Researchers at the University of Kentucky turned bourbon stillage—the spent grain left after distillation—into hard and activated carbon for prototype energy-storage devices. Their laboratory results show promising performance in two kinds of capacitors, but do not establish that the devices are commercially viable, ready for grid deployment, or environmentally beneficial at scale.
What bourbon waste did the researchers use?
The feedstock was bourbon stillage, a spent-grain by-product of distillation—not whiskey itself, discarded barrels, or barrel-derived biochar. The distinction matters because these are separate waste streams used in different research.

Kentucky bourbon output increased sixfold between 2000 and 2024, according to the study. The authors also report that bourbon stillage is generated at 6–10 times the volume of bourbon produced. Those figures describe the bourbon context discussed in the paper; they should not be generalized to all whiskey production.

The researchers used hydrothermal carbonization to produce hydrochar, then further thermal and chemical processing—including pyrolysis and subsequent treatment—to make hard carbon and activated carbon.

How did the study use the carbon materials?
The team assembled two different device configurations. Activated carbon served as the electrode material in symmetric electric double-layer capacitors (EDLCs). The researchers also built hybrid lithium-ion capacitors (LICs) using stillage-derived hard carbon and activated carbon.
These configurations are not interchangeable, and their results should be read separately. Energy density describes stored energy relative to mass; power density describes how quickly energy can be delivered relative to mass. Cycle retention indicates how much capacitance or capacity remained after repeated cycling under the study’s test conditions.

What performance did the prototypes report?
The peer-reviewed study reports the following laboratory results. The ranges span test conditions; they are not single specifications for a commercial product.

These are the authors’ reported results for their study, not guaranteed performance or service-life figures. The numbers alone do not establish that one configuration is better for every application: the devices differ, and performance depends on operating and measurement conditions. They also do not support a direct comparison with commercial products without matching cell configuration, electrode basis, test protocol, and operating conditions.

Does this mean the technology is sustainable or ready for sale?
No. The work demonstrates lab-prepared materials and prototype capacitors. The American Chemical Society’s March 25, 2026 report says life-cycle analysis and economic and technological feasibility evaluations were still planned. The available findings therefore do not establish full-scale manufacturing, cost competitiveness, commercial deployment, or favorable environmental impacts across the process’s life cycle.
The University of Kentucky has described possible relevance to grid stabilization, but that is a potential application, not evidence that a device has been deployed on the grid. As Seth DeBolt, director of the James B. Beam Institute for Kentucky Spirits, put it: “Innovation to convert a waste stream to a supercapacitor is a wonderful example of why the University of Kentucky, as the flagship, land-grant school for Kentucky, exists.”

How is this different from research on whiskey barrels?
Discarded whiskey barrels are a separate waste stream. A 2024 study examined barrel-derived biochar as an additive in anaerobic digestion and reported up to 15% higher biomethane production. That result concerns methane production, not the stillage-derived capacitor materials or their performance.
