No form of salmon is healthiest for everyone. Plain fresh or cooked salmon is a straightforward choice when you want to avoid added sodium; canned salmon is a convenient, shelf-stable source of omega-3 fats; and smoked salmon can fit into a balanced diet, though its sodium and moisture loss matter. During pregnancy, avoid refrigerated smoked seafood unless it is cooked into a dish.
How to compare fresh, canned, and smoked salmon
Compare the product you would actually eat, not just the category name. Salmon species, serving size, added salt, and water content all affect the numbers. Nutrition values per 100 grams are not automatically comparable to values per serving, particularly when smoking removes moisture.

- Sodium: Check the Nutrition Facts panel for the serving size you plan to eat. Canned and smoked products may have added salt, and recipes differ; there is no reliable category-wide sodium ranking.
- Convenience: Canned salmon is shelf-stable, while fresh salmon needs refrigeration or freezing.
- Omega-3s: Canned salmon supplies EPA and DHA. The NIH Office of Dietary Supplements lists 0.28 g EPA and 0.63 g DHA in a 3-ounce serving of drained canned pink salmon. Its figures for 3 ounces of cooked farmed Atlantic salmon are 0.59 g EPA and 1.24 g DHA. Because the species and preparations differ, these figures do not isolate the effect of canning. What each form offers
Fresh or cooked salmon
Plain fresh salmon is an easy default if you want control over added salt: season it yourself and check the label if it has been prepared or seasoned. Cooked farmed Atlantic salmon is a source of EPA and DHA, but its NIH serving figures should not be treated as a direct comparison with canned pink salmon.

Canned salmon is a practical pantry option that provides EPA and DHA. For a useful product comparison, check the serving size, sodium, and ingredients on the can. Canned pink salmon is one example; its nutrition should not be assumed to represent every canned product.

Smoked salmon
Smoking reduces moisture, which can make protein and other nutrients appear more concentrated per 100 grams. In a 2007 USDA Agricultural Research Service sample of Alaska Native red smoked salmon, moisture was 26.9 g and protein was 56.9 g per 100 g. That single sample is not a universal value for smoked salmon or evidence that it is categorically healthier. Species and products vary. USDA Agricultural Research Service: salmon composition report
Smoked salmon can also contain added salt. Compare its sodium on the package with the other salmon products you are considering, using the same serving size.

Does canned salmon have less mercury?
FDA monitoring data report mean mercury levels of 0.014 ppm for canned salmon and 0.022 ppm for fresh or frozen salmon. These figures reflect historical sampling periods—1993–2009 for canned salmon and 1991–2009 for fresh or frozen salmon—not current guarantees for an individual product. They do not establish a meaningful health advantage for all canned salmon over all fresh salmon. FDA: Mercury Levels in Commercial Fish and Shellfish (1990–2012)
