Who is David Lanher?
Lanher is a restaurateur whose career, by his account, began with an early interest in restaurants. After working in the industry, he spent a year in New York, then returned to Paris and worked for three years at luxury caterer Potel et Chabot. He says he became a restaurant owner after acquiring and relaunching Le Café Moderne, near the Place de la Bourse.
In 2009, he bought Racines in the Passage des Panoramas. He later opened a New York restaurant called Racines, which the interview says became Chambers. His account traces a path from restaurant jobs and catering into operating venues of his own.
What is Lanher’s approach to food and restaurants?
Lanher describes the group’s style as traditional bistro cooking refreshed, served in an attractive but unpretentious setting, with ingredients sourced carefully. His description favors good cooking and a welcoming atmosphere over the conventions of haute cuisine.

He also credits the restaurant teams with defining Groupe Racines. In the interview, he characterizes the people who work with him as loyal, supportive and talented, and says they are comfortable in their workplaces. These are Lanher’s reflections on his own group, rather than an independent assessment of its working conditions.

Lanher calls roast chicken his emblematic family dish and says he makes it at least once a week. He describes it as adaptable to different preferences and seasons; at the time of the interview, he was preparing it with lemons. The dish sits naturally alongside his emphasis on familiar, generous food: the interview presents it as a meal he shares with people he loves.
