How to Choose Canned Meat: Labels, Sodium, and Storage Life

To choose canned meat, first check whether it is shelf-stable or marked “Keep Refrigerated.” Then compare sodium per serving and % Daily Value (%DV), taking serving size into account, and inspect the can for damage. For unopened low-acid canned meat, USDA guidance gives a general best-quality window of two to five years in suitable storage; once opened, refrigerate it and use it within three to four days.

Check whether the can belongs in the pantry

“Canned” does not always mean shelf-stable. Some canned ham and seafood products are sold refrigerated. Read the package directions: a product marked “Keep Refrigerated” must stay refrigerated rather than being stored as a pantry item. USDA FSIS notes that “not all canned goods are shelf stable.” USDA FSIS shelf-stable food guidance

Compare sodium using the whole Nutrition Facts panel

Check sodium in milligrams, %DV, serving size, and servings per container. FDA lists the sodium Daily Value as less than 2,300 mg per day. Its general guide says 5% DV or less per serving is low, while 20% DV or more is high. FDA: Sodium in Your Diet

Serving size changes the comparison. If one can lists a smaller serving than another, compare the same amount of food rather than comparing the printed per-serving figures at face value. Also consider how much you are likely to eat: one serving’s sodium figure may not describe a meal that uses several servings.

Read front-of-package sodium claims precisely

  • Low sodium: 140 mg or less per serving, according to FDA consumer guidance.
  • Reduced sodium: at least 25% less sodium than the regular product.
  • Light in sodium: at least 50% less sodium than the regular product.
  • No salt added: salt was not added during processing; this does not mean the product is sodium-free.

These claims do not replace checking the Nutrition Facts panel. In particular, “reduced” and “light” compare a product with a regular version, not necessarily with another product on the shelf.

Why sodium may be present

FDA explains that sodium can be used in meat curing, moisture retention, flavor enhancement, and preservation. The Nutrition Facts total includes sodium from ingredients such as monosodium glutamate, sodium bicarbonate, sodium nitrite, and sodium benzoate. Taste is not a reliable way to estimate sodium.

Use a consistent checklist when choosing between cans

  1. Confirm whether each product is shelf-stable or requires refrigeration.
  2. Record sodium in milligrams, %DV, serving size, and servings per container from each Nutrition Facts panel.
  3. Compare equal amounts of food when serving sizes differ, and account for the portion you expect to eat.
  4. Review the product description, ingredient statement, and storage directions.
  5. Reject cans that are leaking, bulging, badly dented, or rusted.

Product formulations and serving sizes can vary and change, so a general claim cannot establish which brand is the lower-sodium choice. Use the current package label for the specific product you are considering.

Understand unopened storage life and printed dates

USDA says unopened low-acid canned foods such as meat generally retain best quality for two to five years when the can is in good condition and stored in a cool, clean, dry place. This is a general quality range, not a guarantee for a particular brand or can. USDA recommends temperatures below 85°F in its shelf-stable guidance; avoid heat sources, damp areas, and temperature extremes. USDA FSIS: Keep Food Safe! Food Safety Basics USDA FSIS shelf-stable food guidance

A calendar date and a packing code are not interchangeable. USDA says federally required product dating generally does not apply to shelf-stable foods, and can codes are tracking codes rather than consumer “use-by” dates. If the package gives a calendar date, follow its stated meaning and the manufacturer’s storage directions. USDA FSIS: Food Product Dating

Inspect cans and handle opened meat safely

Do not use a can that is leaking, bulging, badly dented, rusted, or otherwise suspicious. Do not taste its contents. Also discard food that spurts when opened or has an abnormal foul odor; smell is not a substitute for rejecting a visibly unsafe container. Follow USDA guidance for disposing of suspect cans. After opening low-acid canned meat, refrigerate it and use it within three to four days. USDA says leftovers may be refrigerated in the can, though transferring them to a glass or plastic container can preserve flavor better. USDA FSIS: After you open a can, how long can you keep the food in the refrigerator?

These are U.S. FDA and USDA guidelines, not a brand ranking. For a specific can, the most useful decision comes from its current storage directions, Nutrition Facts panel, and condition. Labeling rules may differ outside the United States.
