment precision for your recipe. Also check whether changing settings risks losing your previous filter position and whether the grinder’s dosing workflow suits both single cups and larger batches.

Why a filter-oriented grinder may be a poor espresso choice
A grinder can produce a fine powder and still be inconvenient for espresso if its steps are too far apart or its setting shifts while grinding. If espresso is occasional, you may accept a slower dialing-in process. If espresso is your main drink, prioritize adjustment resolution and repeatability over a broad marketing claim.
How to choose a grinder step by step
- List your primary brewer. Write down whether you mainly make espresso, moka pot, V60 or another pour-over, automatic drip, French press or cold brew.
- Add your secondary method. Note any method you use at least several times a month. Do not buy for an imagined future use unless flexibility is worth the additional cost and complexity.
- Identify whether espresso is required. If yes, verify the exact model’s espresso range and the size of its adjustment increments. Do not infer compatibility from the grinder’s ability to make a fine-looking grind.
- Compare the usable extremes. Confirm that the model reaches both your finest method and your coarsest one. A grinder that covers espresso may still have an inconvenient coarse workflow, and a filter grinder may not reach a practical espresso position.
- Check setting recall. Look for numbered markings, documented reference points or a repeatable two-stage adjustment. This is essential when switching between methods.
- Match the workflow to your batch size. One-cup brewing favors easy dosing and quick adjustment. Automatic drip and cold brew may favor a larger hopper, fewer interruptions and a coarse setting that is easy to access.
- Confirm cleaning and parts support. Read the current manual for burr access, removable parts and replacement-part availability. Coffee oils and fines accumulate differently when you use very coarse or very fine settings.
- Set a realistic budget and counter footprint. Do not pay for espresso-oriented precision if you only brew filter coffee, unless the ability to add espresso later is important to you.
- Check current documentation before buying. Model revisions, included parts and stated compatibility can change. Use the manufacturer’s current manual or product page for the exact model and region.
How to dial in each brewing method
Espresso
Begin near the manufacturer’s espresso range, then change the setting in small increments while keeping dose, water and brew ratio as constant as practical. If the shot runs too quickly and tastes thin or sour, a finer setting may help; if it runs slowly and tastes harsh or bitter, a coarser setting may help. These are clues, not diagnoses: dose distribution, freshness, water and temperature also affect the cup.
Record the grinder position, dose, yield and time once a recipe works. If a stepped grinder places the ideal shot between clicks, decide whether the nearest position produces an acceptable result or whether a grinder with finer adjustment would save time.
V60 and other pour-over brewers
Use a medium-fine starting point only as a broad guide. Brewer shape, pouring pattern, flow rate and filter porosity all affect drawdown. Baratza’s brew-method guidance says to choose a grinder with enough range to “dial in a brew suited to your brewer’s shape, flow rate, and even filter porosity.” Change one variable at a time where practical and judge both drawdown and taste.

Automatic drip
Start with the coffee maker’s recommended range or the grinder’s model-specific chart. Consistency across small and large batches is more important than espresso-level micro-adjustment. If a small batch tastes weak while a large batch tastes balanced, check the brewer’s water-to-coffee ratio and contact time before making a large grind change.
Moka pot
Moka pot generally uses a medium-fine grind, coarser than espresso. Grind fine enough for adequate extraction but avoid assuming that an espresso setting is appropriate. Start from the grinder or coffee maker guidance and adjust gradually.
French press
Use a coarse, even grind. Baratza emphasizes that “it’s critical to brew with evenly coarse-ground coffee,” because a metal filter allows oils and fine particles into the cup. If the press is muddy or astringent, inspect the distribution of fines and the steeping process instead of automatically making the grind much coarser.

Cold brew
Cold brew commonly uses the coarse end of a grinder’s range and is often prepared in a large batch. Confirm that the grinder can reach a coarse position without excessive retention or repeated hopper refills. Since no universal numeric setting applies, use your recipe and extraction time as the reference.

Model examples and what their specifications actually tell you
| Model | Documented capability | Best fit indicated by the documentation | Limitation to consider |
|---|---|---|---|
| Fellow Opus Conical Burr Grinder | Fellow states that it covers espresso through cold brew. Its outer ring has 41 settings with four minor increments between numbered settings, described as “41+.” | Brewers who want one grinder for espresso and brewed methods and are willing to learn the two-stage adjustment workflow. | The compatibility claim comes from Fellow; it is not an independent comparison of shot quality, noise or durability. |
| Baratza Encore | Baratza lists 40 stepped settings and calls it excellent for filter brewing and French press. | Filter, drip and immersion brewers who value clearly tracked stepped positions. | Baratza says espresso may require more care when the desired point falls between steps. |
| Breville Dose Control Pro | The manual’s model-specific chart lists espresso 1–25, percolator 26–34, drip 35–45 and French press/plunger 46–55. | Users who want a documented starting chart for several named methods on this model. | The manual notes that some coffees need a wider range. These numbers apply only to this grinder and should not be compared as universal particle sizes. |
Switching methods without losing your settings
Switching is easiest when you treat each recipe as a stored reference rather than assuming a dial number is universal.
- Write down the grinder model, adjustment ring positions and any minor-increment setting.
- Mark the recipe with the brewer, coffee dose and approximate result so you know which setting belongs to which method.
- Move through the grinder’s adjustment mechanism deliberately; do not force a ring past its documented range.
- After switching back, return to the recorded position and grind a small purge dose if the manual recommends it or retained coffee could affect the first cup.
- Recheck the first brew. Beans age and humidity changes can require a small correction even when the setting is restored exactly.
Cleaning, support and practical ownership
Cleaning is part of grinder selection because espresso fines and oily dark roasts behave differently from coarse, high-volume grinding. Read the current manual for how to remove the hopper or upper burr, whether calibration is user-serviceable and which parts can be replaced. A grinder with documented parts support may be easier to keep in service than one whose burrs and retention areas cannot be accessed.
Counter space and workflow also matter. A grinder that requires repeated transfers between a hopper and a dosing cup may be frustrating for several daily brews, even if its grind range is technically suitable. Conversely, a compact single-dose workflow can be convenient for one-cup pour-over but slow for a large cold-brew batch.

- Treating dial numbers as universal. “Setting 20” on one grinder does not equal setting 20 on another.
- Choosing by the finest advertised setting alone. Espresso requires usable, repeatable adjustment, not merely a very fine output.
- Ignoring the secondary method. A grinder may excel at espresso but lack a convenient coarse range for French press or cold brew.
- Assuming a chart is a recipe. Manufacturer charts are starting points for a specific model, coffee and method.
- Changing several variables at once. Altering grind, dose and water simultaneously makes it difficult to learn what fixed the cup.
- Using taste cues as absolute rules. Sourness can accompany under-extraction and bitterness can accompany over-extraction, but water, temperature, dose and coffee freshness can create similar sensations.
- Buying for unsupported performance claims. The available manufacturer pages do not establish neutral comparisons for price, noise, burr particle distribution or longevity.
A practical decision framework
Choose a precision-oriented grinder when espresso is central, you frequently change coffees, or you need to make small shot adjustments quickly. Choose a filter-focused stepped grinder when your routine is pour-over, automatic drip or French press and simple setting recall matters more than espresso resolution. Choose an all-method model only after confirming its exact espresso and coarse ranges, its switching workflow and its current documentation.
Whatever you buy, begin with the manufacturer’s range or recipe, make small changes, and evaluate the brewed coffee rather than chasing a number on the dial. That approach remains valid when you change beans, brewers or grinders.
