Treat that ratio and time as a baseline, not a law: change grind size first, then taste the next shot. A finer grind slows flow; a coarser grind speeds it up.
The machine supplies heated water and pressure, but the coffee bed controls how quickly that water passes through. Consistent dosing, an even tamp, a capable grinder and a scale make the result repeatable enough to adjust rather than guess.

What an espresso maker is doing
Espresso begins with a measured bed of finely ground coffee in a filter basket. The machine heats water and drives it through that compacted bed. Water dissolves some coffee compounds, then exits through the basket as a small, concentrated beverage. The dose, grind distribution, puck preparation and water flow determine what ends up in the cup.

1Fix the driver behind crashes, sound loss and screen glitches2Clear out junk files and repair common Windows errors3Scan for outdated or missing drivers - takes under a minuteA grinder is therefore part of the extraction system, not merely an accessory. Its particle size sets resistance in the coffee bed. Finer particles provide more resistance and slow the shot; coarser particles leave more open paths and let water run faster. The same machine can produce very different results when the grind changes.

Automatic features can control some steps, while a manual or semi-automatic machine lets you decide when to start and stop the pump. Neither approach removes the need to measure and taste. Presets and factory recipes are starting points designed around a particular basket, dose and machine.
A practical starting recipe
Breville’s official US espresso guide recommends beginning a double shot with 19 grams of coffee and targeting 38 grams of liquid espresso in 20–30 seconds. That is a useful starting guide for dialing in, not a universal requirement for every bean, basket or machine.
| Variable | Starting point | What it controls |
|---|---|---|
| Dry coffee dose | 19 g for a double shot | How much coffee is available to extract and the puck’s depth |
| Liquid beverage yield | 38 g | The amount of espresso collected; weighing is more reliable than judging volume |
| Extraction time | 20–30 seconds | A diagnostic window for the starting grind and preparation |
| Grind | Fine enough to reach the window | The primary control for flow speed |
Use the same dose and target yield while making your first adjustment. Changing several variables at once makes it impossible to know which change affected the flavor.

- Warm the brewing path. Run a brief purge of hot water through the group head and, where your machine’s instructions call for it, the portafilter. This clears stale water and brings the parts into the intended operating range.
- Start with fresh whole beans. Grind immediately before brewing. Freshly roasted beans and consistent preparation improve the usefulness of the timing and taste comparisons you make from shot to shot.
- Measure the dose. Weigh 19 g of ground coffee for the double-shot starting recipe. A scale is more precise than relying on a grinder’s timer or the height of grounds in the basket.
- Distribute the grounds. Settle the coffee so there are no obvious hollows or mounds. An even bed reduces the chance that water finds one easy channel through the puck.
- Tamp level. Compress the grounds with the tamper supplied or specified for your basket. Keep the surface level; an angled puck encourages uneven flow. Follow your manual if it specifies a particular tamping method.
- Lock in and place the cup on a scale. Tare the scale, then start the extraction using your machine’s control. Do not assume another model uses the same start, stop or volumetric buttons.
- Stop at the target yield. End the shot around 38 g of liquid. Record the elapsed time and taste the espresso after it settles enough to evaluate.
How to adjust a shot without guessing
Use a two-part diagnosis: first compare the measured time and yield with the starting recipe, then confirm with taste. Change only one main variable per attempt, normally the grind size.
If the shot runs too fast
A shot that reaches 38 g well before 20 seconds usually has too little resistance. Grind finer, keep the 19 g dose and repeat. The BES878 manual identifies fast flow as a possible under-extraction cue and lists grind and dose changes as remedies for that model. A fast shot can taste thin, sharp or sour because the water has not extracted enough from the coffee bed.
If the shot runs too slowly
If the stream barely moves, drips, or takes substantially longer than 30 seconds to reach the target, grind a little coarser and repeat. The BES878 manual treats slow or dripping flow as a possible over-extraction cue and again points to grind and dose adjustments. A slow shot may taste harsh, bitter or drying, although flavor also depends on the bean and roast.
If time is in range but flavor is wrong
Do not force the timer to win. A coffee can taste unbalanced at 20–30 seconds because beans, roast level, water and machine design vary. Keep the dose stable and make a small grind change in the direction suggested by taste: a little finer when the cup is weak or sharp, or a little coarser when it is heavy and drying. Taste the next shot before making another change.

If the dose is inconsistent
Check the grinder’s output on a scale and inspect the basket after dosing. Retain the same nominal dose while learning the machine. If the grinder cannot deliver repeatable amounts or fine adjustments, it will be difficult to separate a grind problem from a dosing problem.
Reading flow, taste and the coffee bed together
Flow is a visible clue, not a complete quality score. A healthy-looking stream can still taste wrong, and crema alone does not prove a good extraction. Note three observations for every test:
- Time: seconds from starting the pump (or the timing convention in your manual) until the target yield.
- Yield: the beverage weight in the cup, measured with the cup on a scale.
- Taste: sweetness, acidity, bitterness, body and any drying or hollow finish.
Keep a short log of bean name, roast date if available, dose, grind setting, yield, time and tasting note. When a new bag behaves differently, return to the 19:38 recipe and re-dial rather than copying the old grinder setting.
What manufacturer guidance can—and cannot—tell you
Machine manuals are valuable because they connect symptoms to the hardware in front of you. They may specify a basket, dose range, tamping procedure, cleaning cycle or button sequence. Those directions are model-specific. The timing, dose and tamp instructions in the Breville BES878 manual should not be presented as universal rules for another machine.

After brewing, follow the cleaning directions for your model. The BES878 manual specifically advises rinsing the filter basket after use. Coffee residue can obstruct holes and alter the next shot, so a clean basket is part of a repeatable workflow.
Breville’s Barista Pro product page claims a three-second heat-up time and describes an integrated precision conical burr grinder. Those are the manufacturer’s product claims, not independent test results; they also describe that product rather than every home espresso maker.

The Specialty Coffee Association (SCA) publishes specifications and test methods for semi-automatic and automatic espresso machines and for home coffee grinders. A standards listing is useful for understanding how equipment can be evaluated, but it does not make one consumer recipe a universal quality rule.

An SCA 25 Magazine, Issue 3 article reported that 51% of surveyed respondents used average extraction times of 25–30 seconds. The article also described its reported average shot as 18–20 g of dose, 36.5 g of output, 25–30 seconds, 9 bars and 200°F. These figures are a survey report, not an endorsement that every drinker or machine should use those settings. They sit close to the 19 g, 38 g and 20–30 second starting guide, but the distinction matters: a reported average is not a required target.

Choosing equipment around the variables that matter
You do not need a particular machine layout to apply the method. Compare equipment by the controls it gives you and by how consistently it repeats them.
| Decision point | Built-in grinder machine | Separate grinder and espresso machine |
|---|---|---|
| Workflow | One appliance can grind and brew in sequence, saving counter space and steps. | Two appliances take more space but let you replace or tune either part independently. |
| Grind control | Convenient when the integrated grinder offers fine, repeatable adjustments. | A dedicated espresso-capable grinder may offer more adjustment range or easier dose measurement. |
| User control | Presets can simplify dosing and extraction for beginners. | Separate controls can make experimentation and troubleshooting more direct. |
| Existing equipment | Useful if you do not already own a capable grinder. | Practical when you already have a grinder that can produce consistent espresso grounds. |
No current price or comparative quality ranking is established here. Check basket size, grinder capability, scale clearance and tamper fit before buying accessories; compatibility affects whether the recipe is easy to repeat.
Common problems and fixes
| Symptom | Likely first check | Next action |
|---|---|---|
| 38 g arrives much earlier than 20 seconds | Grind is too coarse, or the dose is low. | Grind finer; verify the dose on a scale. |
| Only drips arrive after a long wait | Grind is too fine, or the dose is high. | Grind coarser; verify the dose and basket are not obstructed. |
| Channeling or an uneven stream | Grounds were distributed unevenly or tamped at an angle. | Settle the grounds evenly and tamp level. |
| Shot time repeats but flavor changes | Bean age, dose, water temperature or residue may have changed. | Use fresh beans, re-weigh the dose, clean the basket and re-taste before changing several settings. |
| Machine buttons do not match a recipe guide | The guide describes another model’s interface. | Use your machine’s manual for start, stop, purge and cleaning instructions while retaining the measured dose, yield and taste-based method. |
A repeatable dialing-in routine
- Choose one coffee and keep the basket, dose and water setup constant.
- Begin at 19 g in and 38 g out.
- Record the extraction time and taste.
- Change the grind one small step: finer for a fast, weak or sharp shot; coarser for a slow, harsh or drying shot.
- Repeat until the cup is balanced, then record the setting for that bean.
- When you switch beans or the coffee ages, return to the baseline and start the process again.
This routine turns an espresso maker from a collection of presets into a measurable brewing system. The machine provides heat and pressure; your measurements and controlled grind changes decide whether the concentrated drink tastes sweet and balanced or thin and harsh.
