How Astronauts Store and Prepare Food Aboard the International Space Station

International Space Station meals are engineered to survive without ordinary cold storage. Most food is kept at ambient temperature in sealed, shelf-stable packaging. Freeze-dried items are restored with injected water, while thermostabilized foods are processed to remain safe until opened. Crew members select a package, add water or heat it when the item requires, eat with specially managed utensils, and secure the waste and leftovers so crumbs and droplets do not float through the cabin.

A small chiller is available for beverages and condiments, but NASA does not describe a dedicated refrigerator or freezer for storing regular meals. Fresh produce is therefore an occasional, short-lived cargo item rather than a continuously refrigerated supply.

Why ISS food must be different from food on Earth

On Earth, a meal system can depend on refrigerators, freezers, sinks and gravity. The station’s food system cannot assume any of those conveniences. Every item has to tolerate launch, long-term storage at ambient temperature, limited storage volume, restricted preparation equipment and the safety hazards of eating in microgravity.

NASA’s food requirements treat preparation, consumption, stowage, heating and cleanup as one connected system. A package is not considered successful merely because its contents are nutritious. It must also be openable, usable with available utensils, contain crumbs and liquids, fit the stowage plan and be manageable within the crew’s meal schedule. NASA’s habitability standard states: The system shall provide the capability for preparation, consumption, and stowage of food.

Food is prepared and packaged on Earth, then launched as cargo. The U.S. Space Food Systems Laboratory at Johnson Space Center tests, prepares and packages U.S. foods for the station. The United States and Russia provide food and share some items, while partner agencies can contribute specialty dishes. The exact manifest changes with missions and resupply flights, so a single cargo delivery should not be treated as a permanent menu.

How food is preserved for ambient-temperature storage

Freeze-dried food

Freeze-drying removes water from food after it has been frozen. The resulting package is light and stable, but it is not eaten in its dry state when the recipe is designed for rehydration. A crew member connects the package to the station’s water-dispenser system and injects the specified amount of water. After the food absorbs the water, it can be eaten from the package with a spoon or other approved utensil.

NASA also packages powdered drinks so that water can be injected into a sealed container in orbit. Keeping the powder enclosed during mixing helps prevent free-floating droplets and particles.

Thermostabilized foods

Thermostabilization uses controlled heat processing and protective packaging to make food safe and shelf-stable without normal refrigeration. The treatment and package are selected for the ingredients and their perishability. Depending on the item, a thermostabilized meal may be eaten after opening or warmed first; the package instructions and mission equipment determine the procedure.

Packaging is part of preservation

NASA’s food laboratories choose processing and packaging together. The package must protect the food during launch and storage, remain sealed until use, allow water or heat to be applied correctly, and reduce the chance that crumbs, sauce or an opened pouch will escape. Stowage volume and mass also matter because every kilogram and cubic centimeter competes with other cargo.

Food format How it remains usable Typical on-orbit action Operational consideration
Freeze-dried meal Water is removed and the food is sealed in a stable package Inject water, wait for rehydration, then eat Requires a measured water dose and controlled handling of the opened pouch
Thermostabilized meal Heat processing and packaging limit microbial spoilage at ambient conditions Open and eat, or warm when the item calls for it Preparation depends on the recipe and its package instructions
Powdered beverage Dry powder is sealed until use Inject water into the closed container, then drink through its opening Sealed mixing limits loose liquid in the cabin
Fresh produce Not made shelf-stable; arrives as a short-lived cargo item Consume promptly after delivery Small quantities and timing are constrained by the lack of routine meal refrigeration

What happens before food reaches the station

  1. Menu planning: Food scientists and mission planners balance nutrition, food safety, shelf life, crew preferences, cultural variety, mass and available stowage.
  2. Processing: Ingredients are assigned a suitable treatment, such as freeze-drying or thermostabilization, according to their composition and perishability.
  3. Packaging and testing: The food is sealed in flight-compatible packaging and checked for stability, usability, heating or rehydration behavior, and safe cleanup.
  4. Launch and stowage: Packaged food travels as cargo and is placed in designated station storage. It remains at ambient conditions until needed, except for items placed in the beverage-and-condiment chiller.
  5. Resupply and rotation: Visiting cargo vehicles deliver additional food. Fresh items are scheduled as limited treats because their useful life is short; shelf-stable packages form the dependable baseline.

How an astronaut prepares a meal

The exact steps vary by package, but the workflow is intentionally simple and repeatable.

  1. Select the meal: The crew member chooses a scheduled item or a personal option and checks whether it requires water, heating or neither.
  2. Unstow the package and tools: The pouch, spoon, drinking interface, scissors or other approved implement is secured before opening. Keeping tools attached or controlled prevents them from drifting away.
  3. Rehydrate when required: For a freeze-dried meal or powdered beverage, the astronaut connects the package to the water system and injects the specified quantity. The package remains closed during filling to contain the liquid.
  4. Allow the food to absorb water: The crew member follows the package’s waiting and mixing instructions. The rehydrated food stays in its pouch rather than being poured into a loose bowl.
  5. Warm suitable foods: Items that benefit from heat are placed in an onboard food warmer according to their package and heater limits. Heating is a controlled operation, not stovetop cooking.
  6. Open and eat: The astronaut opens the package only when ready and uses utensils designed to keep the food attached to the utensil and close to the mouth. Drinks use a controlled opening rather than a free-pouring cup.
  7. Close out the meal: Empty pouches, wrappers and utensils are secured for disposal or processing. Any remaining food is handled according to the package and crew procedures so it cannot become a floating contaminant.

This sequence explains why NASA evaluates opening, preparation, consumption, stowage and cleanup together. A meal that tastes good but sheds crumbs or leaves an unmanageable pouch would not meet the station’s practical requirements.

How food is heated in orbit

Heating uses dedicated onboard equipment rather than a kitchen range. The crew places a compatible package in the warmer for the required operation, then removes it and eats from the package. The heater, package size and food type determine what can be warmed; not every item needs heat.

NASA’s October 2000 technical overview describes an ISS Service Module rehydration station and heaters, along with a U.S. suitcase-style warmer for packages that did not fit the Russian heaters. That document records the international system’s development at that time, not a guaranteed inventory of every heater currently on the station. Current NASA descriptions support the general water-and-warming workflow without establishing a present-day list of hardware models.

Fresh food and plant experiments are exceptions

Fresh fruits and vegetables have a short shelf life, so visiting cargo vehicles may deliver small quantities that crews eat soon after arrival. They are an occasional supplement, not the station’s normal storage method. The absence of a dedicated meal refrigerator means a resupply delivery cannot be treated like a supermarket produce drawer.

NASA has also described limited plant-growing experiments in orbit. Those experiments investigate how plants grow in space; they should not be confused with a routine farm that supplies the crew’s regular produce.

How NASA chooses what goes on the menu

Food selection combines engineering constraints with human factors. NASA identifies nutrition, food safety, shelf life, limited storage, limited preparation options and microgravity as core requirements. Appetite and familiarity matter too: a crew member who dislikes an item may eat less, while cultural foods, variety and shared meals can support morale and regular intake.

Decision factor Question planners must answer
Nutrition Does the menu provide an acceptable balance of nutrients for the mission and crew?
Safety and stability Will the processed, packaged food remain safe at ambient conditions until its planned use?
Water and heat Does preparation consume water, require warming, or work without either?
Mass and volume Can the package and its supplies fit the launch and station stowage limits?
Microgravity handling Can the crew open, eat and clean up without loose crumbs or droplets?
Acceptability Will the crew actually want to eat it, given personal, cultural and variety preferences?
Schedule and sharing Can it be prepared within the meal period and used as part of a shared menu?

NASA’s ISS overview has described about 200 standard menu items. That is an approximate figure from a 2019-era overview, not a live inventory; menus change as missions and suppliers change. Astronauts can add personal choices, including some commercial off-the-shelf foods, when those items meet flight requirements.

One historical example illustrates the role of national specialties: ESA astronaut Thomas Pesquet brought 13 dishes prepared by France’s CNES for Expeditions 50 and 51. The 13 dishes were his mission-specific selection, not a standard allowance for every astronaut.

Microgravity changes the act of eating

On Earth, gravity carries a crumb downward and lets a diner set a cup on a table. In orbit, a crumb can drift into ventilation hardware, an air filter or an experiment. A free liquid blob can damage equipment or become a breathing hazard. For that reason, food is generally packaged so it can be held close to the face, and utensils and wrappers are managed throughout the meal.

Cleanup is not an afterthought. Crew members secure used packaging, wipe or contain residue as required, and return tools and waste to their designated locations. NASA’s requirements explicitly include stowage and cleanup because the meal has to leave the cabin as orderly and safe as it was before preparation.

What the storage system means for an astronaut’s daily life

The result is less like opening a refrigerator and more like operating a carefully labeled pantry. Shelf-stable packages provide the dependable supply; water and a controlled warmer turn selected packages into meals; a chiller supports only beverages and condiments; and occasional fresh cargo adds variety before it is consumed.

This approach trades the sensory freedom of a terrestrial kitchen for reliability. It reduces dependence on cold-chain hardware, limits microbial risk and makes food predictable to stow and resupply. The trade-off is that astronauts cannot improvise with ordinary leftovers, frozen ingredients or a broad range of fresh foods. Every menu item has to earn its place by meeting both technical and human requirements.
