How to Choose Robot Grippers for Food Handling: Vacuum, Soft, and Parallel-Jaw

Choose the gripper around the food and the sanitation task—not the other way around. First establish whether the tool touches unpackaged food, how wet, oily, porous, textured, fragile, and variable the product is, and how the cell will be cleaned. For direct contact, hygienic construction, cleanability, and a documented food-contact scope are pass/fail gates. Then compare vacuum, food-flow, soft-compliant, and parallel-jaw principles in trials using representative products, line speeds, and the intended cleaning cycle.

Start with the selection gates

A robot gripper for food handling is part of a hygienic process, not an isolated accessory. The German Agricultural Society (DLG) says direct-contact systems must meet food-industry hygienic requirements, be comprehensively cleanable and disinfectable, and match the food’s physical and mechanical properties without destroying or visibly marking it. Its expert report, “Robot Grippers for the Food Industry – Product-Specific Solutions”, is a useful starting point for the risk review.

  • Contact status: Is the product unpackaged, or does the gripper touch only a wrapper, tray, or carton? Direct contact demands documentation for the actual contact materials and configuration.
  • Cleaning regime: Record washdown or manual cleaning, detergents, sanitizers, temperature, pressure, drying, and changeover frequency. A component that survives a laboratory test may still be difficult to clean in the assembled cell.
  • Product behavior: Note moisture, oil or fat, porosity, surface texture, temperature, stiffness, fragility, residue, and variation between pieces.
  • Process performance: Define mass, dimensions and tolerances, required orientation, pick location, acceleration, grip time, release behavior, products per pick, and acceptable marks.
  • Cell compatibility: Check robot flange, utilities, valves, sensors, controls, guarding, accessibility, spare parts, and changeover method.

Do not call an entire end effector or robot cell “food grade” because one cup, finger, or body has a material declaration. The declaration must cover the exact contact surfaces, seals, fittings, lubricants, and operating conditions used at your site.

What information to collect about the product

Make a product-and-motion specification before requesting quotations. DLG identifies gripping time and distance, the gripping-force curve, number of objects, external shape, mass, surface properties, strength, robot positioning and acceleration, connections, and environmental conditions as general gripper requirements. Capture the following values for every product variant:

  • Geometry: length, width, height or diameter, shape irregularity, tolerance, holes, edges, and the area available for contact.
  • Surface: dry or wet, oily or fatty, smooth or textured, porous or sealed, sticky or dusty, and likely residue after processing.
  • Mechanical response: stiffness, compressibility, tear resistance, crush sensitivity, and whether a mark remains after release.
  • Variation: minimum and maximum size, mass spread, orientation, deformation, temperature, and mixed batches.
  • Motion: pick and place coordinates, approach direction, required orientation, acceleration, deceleration, dwell time, and release height.
  • Throughput: picks per minute, single versus multiple picks, allowable retry rate, and the consequences of a dropped or misplaced product.

Use the worst credible combination—not only an ideal, freshly made sample—for acceptance trials. A gripper that succeeds on a dry, uniform sample can fail when oil, condensation, crumbs, or a small dimensional change reduces contact or friction.

Compare the main gripper principles

Principle Best starting conditions Main checks and trade-offs
Conventional vacuum cup A defined, reasonably sealed contact area and a load that the cup can hold at the required cycle rate. Porous, highly textured, wet, or residue-prone surfaces can leak. DLG notes that a cup may draw in product residue or moisture. Verify seal reliability, contact material, release, cleaning, and behavior during acceleration.
Food-flow gripper Dry porous or structured products that need high airflow and low surface pressure. Air consumption, noise, energy, placement, sanitation, and contact materials must be checked. An application statement for dry foods does not establish suitability for wet, fatty, or every unpackaged product.
Vacuum-driven soft fingers Delicate, lightweight, irregular items that need a compliant wrap or pinch rather than a flat seal. Confirm gripping capacity, vacuum control, detectable-material requirements, food-contact documents, fittings, and washdown configuration.
Soft compliant mechanical grasp Fragile, irregular, or mixed-size products that benefit from distributed or adaptive contact. “Soft” describes compliance, not universal food-contact or cleaning suitability. Check the exact elastomer, tool, product category, chemicals, and payload.
Parallel-jaw/mechanical grasp Products that tolerate controlled side contact and need repeatable restraint or orientation. Control pressure and marks, provide food-compatible contact parts, keep the geometry cleanable and accessible, and test reach and interference. The cited technical guidance supports application-specific use, not a universal food-safe or unsuitable verdict.

There is no independent cross-category benchmark in the cited material. Published payloads, dimensions, material statements, and customer results belong to individual models and conditions; do not rank unlike figures as if they came from one test protocol.

When a conventional vacuum cup is the right choice

A cup is attractive when the product presents a repeatable, sealable area and the cell needs a simple, fast pick. It can be a good fit for smooth, relatively dry packaging or sealed food surfaces. The engineering question is not whether vacuum works in principle, but whether the seal remains stable across the full product and motion envelope.

Check the contact surface

Porosity, open crumbs, deep texture, condensation, oil, and loose residues create leakage paths or contaminate the vacuum circuit. DLG specifically warns that conventional vacuum solutions can ingest product residue or moisture. If the product is porous or structured, compare a high-flow food gripper rather than simply increasing vacuum.

Check the complete vacuum path

  • Confirm the cup compound and every wetted or contact component for the required food-contact scope.
  • Specify filters, separators, valves, tubing, and exhaust so that residue cannot migrate into inaccessible areas.
  • Test pickup and release after the intended cleaning and drying cycle, not only on a clean, dry machine.
  • Measure misses, slips, delayed release, and visible marks at production acceleration.

If a cup requires excessive vacuum or a long dwell to hold a variable product, the apparent simplicity may disappear in maintenance and cycle-time losses.

When a food-flow gripper is better for porous bakery products

Schmalz describes its SFG flow gripper for dry foods with high leakage, including waffles and cookies with highly structured surfaces. The company states that the SFG has an FDA-compliant contact element for direct contact with dry food and a hygienic-design construction. Its stated suction-rate range is 270 l/min to 650 l/min, with contact-element diameters from 20 mm to 60 mm. Those are SFG family specifications, not a general performance range for every flow gripper.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

See the manufacturer’s current specification at Schmalz SFG. The dry-food qualification matters: the cited application statement does not establish suitability for wet, fatty, hot, or all unpackaged foods.

Questions to resolve in a trial

  • Does airflow remain sufficient for the most porous or deeply structured product?
  • Does the contact element leave a mark or disturb a fragile surface?
  • Can the assembly be opened, inspected, and sanitized without hidden residue pockets?
  • Are compressor capacity, noise, exhaust, and energy acceptable at the planned number of grippers?
  • Does release occur cleanly at the required placement speed and orientation?

When vacuum-based soft fingers fit delicate, irregular foods

Vacuum-driven soft fingers combine a compliant shape with controllable vacuum. Piab describes sealed silicone fingers whose force is adjusted by vacuum level, allowing a wrapped or pinching grasp where a flat cup cannot seal. This approach can accommodate irregular geometry, but the finger’s compliance does not remove the need to verify food-contact scope, cleaning, and load capacity.

Piab announced the three-finger piSOFTGRIP 40-3 on May 26, 2026. The company states capacity up to Ø40 mm and describes a sealed, vacuum-based soft gripper with detectable silicone intended for direct food contact under FDA 21 CFR and EU 1935/2004. An optional wash-down fitting is also described. These are Piab’s claims for this model; confirm the current configuration and declaration at Piab’s product announcement.

Specify the finger behavior, not just the diameter

Ask how force changes with vacuum, how the fingers behave at minimum and maximum product size, and how quickly they release. Test for pinching, tearing, surface imprinting, and product rotation. If the plant uses metal detection or another foreign-material control, confirm the detectable-material claim applies to the installed finger and replacement parts.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

When a soft compliant mechanical gripper is preferable

Soft mechanical tools can distribute contact over a larger area and adapt to fragile or inconsistent shapes. They are useful when a product cannot tolerate a concentrated cup seal or a hard jaw, but “soft” is not a sanitation certification. Elastomer chemistry, porosity, seams, tool retention, and cleaning access differ widely between products.

NITTA SOFTmatics

NITTA describes its SOFTmatics robot hand as using flexible urethane, selectable finger shapes, and pressure adjustment for gripping force. NITTA says its materials comply with Japan Ministry of Health and Welfare Notification No. 370 as of May 2021, and that the gripper body meets an FDA 21 CFR 177.2600 dissolution test as of April 2023. Those statements preserve their stated scopes; they are not blanket FDA approval of the complete gripper, robot, or process. Product information is available at NITTA SOFTmatics.

For a Baumkuchen application, NITTA reports a grip rate of 95–97% to 100% and maintenance time falling from up to four hours per day to zero hours per day in customer-feedback calculations. The page does not state a date for that calculation. Treat it as a vendor-reported result for that application, not an independently verified industry statistic or a promise for another product.

OnRobot Soft Gripper

OnRobot states a maximum payload of 2.2 kg depending on item shape, softness, and friction, and grip dimensions of 11–118 mm depending on the silicone tool. The company says the silicone tools are dishwasher-safe and comply with FDA 21 CFR for non-fatty food items and EC 1935/2004 for food handling. Keep the non-fatty-food qualification attached to the FDA statement. Review the current tool options and documentation at OnRobot Soft Gripper.

How to qualify a soft tool

  • Test every finger or silicone geometry intended for production; interchangeable tools can change grip range and contact pressure.
  • Inspect seams, cavities, fasteners, and interfaces for residue retention after the actual wash cycle.
  • Measure product deformation and marks immediately and after the product’s normal settling or cooling period.
  • Confirm replacement-part identification so a non-equivalent elastomer cannot be installed accidentally.

When parallel-jaw grippers make sense

Parallel jaws are viable when controlled side contact provides enough restraint and the product tolerates the resulting pressure. They can be useful for repeatable orientation, edges, rigid packages, trays, or products with no reliable suction area. DLG notes that mechanical grippers can be hygienically designed, while also warning that they may have limited reach and influence the food surface.

Design the contact surfaces deliberately

Use food-compatible, replaceable contact pads where needed, with rounded transitions and no crevices that trap crumbs or sauce. Set and monitor gripping force rather than relying on a hard mechanical stop. A jaw that holds a rigid package may crush a soft item when the same stroke is used on a smaller or warmer piece.

Check access and cleaning

Open the jaws through their full stroke during inspection and cleaning. Verify that guides, screws, springs, sensors, and rear faces are reachable, drainable, and compatible with the plant’s chemicals. If a lubrication point is near the product zone, obtain the lubricant’s documented food-contact status and define a preventive-maintenance interval.

The cited sources do not verify a universal food-grade parallel-jaw product. Choose a specific jaw, pad, coating, and sanitation procedure only after a documented contact and damage trial.

Use a repeatable selection workflow

  1. Map contact and sanitation. Document unpackaged versus packaged contact, moisture and residue, temperature, washdown or manual cleaning, chemicals, drying, and changeovers. Request declarations and cleaning instructions for the complete assembly.
  2. Build the product envelope. Record minimum and maximum dimensions, mass, texture, porosity, stiffness, fragility, orientation, and acceptable marks. Include abnormal but realistic pieces.
  3. Define motion and quality limits. Set acceleration, grip time, release time, picks per cycle, throughput, allowable misses, and the consequences of a dropped product.
  4. Shortlist principles. Start with a cup for a sealable surface, a food-flow design for dry porous structure, vacuum soft fingers for delicate irregular items, compliant mechanical tools for adaptive contact, and jaws for controlled side restraint.
  5. Check documentation before trials. Compare exact food-contact scope, jurisdiction, temperature and food limitations, sanitation instructions, payload conditions, dimensions, utilities, and replacement parts.
  6. Run representative trials. Use production samples across the full variation range, at line speed and robot acceleration, before and after the planned cleaning cycle.
  7. Record measurable outcomes. Log successful picks, slips, drops, marks, deformation, release errors, cycle time, cleaning time, inspection findings, and operator interventions.
  8. Validate the cell. Have food-safety and engineering teams review direct contact, sanitation validation, foreign-material controls, guarding, failure recovery, and changeover procedures.

What to include in a side-by-side evaluation

Evaluation axis Evidence to request or measure Why it changes the decision
Food-contact scope Declaration for the exact fingers, cups, pads, seals, fittings, and operating conditions; stated food and regional limitations. A material statement for one component cannot establish compliance for the full end effector or process.
Hygienic design Accessible surfaces, drainability, disassembly, inspection points, and written cleaning instructions. Hidden residue can create sanitation and changeover problems even when pickup performance is good.
Product compatibility Grip success, marks, deformation, leaks, tearing, rotation, and release across product variation. The gentlest-looking tool may fail on oil, texture, temperature, or dimensional variation.
Motion performance Payload at the installed configuration, acceleration limits, grip time, cycle rate, and retry behavior. Catalog payloads are conditional; actual fingers, jaws, hoses, and acceleration alter the result.
Integration Robot flange, pneumatic or vacuum supply, valves, sensors, controls, cabling, and guarding. Utilities and controls can determine whether a theoretical cycle rate is achievable.
Lifecycle Cleaning labor, inspection, replacement intervals, tool changeover, spare-part identification, and training. A slightly slower tool may win if it reduces cleaning time, damage, and unplanned intervention.

Common failure modes and corrective actions

The cup loses the product intermittently

Check for porosity, crumbs, oil, condensation, cup wear, hose leaks, and insufficient contact area. Trial a larger or different cup only after confirming that the surface is sealable. For dry, highly structured products, compare a high-flow food gripper rather than masking leakage with excessive vacuum.

The soft finger holds but damages the product

Reduce force or vacuum, change finger geometry, alter the pick location, and slow acceleration during the trial. Inspect whether the damage comes from concentrated edges, twisting during approach, or release while the product is still constrained.

The jaw grip varies with product size

Measure the actual stroke and force at minimum and maximum dimensions. Add force control or compliant pads, separate recipes by product, and verify that the jaw does not bottom out before generating the required holding force.

Cleaning leaves residue behind

Map every crevice, threaded interface, elastomer seam, filter, and hose termination. Follow the manufacturer’s stated cleaning method, then inspect after the plant’s real chemical and temperature cycle. Redesign or replace inaccessible parts; do not rely on a material declaration as proof of cleanability.

Model-specific figures at a glance

Model or family Published information Qualification that must stay attached
Schmalz SFG food flow gripper For dry foods such as waffles and cookies with structured surfaces; stated suction rate 270–650 l/min; contact elements 20–60 mm; FDA-compliant contact element and hygienic-design construction claimed by Schmalz. Family specifications from the current Schmalz page; the dry-food application does not establish wet, fatty, or universal unpackaged-food suitability.
NITTA SOFTmatics Flexible urethane, selectable finger shapes, pressure-based force adjustment; Japan Notification No. 370 compliance stated as of May 2021; FDA 21 CFR 177.2600 dissolution test for the body stated as of April 2023. Procurement and site-acceptance checklist

  • Exact product variants, minimum and maximum dimensions, mass, temperature, surface condition, and residue profile are listed.
  • Direct versus indirect contact is explicit, including packaging, trays, and rejected-product paths.
  • Food-contact declarations identify the exact elastomer, coating, metal, seal, fitting, and replacement part.
  • Cleaning chemicals, concentration, temperature, pressure, contact time, disassembly, drying, and inspection are documented.
  • Payload, grip range, force or vacuum setting, acceleration, and cycle time are stated for the installed configuration.
  • Acceptance tests include worst-case product variation, production speed, release, marks, drops, and post-cleaning performance.
  • Utilities, controls, sensors, filters, exhaust, guarding, and robot interface are included in the design review.
  • Food-safety, engineering, maintenance, and operations teams approve the risk assessment and sanitation validation.
  • Spare parts, tool identification, changeover, cleaning records, and operator training are defined before handover.

Bottom line: choose the principle that survives your sanitation and product tests

Use a conventional cup when a clean, repeatable seal exists; investigate a food-flow design for dry porous or deeply structured products; choose vacuum soft fingers or compliant mechanical fingers for delicate, irregular, or size-variable items; and use parallel jaws when controlled side contact gives reliable restraint without unacceptable marks. Hygiene design, documented contact scope, cleanability, product protection, and production-speed trials are selection gates for every principle. The right answer is the candidate that passes those tests in your actual food, cleaning regime, and robot motion—not the one with the most attractive catalog number.
