How Pubs Can Serve Alcohol-Free Beer at the Right Temperature and Keep It Fresh

Serve most alcohol-free draught beer at 36–38°F (about 2–3°C), measured in the liquid at the faucet or keg outlet. Keep every keg cold from delivery, chill warm deliveries completely before tapping, and follow the brewer’s own temperature, gas and freshness instructions whenever they differ. Freshness is not a universal number of days: it ends at the product-specific window stated by the brewer or supplier.

A reliable pub system combines a calibrated liquid thermometer, stable refrigeration, correctly configured dispense equipment, documented line cleaning and date-controlled stock rotation.

Temperature targets that staff can use

Temperature readings must be taken from the beer, not inferred from cellar air. A cellar thermometer can show a safe-looking room temperature while the liquid in a keg, python or faucet is too warm. Check the product at the keg outlet or pour a sample and measure it with a calibrated liquid thermometer.

What is being measured Useful figure How to interpret it Source and qualification
Beer at the faucet or keg outlet 36–38°F (about 2–3°C) General draught-beer serving benchmark Brewers Association Draught Beer Quality Manual, 2019
Keg at service At or below 38°F (about 3°C) Recommended maximum keg temperature when serving Brewers Association, 2019
Pub cellar ambient temperature 11–13°C (52–56°F) British cellar-management recommendation; it is an ambient guidance figure, not a substitute for measuring beer temperature British Beer & Pub Association guidance, 2022
General chilled-food ceiling in England 8°C Applies unless an evidenced alternative is permitted; your HACCP assessment and product instructions determine the correct control Food Safety and Hygiene (England) Regulations 2013
General refrigerator guidance 0–5°C Common UK food-safety recommendation for refrigerated storage; verify that it suits the keg and equipment UK government guidance, 2017

The figures describe different points in the cold chain. A cellar may be managed at 11–13°C while a remote python or other product chiller brings the beer itself to roughly 2–3°C at dispense. Where a supplier specifies a different arrangement, record and follow that specification rather than forcing a generic target.

Why alcohol-free beer needs temperature control

Warm beer releases dissolved carbon dioxide more readily. The result can be excessive foam, slow service, wasted product and a pint that tastes flatter after the head collapses. Temperature swings also make a dispense system harder to balance: a keg that arrives warm, is partly chilled and then warms again does not behave like one kept continuously cold.

Temperature affects quality as well as appearance. Alcohol-free recipes vary in body, carbonation and processing, so the brewer’s serving instruction takes priority over a general draught benchmark. Treat each keg as a food product with a defined storage and use-by instruction, not as an interchangeable version of a full-strength beer.

Receiving and chilling a keg

  1. Inspect on delivery. Check the keg, seal, label, use-by information and any supplier instructions for storage, serving temperature, pasteurisation or filtration. Reject or quarantine damaged packaging and record the issue.
  2. Move it promptly into refrigerated storage. Do not leave an alcohol-free keg in a warm loading area or cellar while staff finish other tasks. Keep it away from direct heat, sunlight and strong odours.
  3. Allow a warm delivery to chill fully. Do not tap immediately and try to correct the problem by lowering gas pressure. The keg, beer line and coupler all need time to reach a stable temperature.
  4. Check the liquid temperature. Use a calibrated thermometer at the keg outlet or faucet. If the reading is above the brewer’s specification, continue chilling and investigate the cooler or python before service.
  5. Record the connection date. Write the date and time on the keg record or stock system so staff can apply the brewer’s freshness window and rotate stock.

Keep the storage area clean, dry, ventilated and free of odours. Remove beer and syrup spills immediately: residue attracts contamination and can make floors and fittings hazardous.

Setting up the dispense system

There is no single gas pressure or line configuration that suits every alcohol-free beer. Carbonation level, keg format, line length, vertical rise, coupler and chiller design all matter. Use the product supplier’s pressure and equipment instructions, then make small, documented adjustments only within those limits.

  1. Confirm compatibility. Match the coupler, keg type, gas supply, python and faucet to the supplier’s technical information.
  2. Stabilise the system. Make sure the keg and beer path are cold before judging the pour. A warm line can create foam even when the keg itself is cold.
  3. Connect the gas and product lines correctly. Check for leaks, kinked tubing and partially open valves. A restriction or leak can cause erratic flow and carbonation loss.
  4. Pour a test measure. Use a clean, correctly prepared glass. Observe the beer temperature, head formation, clarity, aroma and flow rate.
  5. Adjust cautiously. If the pour is wrong, check temperature and line condition before changing pressure. Alter one variable at a time and record the result.

Keeping alcohol-free beer fresh on tap

The Brewers Association defines a draught beer’s “freshness window” by the brewer; it varies by product. An opened-keg life cannot be calculated safely from alcohol content alone. Some products may have different limits depending on pasteurisation, filtration, packaging and dispense conditions.

Use this control sequence:

  • Follow the keg label, technical sheet and wholesaler instructions for storage and post-connection use.
  • Date every connection and keep a first-connected, first-served rotation.
  • Keep reserve kegs refrigerated rather than staging them at room temperature.
  • Clean and sanitise lines, couplers, faucets and associated parts on a documented schedule using products compatible with the equipment and supplier guidance.
  • Keep glassware clean and free of detergent, grease and sanitiser residue; residues destabilise foam and can alter flavour.
  • Remove any keg that has passed its stated window or shows sourness, unusual haze, stale aroma, contamination or other off-flavour. Do not blend it into a fresh keg.

Freshness records should show the keg identifier, delivery date, connection date, supplier limit, temperature checks, cleaning activity and any corrective action. This gives the next shift a clear decision instead of relying on memory.

Why an alcohol-free draught beer is foaming

Foam is a symptom, not a diagnosis. Work through the likely causes in order:

The beer or line is too warm

Measure the liquid at the faucet. Check whether the keg was delivered warm, whether the cooler is overloaded, whether the door is being left open or whether the python is not chilling. Do not judge temperature from the room display alone.

The keg temperature is unstable

A keg that has repeatedly warmed and cooled can pour badly even after the room feels cold. Keep it refrigerated continuously and allow adequate equalisation before service.

Gas pressure or restriction is wrong

Use the brewer’s specified pressure and line setup. Inspect for leaks, blocked or kinked lines, a partially closed valve, an incorrect coupler or excessive restriction. Change only one setting at a time and retest.

The faucet or glass is dirty

Protein, beerstone, grease and detergent residue disturb the pour. Clean the faucet and glassware, then follow the documented line-cleaning procedure. A clean-looking line is not proof that it is hygienic.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The keg is beyond its quality window

Check the connection date and supplier limit. If aroma or flavour is abnormal, stop serving and quarantine the keg while the manager or supplier assesses it.

How long does an opened keg last?

There is no responsible universal answer such as “seven days” or “thirty days.” The allowable period is product-specific and depends on the brewer’s stated freshness window, packaging and processing, gas system, temperature control, line hygiene and handling. The label or technical sheet controls.

If no post-connection limit is available, contact the supplier before tapping or serving. Document the answer with the keg record. A keg that remains cold can still be out of specification, while a keg inside a nominal time period can be unsuitable if it was warm, contaminated or dispensed through dirty lines.

Food-safety and compliance controls

UK commercial brewing and pub operations require a HACCP-based food-safety management system. The British Beer & Pub Association notes that beer is classified as food under the Food Safety (General Food Hygiene) Regulations 1995, so cellar and dispense practices belong in the food-safety system.

Food-safety legislation in England sets 8°C as the general chilled-food ceiling unless an evidenced alternative applies. It also prevents a business from recommending a temperature and shelf life without a well-founded scientific assessment. For alcohol-free beer, the supplier’s label, technical specification and validated HACCP controls should explain why the chosen storage and service limits are appropriate.

Keep records for:

  • Refrigerator and keg temperatures, including the measuring point and thermometer calibration checks.
  • Delivery inspection and any rejected or quarantined product.
  • Keg connection dates and freshness limits.
  • Line, coupler, faucet and glassware cleaning and sanitising.
  • Faults, corrective actions, staff training and supplier advice.

A practical staff service procedure

  1. Read the product’s storage, serving and use-by instructions before putting the keg into service.
  2. Verify that the keg has been refrigerated and is fully chilled.
  3. Measure the beer at the faucet or keg outlet; aim for 36–38°F (2–3°C) unless the brewer specifies otherwise.
  4. Confirm the coupler, gas pressure, line route and chiller match the product requirements.
  5. Pour a test measure into clean glassware and check temperature, foam, aroma and appearance.
  6. Record the connection date and place the keg in the rotation system.
  7. During service, investigate temperature or foam complaints immediately rather than repeatedly dumping pints.
  8. At the end of the keg’s stated window, or sooner if quality is suspect, stop service and follow the site’s discard or supplier-escalation procedure.

Choosing between different alcohol-free beers

Before adding a keg to a pub’s range, compare the practical requirements, not just the label or recipe:

  • Brewer-specified serving temperature and storage range.
  • Keg, can or bottle format and the required coupler.
  • Whether the supplier states pasteurisation or filtration.
  • Carbonation level, gas requirement and recommended line configuration.
  • Freshness window after connection and any use-by restriction.
  • Compatibility with the pub’s refrigerator, python, faucet and cleaning products.

A beer that tastes good at the brewery can still be a poor operational fit if the pub cannot keep its keg cold, connect the correct coupler or clean the required line system. Confirm those details before ordering volume.

The operating standard

For most pubs, the dependable starting point is beer at 36–38°F (2–3°C) at the faucet, a keg kept continuously refrigerated, and a dispense system configured to the individual supplier’s instructions. Use the brewer’s freshness window, date every connection, measure liquid temperature directly and treat cleaning and records as food-safety controls. That combination prevents the most common causes of foaming, flat pours and stale alcohol-free beer without pretending that every product has the same shelf life.
