How AI Can Detect Smoke Taint in Grapes Before Harvest

AI can help screen grapes for wildfire-smoke exposure before harvest, but it is not yet a universally validated, off-the-shelf detector that can replace laboratory testing. Current studies combine electronic noses or near-infrared (NIR) spectroscopy with machine-learning models to estimate smoke-related compounds. Treat those results as risk screens. Confirm a consequential harvest or winery decision with laboratory analysis of grape smoke markers, and interpret the result using the cultivar, sample date, exposure timing and intended winemaking process.

What smoke taint is and what a preharvest test is trying to find

Smoke from burning vegetation contains volatile phenols, including guaiacol, 4-methylguaiacol, syringol and related compounds. Grape skins and berries can absorb these substances during a smoke event. The berry often stores much of the absorbed material as bound glycosides rather than as free volatile compounds.

As an Amazon Associate I earn from qualifying purchases.

Those bound forms matter because fermentation and later wine storage can release free volatile phenols. The resulting wine may show smoky, burnt, medicinal, dirty or ashy notes. A grape test therefore estimates chemical risk before winemaking; it does not directly taste the finished wine or guarantee how strongly a particular lot will show taint.

Fruit composition, cultivar, berry maturity, yeast activity, extraction, barrel or tank handling and storage all influence the eventual sensory result. The same measured grape marker level can therefore lead to different wine outcomes in different lots.

Why timing makes the question difficult

Smoke exposure and grape chemistry change with time. A sample collected immediately after a fire may not represent the final concentration at harvest, while a late sample may miss an earlier decision point. In a Wine Australia project completed in 2022 and reported on its January 2024 project page, targeting predefined grape-glycoside bands up to two weeks before harvest proved difficult when final grape analysis was performed. Any AI score or laboratory number should be read with the exposure date, sampling date and expected harvest date beside it.

AI approaches that have been tested

Electronic noses with machine learning

A 2020 Sensors study used a low-cost electronic nose to read wines made from experimental smoke-exposure treatments. Machine-learning models classified the treatment groups with 97% accuracy across 300 experimental samples (study report). Other models estimated measured smoke-related compounds in berries and wines from sensor readings.

That number describes the study’s samples, treatment design and validation setup. It is not a universal field accuracy rate, and it does not show that a vineyard can buy a generic electronic nose and obtain the same performance across cultivars, fire conditions, weather, maturity stages and wineries. Sensor fingerprints can also be affected by temperature, humidity, other volatiles and instrument drift.

NIR spectroscopy and machine learning

A 2020 Cabernet Sauvignon study used near-infrared spectra from berries, must and wine as model inputs for predicting measured volatile phenols and glycosides (OENO One study). The authors reported strong model statistics for several targets, including predictions related to berries at harvest.

NIR is attractive because it can be rapid and non-destructive: a spectrum can be collected without consuming the entire sample, then a calibrated model can rank lots for confirmatory testing. However, a model trained on Cabernet Sauvignon or a particular instrument configuration should not automatically be assumed valid for another cultivar, region, berry stage or hardware platform. The relevant question is not whether NIR works in principle, but whether the specific calibration has been independently validated for your sample type.

Biomarker discovery by LC-MS

AI screening is easier to understand when the underlying chemistry is known. A 2024 Food Chemistry: X study identified 73 differentially expressed metabolites associated with different smoke-taint levels and structurally assigned 15 compounds, including guaiacol and syringol derivatives and previously unreported glycoconjugate intermediaries (full study). These findings expand the possible chemical features that future models could use; they are not, by themselves, a field detector or a harvest threshold.

Passive samplers and other sensors

A study published on 15 January 2025 evaluated passive samplers as a cost-effective way to estimate wildfire-smoke impact after vineyard exposure. It reported positive associations between volatile-phenol measurements and smoke intensity and found potential for predicting impact (study abstract). Passive samplers monitor the exposure environment and can complement berry sampling, but this work is not evidence of an available AI grape detector.

The West Coast Smoke Exposure Task Force lists rapid vineyard detection, smoke-marker sensors, atmosphere modelling, barrier sprays and genetic resistance among its research areas (task-force research page). USDA Agricultural Research Service work running from 2024 through 2028 likewise covers smoke effects on grape and wine chemistry and mitigation methods (USDA project). These programs show active development rather than a catalog of validated commercial products.

How the methods differ

Approach What it measures How the result is produced Current use indicated by the evidence
Electronic nose plus machine learning Volatile fingerprint from experimental wine or related sample headspace Sensor pattern is classified or used to predict measured compounds Research screening; the 97% figure applies to 300 experimental samples and treatment groups
NIR plus machine learning Optical spectra from berries, must or wine Calibrated spectral model predicts volatile phenols or glycosides Rapid, non-destructive screening when calibration matches the cultivar, stage and instrument
LC-MS laboratory analysis Specific free volatile phenols and bound glycosides Chromatographic separation and mass-spectrometric measurement Confirmation and risk interpretation; method, analytes and reporting vary by laboratory
Passive sampler Accumulated volatile-phenol exposure in the vineyard environment Sampler is retrieved and chemically analyzed Related exposure monitoring; not proof of an AI detector or direct berry result

When comparing options, ask six questions: does the method measure berries, leaves, air, must or wine; does it detect compounds directly or infer them from a fingerprint; is it validated for your cultivar and sampling stage; how quickly can a result be returned; what cost and throughput apply; and has the output been related to finished-wine sensory results?

A practical preharvest workflow

1. Document the smoke event

Record the fire or smoke date and duration, wind direction, vineyard blocks affected, visible smoke conditions, cultivar, rootstock if relevant, irrigation or canopy differences, berry-development stage and the planned harvest window. Keep weather and management notes with each block. These records help a laboratory or model distinguish exposure differences from sampling noise.

2. Design representative sampling

Do not rely on one convenient cluster. Divide the vineyard into blocks that differ in elevation, edge exposure, canopy density, smoke path or cultivar. Use a consistent berry-selection method and label every sample with block, date, variety and development stage. If exposure continues, plan more than one collection date so that a single early result does not become an assumed harvest value.

3. Use AI or sensor output as triage

If you have access to a validated NIR or electronic-nose service, provide the model with the metadata it expects and ask which calibration and validation set apply. Treat the output as a screening category, ranking or estimated concentration unless the provider documents an appropriate quantitative validation. A high-risk screen should prioritize confirmatory samples; a low-risk screen should not overrule obvious exposure or a poorly matched calibration.

4. Confirm with a qualified laboratory

Ask for grape smoke-marker analysis using a method suited to preharvest samples. Wine Australia describes transferred, modified and proficiency-tested LC-MS analysis for six grape glycosides and reports correlations among grape markers, wine smoke markers and sensory ratings, while noting that relationships and wine outcomes vary (project report). Some laboratories also measure free guaiacol and 4-methylguaiacol in grapes and wine as screening markers; ETS Labs describes that approach on its technical page (technical explanation).

Before shipping, ask the laboratory which analytes it reports, the minimum and preferred sample amount, packaging and storage requirements, turnaround time, detection limits, quality controls and whether its interpretation is intended for a preharvest decision. Service availability and terms can change, so obtain current details directly from the provider.

5. Combine chemistry with the production plan

Use the marker report, exposure history and intended product together. A lot destined for a delicate, minimally extracted wine may warrant a different risk decision from fruit intended for a style with different extraction and blending options. Do not convert one marker or one model score into an exact prediction of sensory intensity without a validated relationship for that specific fruit and process.

6. Decide, then keep the chain of evidence

Document why a block was harvested, held, diverted, blended or rejected; attach the AI output and laboratory report to the same lot record. Retaining these records lets the winery compare preharvest predictions with later wine chemistry and sensory results and improve future sampling, without pretending that a model has universal accuracy.

How accurate is AI smoke-taint detection?

The strongest simple figure in the reviewed evidence is the 97% treatment-classification accuracy from the 2020 electronic-nose study. Because it covered 300 experimental samples and predefined treatment groups, it answers a narrow question: can that sensor-and-model setup distinguish those experimental conditions? It does not answer how accurately an unknown vineyard block will be classified after a real wildfire.

The NIR work reports high performance statistics for several individual targets, but performance differs by compound, sample type and validation design. A model may predict one glycoside well and another poorly, or perform well on berries while requiring a different calibration for must or wine. Look for external validation, a blind test set, cultivar and stage coverage, instrument details, detection limits and error intervals rather than a single headline percentage.

A credible commercial claim should also explain how the model handles samples outside its training range, sensor drift, unusual smoke sources, mixed cultivars and repeated measurements. Without that information, the safest interpretation is qualitative screening.

What is established today—and what is not

  • Laboratory measurement of grape smoke markers is the established confirmation route described by the cited technical sources.
  • AI-assisted electronic noses and NIR systems have demonstrated promising results under controlled research conditions.
  • No reviewed source establishes a validated, broadly available commercial AI detector that growers can rely on alone before harvest.
  • Handheld NIR devices, generic electronic noses, vineyard sensors, refractometers and smoke alarms should not be marketed or assumed to be grape smoke-taint detectors without product-specific validation.
  • Passive samplers can add information about vineyard exposure but do not substitute for representative berry chemistry.

The practical boundary is straightforward: use sensors and models to prioritize samples and speed decisions, then use appropriately validated laboratory chemistry to confirm suspected taint.

Common mistakes and how to avoid them

Confusing ambient smoke with berry uptake

Heavy smoke in the air does not provide a direct concentration for every block or cultivar. Canopy position, exposure duration and berry development affect uptake. Pair environmental monitoring with berry sampling.

Sampling only the easiest fruit

Edge rows, sheltered rows and different canopy zones can experience different exposure. A composite that hides those differences may produce a misleading average. Keep block-level samples separate when the decision is important.

Using a model outside its calibration

A calibration trained on Cabernet Sauvignon berries at harvest is not automatically valid for another variety, an earlier stage, must or wine. Require documentation of the intended matrix and validation population.

Assuming a low score means no risk

A low sensor score can reflect an unrepresented sample, instrument drift or a compound the model was not designed to detect. Recheck the sampling date and calibration, and confirm with laboratory testing when the stakes are high.

Predicting the finished wine from one number

Glycosides and volatile phenols correlate with later outcomes, but fermentation, extraction, storage and blending alter sensory expression. Treat a marker as evidence of risk, not a guaranteed tasting note.

Questions to ask a technology or laboratory provider

  • What exact matrix is validated: berry, must, wine, leaf or air?
  • Which cultivars, maturity stages and smoke conditions were included in validation?
  • Are results qualitative, ranked, or quantitative with an error interval?
  • What happens when a sample falls outside the model’s training range?
  • What quality controls, calibration checks and proficiency tests are used?
  • Can the result be returned in time for the intended harvest decision?
  • Which grape markers are measured, and how are they related to wine sensory outcomes?
  • What sample amount, handling and storage conditions are required?

Where the field is heading

Future systems are likely to combine several evidence streams: atmospheric smoke modelling, passive exposure samplers, berry spectra, laboratory marker measurements and vineyard metadata. A model that knows the cultivar, berry stage and time since exposure should be more useful than a generic score from an unlabelled sensor. The challenge is building large, diverse datasets with independent validation across fires, regions and winemaking processes.

For now, the dependable decision path is hybrid: monitor the vineyard, sample systematically, use a validated AI or sensor method for rapid triage when available, and confirm material decisions with laboratory smoke-marker analysis. That approach captures the speed advantage of AI without presenting an experimental screening model as a proven preharvest detector.
