Consumers are curious about precision-fermented foods, but curiosity is not the same as confidence. A new EIT Food Consumer Observatory report finds that people want plain, specific explanations of how the process works, what ends up in the food and why the product is worth trying.
The report, From Curiosity to Confidence: Developing effective messaging for products made with precision fermentation, was published on October 14, 2026. Its findings are based on a qualitative study of 45 participants, so they indicate the questions and reactions raised in the sessions rather than measuring all consumers.

What the 2026 report studied
The study ran in two stages. Participants first discussed their perceptions of precision fermentation. They then assessed product concepts and different ways of explaining the technology. The work was conducted for the EIT Food Consumer Observatory and reported by EIT Food and EUFIC/Phys.org.

Klaus G. Grunert, professor of marketing at Aarhus University and lead of the Consumer Observatory, said: “Curiosity gives precision fermentation an opening, but consumers still have very basic questions about what the technology is and what it means for the food they eat.”

He warned that unanswered questions can turn novelty into suspicion, and that a product must meet expectations once someone decides to try it.
What precision fermentation is
Precision fermentation uses microorganisms such as yeast or fungi to make a particular substance, including a protein or fat, for use as a food ingredient. The microorganism is used as a production system for the targeted ingredient; the finished food is then made with that ingredient.

That description is more specific than simply calling a product “fermented.” Traditional fermentation, familiar from bread, yogurt and cheese, helps people understand that microorganisms can transform food. However, the report says the comparison must be followed by a clear explanation of what is distinctive about precision fermentation. Without that second step, some participants interpreted the technology as “magic” or suspected that important information was being withheld.

People need the process, not just a slogan
A label that says an ingredient is made with precision fermentation does not answer the practical questions shoppers have: What does the microorganism make? How is that ingredient used in the product? What information supports its safety? The study found that vague language increased uncertainty rather than reducing it.

The first experience sets the direction
Participants were often willing to try a product. That willingness depended on receiving credible answers beforehand and having a good first experience afterward. If taste, texture or another expected attribute disappoints, curiosity is less likely to develop into repeat acceptance.
Which benefits persuade consumers
The strongest reasons to choose a product were benefits people can directly experience. Taste and flavour, texture and nutritional value were more compelling in the sessions than broad sustainability or ethical-replacement claims.

Animal welfare and environmental advantages still mattered, but generally worked better as supporting reasons than as the entire message. A communicator who leads only with an abstract promise may fail to explain why the product is useful at the table.

Why “replacement” can be the wrong positioning
The report cautions against presenting a precision-fermented product only as a substitute for a familiar favourite. That framing invites a strict side-by-side comparison with the original and can make any difference feel like a failure.
Instead, the product should have a benefit that stands on its own. Communications can explain how it relates to a familiar food while also telling people what the new offering does well in its own right.
What a trustworthy explanation should include
- A plain process description: name the microorganism category, identify the substance being produced and explain its role as an ingredient.
- A familiar starting point: use bread, yogurt or cheese to introduce fermentation, then describe the precision-fermentation step rather than treating the analogy as a complete definition.
- Specific safety information: provide evidence and explain what has been assessed. The consumer study examined questions about safety communication; it was not itself a toxicology or regulatory safety evaluation.
- A tangible reason to care: show the expected taste, texture or nutritional value before relying on broad environmental or ethical language.
- An honest product identity: present the food as an offering with its own purpose, not merely as a copy of a conventional product.
- A reliable first use: ensure the eating or cooking experience delivers what the description promises.
How to evaluate a precision-fermented product or claim
Consumers, retailers and food professionals can use five practical questions when reading a label, website or launch announcement:
- Can I understand the process? If the explanation uses only marketing language, look for a more detailed account of what is produced and how it is used.
- What will I notice? Check for concrete information about flavour, texture and nutrition rather than a promise of innovation alone.
- What safety evidence is identified? Distinguish specific, attributable information from an unsupported assurance that the product is safe.
- Is this positioned as a new product or only a replacement? A clear benefit in its own right is more informative than a demand to compare it with a familiar favourite.
- Does the first-use experience match the promise? Trust is built through the actual taste or use of the product, not through the novelty of the process.
What the findings do—and do not—show
The 45-person sample gives a detailed view of perceptions raised in the study’s sessions. It does not establish what percentage of the population accepts or rejects precision fermentation, how quickly the market will grow or which products will succeed. No market-size, adoption-rate or ranked brand comparison is provided.
The report was released two days before World Food Day on October 16, 2026, whose theme is “Innovate today. Nourish tomorrow.” Its central practical message is narrower and more useful than a prediction about the market: explain the technology sufficiently, lead with benefits people can experience and make the first trial a satisfying one.
