Food-delivery apps do not rely on one all-knowing AI to decide what you see, what you pay, and how your order gets to you. They use connected systems: recommendation models rank available restaurants, merchants and platform rules shape prices and fees, and prediction models plus optimization software coordinate couriers, timing, batches, and routes. The details vary by platform, market, and date; public disclosures offer partial examples, not a complete blueprint for every app.
Why does one restaurant appear before another?
A delivery app generally makes two decisions before showing a restaurant: which merchants can serve the delivery address at that time, and how to rank those available options. A restaurant outside its delivery area, temporarily unavailable, or unable to meet the app’s operating constraints may not be a candidate at all. Ranking then estimates which candidates are likely to be useful to that customer in that context.

Availability and organic recommendations
Uber’s 2025 Algorithmic Transparency Report for Europe describes discovery signals that include a customer’s location, time of day, merchant availability and proximity, past preferences, and estimated delivery time. These factors can work together: a nearby restaurant may be less attractive if its estimated delivery time is long, while a restaurant matching a customer’s past orders may be more relevant even if it is not the closest.
In an engineering post dated April 16, 2026, Uber described a change to its home-feed recommendation approach. Rather than relying only on aggregate affinity features, its system combines conventional scalar and categorical inputs with a transformer-based encoder of behavioral sequences. The post also discusses near-real-time context and physical constraints such as location and delivery radius, while balancing familiar favorites against opportunities to discover other restaurants. This is Uber’s disclosed approach, not evidence that all delivery apps use transformer models.

Sponsored listings are a separate path
A sponsored result is paid promotion, but payment alone does not necessarily determine its position. Uber’s 2025 Europe report says sponsored ranking considers relevance to current needs, historical menu relevance, and the merchant’s bid. Its example is that a customer who often orders vegetarian meals may see a sponsored plant-based restaurant above a higher-spending burger restaurant. So seeing a restaurant first does not, by itself, establish that it paid for placement; it may also reflect availability and predicted relevance.
Who sets menu prices, and what makes delivery fees change?
“AI chooses the prices” is too broad. Restaurant menu-item prices are generally set by the merchant, while delivery, service, and other fees are separate charges governed by platform rules and local conditions. Uber Eats help materials state that restaurant prices and offers may differ from in-person prices. The exact labels and rules depend on the market, restaurant, and delivery model.
Menu prices versus app fees
When comparing an app order with an in-person menu, distinguish the listed item price from the delivery fee and other checkout charges. Uber Eats help pages identify examples of fee inputs such as delivery location and distance, nearby courier supply, demand or busy periods, and basket size. Depending on the market and order, separate charges may include service, small-order, long-range, or other fees. These are Uber examples rather than a universal fee formula; local checkout disclosures are the most relevant place to see the charges for a particular order.

A changing total is not proof of individualized pricing
Uber’s 2026 pricing-principles document says that for its consumer-facing US products with prices set by Uber, it does not use personal data to personalize prices for individual consumers. It says location may inform factors such as time and distance or real-time supply and demand. The document also notes that practices can differ for enterprise offerings, third-party-set prices such as restaurant menus, and markets outside the US.
That qualification matters: a total can change because location, distance, demand, basket size, merchant-set menu prices, taxes, or local fee rules differ. A different total alone does not show that an app set an individualized base price for a particular customer. Nor does Uber’s US statement establish a rule for every company or country.

How does a platform decide which courier gets an order?
Dispatch is a prediction-and-optimization problem, not simply a search for the nearest courier. DoorDash’s engineering account describes machine-learning predictions for order readiness, travel time, and the likelihood that a courier will accept an offer. An optimization layer then scores and ranks possible offers, decides whether orders should be batched, and may delay dispatch so a courier is not sent too early.
Timing involves competing risks. If a courier reaches a restaurant before the food is ready, they may wait; dispatching too late can delay delivery or leave food sitting after preparation. DoorDash’s engineering authors put the trade-off this way: “If we dispatch too late, the food will sit too long and could get cold, while the merchants and consumers become upset that the food wasn’t delivered as quickly as possible.” The system also has to account for rejected offers and keep orders on track for arrival.

Why the nearest courier may not be the best assignment
Distance is only one input to the assignment. A courier who is slightly farther away may be a better fit if they can arrive when the kitchen is ready, complete a compatible batch, or serve the order without harming other delivery estimates. Predictions are uncertain, too: preparation can take longer than expected, travel conditions can change, and a courier can reject an offer. Dispatch systems therefore have to choose among imperfect options in real time rather than follow a fixed “nearest driver wins” rule.
An earlier DoorDash technical post described the challenge of generating possible courier routes and selecting assignments in real time. It contrasted that problem with an older one-order-at-a-time matching setup that could not support more complex routes with multiple deliveries. That account helps explain why batching requires richer optimization, but it should be read as a historical engineering description, not a specification of DoorDash’s exact system in 2026.

How does the app choose a delivery route?
The operational goal is not necessarily the shortest route by distance. A useful plan balances expected travel time and distance with pickup readiness, courier waiting, customer arrival estimates, possible batching, and overall fulfillment quality. A route that looks shorter on a map may perform worse if the food is not ready, while a planned multi-order route may be more efficient if it can serve several customers without unacceptable delays.
Machine-learning predictions estimate parts of this changing situation; optimization methods compare assignments and routes against multiple objectives and constraints. “AI” in this context can therefore mean recommendation or prediction models working alongside mathematical optimization and operations research, not a single neural network autonomously choosing every turn.

A 2023 article in INFORMS Journal on Applied Analytics describes Meituan’s real-time dispatch system as combining operations research and machine learning to manage a dynamic, uncertain delivery network. The article reports that the system solved assignment problems in seconds. It also reports that, after implementation in 2019, average delivery time decreased by 20.96% and average courier travel distance per order decreased by 23.77%.
Those figures describe Meituan’s reported experience with its system, not a cross-platform test or a result that can be assumed for every delivery service. They also concern a system implemented in 2019, as reported in the 2023 article; they should not be read as current performance figures for all Meituan operations.
Quick Recap
What can customers reasonably infer from what they see?
- A restaurant’s position: It may reflect eligibility, context, predicted relevance, or sponsored placement. Position alone does not reveal which factor mattered most.
- A changing fee or total: It may reflect distance, demand, courier supply, basket size, merchant pricing, taxes, or local rules. The total alone does not identify the cause.
- A courier assignment or route: It is likely shaped by predicted readiness and travel time, offer acceptance, batching, and timing—not just proximity or shortest distance.
- A platform’s explanation: Treat company transparency reports and engineering posts as descriptions of disclosed systems for particular products, regions, and dates, not complete disclosures of every operational rule.
