The difference is mainly regional word choice, not biology. “Crayfish” is the safest general and technical term, “crawfish” is strongly associated with Louisiana and Southern food culture, and “crawdad” is an informal regional term used especially in parts of the interior United States.
None of the three words identifies one particular species. If an exact identification matters, use a scientific name or an agency-standardized species name.

What animal do the three words describe?
All three names are commonly used for freshwater decapod crustaceans. “Decapod” means a crustacean with ten legs, placing crayfish in the same broad biological group as shrimp, lobsters, and crabs. Crayfish occupy freshwater habitats, so they are often described as the freshwater equivalents of shrimp and lobsters.

NOAA’s technical bulletin explains that “crayfish” is the term most often used in technical literature, while noting that the same animals are also known as crawfish, crawdads, and mudbugs. Washington Department of Fish & Wildlife likewise says the names are equally acceptable and reflect regional differences rather than separate species.
Crayfish, crawfish, and crawdad compared
| Term | Usual biological referent | Where it is especially common | Register | Culinary association | Can it identify a species? |
|---|---|---|---|---|---|
| Crayfish | The broad group of freshwater decapod crustaceans | General English, scientific and agency writing | Technical, neutral, or general | Used in food contexts, but not tied to one regional tradition | No; it covers many species |
| Crawfish | The same broad group | Louisiana and other Southern U.S. communities; also used elsewhere | General and culinary | Strongly associated with crawfish boils and Southern seafood culture | No; it is also a market name |
| Crawdad | The same broad group | Especially parts of the interior United States | Informal and regional | Usually less tied to commercial seafood language | No; it is a colloquial common name |
These are usage tendencies, not rigid geographic borders. Speakers can use more than one term, and neighboring communities may prefer different words for the same local animals.
Why does the preferred word change by region?
Crayfish: the neutral choice
“Crayfish” is the most dependable choice when you are writing for a broad audience or discussing the animals in a scientific, environmental, educational, or government context. Agencies and technical publications commonly use it because it is widely understood and does not imply a particular local food tradition.
Using “crayfish” does not make a statement more biologically precise. It simply avoids committing to a regional colloquialism. A technical report still needs a scientific name when the identity of a species affects the result.
Crawfish: a strong Southern and culinary signal
“Crawfish” is especially prominent in Louisiana and neighboring Southern food culture. Menus, recipes, festivals, and conversations about a crawfish boil commonly use this spelling. The word is not restricted to Louisiana, however, and it is an accepted market name outside the region as well.

The U.S. Food and Drug Administration’s Seafood List recognizes “crawfish” and “crayfish” as acceptable market names for Astacus species. That labeling guidance shows why the words can appear interchangeably in commerce even though a market name is not a complete species identification.
Crawdad: an informal regional term
“Crawdad” is a colloquial term, particularly familiar in parts of the interior United States. It often appears in casual speech, local stories, children’s activities, or regional descriptions of freshwater animals. Calling an animal a crawdad does not indicate a different body plan, family, or species from one called a crayfish.
Because “crawdad” is strongly associated with particular speech communities, it can tell you something about the speaker’s regional vocabulary. It cannot tell you which genus or species was observed.
Are crawfish and crayfish the same thing?
Usually, yes. In ordinary conversation, “crawfish” is another common name for the animals generally called crayfish. A Louisiana restaurant may advertise crawfish, while a state wildlife page may discuss crayfish; the two references can concern the same type of freshwater crustacean.
There are two qualifications:
- Common names are broad. Either word can refer to multiple species, and the exact set of species varies by region.
- Context can narrow the meaning without making it taxonomic. A menu may use “crawfish” to signal a culinary tradition, while a field guide may use “crayfish” as a general heading. Neither usage creates a separate biological category.
If a document needs to distinguish one species from another, replace the common name with the accepted scientific name and, when useful, include the local common name in parentheses.

Is a crawdad different from a crawfish?
No biological difference is implied by the spelling. “Crawdad” is a regional colloquial name for animals that other speakers call crawfish or crayfish. The term’s exact popularity depends on local speech patterns, so it should be treated as a vocabulary clue rather than an identification key.
There is no nationwide line dividing crawdad territory from crawfish territory. Families, schools, anglers, and communities can preserve different words even within the same state, and people who move may adopt more than one term. A speaker’s choice reflects language and culture, not a change in the animal.
How many kinds of crayfish are there?
The number is large enough that no common name can stand in for a species list. Virginia Cooperative Extension and Virginia Tech published the following approximate figures in 2024:
- Approximately 500 crayfish species worldwide.
- About 400 species in North America.
- About 353 species in the United States, nearly 70% of the world’s total.
These are published approximations, not a continuously updated census. Taxonomic revisions, newly documented populations, and changes in how species are recognized can alter totals over time.
The figures also explain why a conversation can become ambiguous. Two animals called “crawfish” in different watersheds may belong to different species, and two communities may use different names for the same local species. A scientific name provides the standardized reference needed to resolve that ambiguity.

When should you use a scientific name?
Use a scientific name whenever the identity of the animal affects a decision, record, regulation, or comparison. Examples include:
- Wildlife surveys and biodiversity inventories.
- Fishing, harvest, or possession rules that apply to particular species.
- Conservation assessments and invasive-species reports.
- Laboratory, veterinary, or ecological studies.
- Seafood labeling where the permitted market name does not answer the species question.
- Comparisons between animals from different states or countries.
Common names remain useful for readers. A clear public-facing format is to give the scientific name first or alongside the familiar term, then specify the location and authority used for the identification. Avoid assuming that a photograph, menu label, or regional nickname is enough to establish species identity.
The Smithsonian’s reference materials emphasize that common names are local and non-scientific, while scientific names standardize identities when everyday language is ambiguous. That distinction is especially important for the many crayfish species found in North America.

“Crawfish” is the word most strongly associated with Louisiana’s food culture. It appears in descriptions of crawfish boils, restaurant menus, recipes, seasonal events, and everyday culinary conversation. In that setting, “crawfish” is the natural regional choice.

Which spelling is correct?
All three spellings are correct when used in the context where they are customary:
- Choose crayfish for general, educational, scientific, or nationwide writing.
- Choose crawfish when matching Louisiana or Southern culinary usage, or when following a market’s established name.
- Choose crawdad when quoting or addressing a community that uses the informal regional term.
“Correct” here means accepted usage, not a claim that one word names a separate species. If your audience is international or mixed, “crayfish” is usually the least regionally marked option; you can mention the alternatives once if readers may encounter them.
Common mistakes to avoid
Treating the words as three species
This is the central error. The names do not divide the animals into three biological groups. A species list cannot be reconstructed from the word someone chose.
What’s actually slowing this PC down?
Pick the symptom - the matching free tool is one click away.
Assigning a hard state-by-state boundary
Regional patterns are real, but they are not legal borders. Usage can overlap, change from one community to the next, and shift when speakers move.
Assuming a menu name proves species identity
“Crawfish” is an accepted market name, but a market name is not necessarily a scientific identification. Follow the applicable agency or labeling standard when exact identity matters.
Using a common name without location
Because many species share these names, a record that says only “crawdad” or “crayfish” may be impossible to verify later. Add the collection location, date, and scientific identification when those details are relevant.
A practical way to resolve the name in front of you
- Identify the context. Is the word appearing in a technical report, a restaurant menu, a regional conversation, or a wildlife record?
- Note the region. Location can explain why one accepted term appears instead of another, but it does not identify the species by itself.
- Do not infer species from spelling. Treat crayfish, crawfish, and crawdad as broad common names.
- Check the relevant authority. For regulated wildlife or formal records, use the species name and naming standard supplied by the responsible agency.
- Preserve both terms when communicating broadly. You can write “crayfish (also called crawfish or crawdads)” once, then use the term that best fits your audience.
Bottom line
Crayfish, crawfish, and crawdads are usually different regional names for the same broad group of freshwater decapod crustaceans. “Crayfish” is the neutral technical term, “crawfish” carries a strong Louisiana and Southern culinary association, and “crawdad” is an informal regional word. Since hundreds of species share these common names, use a scientific or agency-standardized species name whenever accuracy requires more than a general reference.
