Coffee Grinder FAQs: Burr Types, Grind Consistency, and Retention Explained

Short answer: Flat and conical describe burr geometry, not an automatic quality ranking. A grinder’s results depend on burr tooth design, alignment, material, adjustment mechanism, motor and heat control, plus how you operate and clean it. “Grind consistency” means both a repeatable setting and a predictable particle distribution. “Retention” is the coffee left in the chamber or chute instead of reaching your cup; its meaningful value always includes the dose and workflow used to measure it.

This guide explains what those terms mean, how to compare grinders without misleading specifications, and how to manage retention and burr wear in real home or café workflows.

What flat and conical burrs actually describe

Burrs are the cutting surfaces that break roasted beans into particles. In a flat-burr grinder, two parallel discs face one another. In a conical-burr grinder, a cone rotates inside a matching outer ring. The shape affects how a grinder can be engineered, but it does not by itself establish which grinder is better, produces a superior cup, or is more consistent.

Flat burrs

Flat burrs can use large cutting surfaces and a relatively direct particle path. Their tooth pattern, diameter, steel or coating, alignment and adjustment system determine how they behave. Two flat-burr grinders can therefore produce noticeably different particle distributions and different amounts of fines, even when their nominal burr diameters are similar.

Conical burrs

Conical burrs use an inner cone and outer ring, often in a compact arrangement. The geometry may suit a particular motor speed, feed path or retention-control design, but “conical” is not a guarantee of low heat, low retention or a specific flavor profile. Those outcomes depend on the complete grinder design.

Why geometry alone cannot rank a grinder

Mazzer explains that a grinder is developed together with its burr set, and presents geometry, material and intended flavor profile as model-specific choices rather than universal category rules. Its burr tutorial and consumer FAQ are useful introductions to those design decisions: Mazzer’s burr tutorial and Mazzer’s consumer FAQ.

For example, Mazzer describes two 64 mm stainless-steel burr sets for its Philos grinder. The I200D has long, continuous teeth and is described as intended for light-to-medium roasts and a brighter, clearer profile. The I189D is based on the Mini burr design and is described as intended for medium-to-dark roasts and a fuller profile. Those are the manufacturer’s design descriptions, not independent sensory test results, and they should not be generalized to every flat burr with a similar diameter.

What “grind consistency” means in practice

Consistency has two related meanings. Repeatability is the grinder’s ability to return to the same result when you use the same setting, dose and operating conditions. Particle distribution is the spread of particle sizes in one dose. Brewing is affected by both: an inconsistent setting can change flow from shot to shot, while a broad or shifting particle distribution can create simultaneous over-extraction of fines and under-extraction of larger pieces.

Variables that change the grounds you receive

  • Burr alignment and movement: If the burrs are not held parallel or the adjustment carrier shifts under load, the gap changes and so does the particle distribution.
  • Heat: Motor and burr heat can alter bean behavior and extraction. Heat may also cause the burr carrier or surrounding parts to expand, changing the effective setting during a grinding session.
  • Retained grounds: Coffee left from an earlier dose can mix with the current dose, especially after a grind-size change or a switch between beans.
  • Static and clumping: Electrostatic charge can make grounds adhere to the chute or form clumps. The delivered dose then becomes less representative of what the burrs just produced.
  • Feed and dosing: A full hopper, a nearly empty hopper and single-dose feeding place different pressure on the beans and can produce different results.

An SCA article about grinding and flavor describes heat, retention, burr expansion and particle-distribution changes as sources of extraction variation. The article is sponsored content by Ceado, so treat descriptions of its REV system and related technologies as manufacturer-supported claims rather than independent comparative testing: SCA’s “Designing Flavor” article.

Static electricity is a separate but related issue. An SCA technical article discusses a study in which lightly wetting beans before grinding reduced clumping and retention under the study’s conditions: SCA’s static-electricity article. That finding does not make wetting a universal requirement. Follow your grinder maker’s instructions, protect electrical components and consider whether the practice is appropriate for your beans and equipment.

How to judge consistency without a misleading slogan

Look for repeatable brew results at a known setting, not just a phrase such as “café consistency.” Record the dose, grind setting, roast, water, temperature and brew time. If the same recipe drifts, check retention, static, burr alignment and temperature before blaming burr geometry. A grinder that returns precisely to a setting after cleaning may be more useful than one with a theoretically attractive burr shape but a coarse or unstable adjustment system.

What grinder retention is—and why the number is incomplete

Retention is the mass of ground coffee left inside the grinder, commonly in the grinding chamber, burr area or chute, instead of being delivered in the current dose. It is not the same as the amount of coffee that remains in a hopper. A retention claim should state what happened immediately before the measurement and how the grinder was operated.

Questions to ask about any retention figure

  • Was the grinder hopper-fed or single-dosed?
  • Was the measurement taken after one dose, several seasoning doses, a grind-size change or a bean change?
  • Was the chute tapped, brushed, purged or otherwise cleared?
  • Was the grinder measured while full, nearly empty or at a steady operating level?
  • Does the figure include only the chamber, or the chute and exit path as well?

“Low retention” and “zero retention” are labels, not standardized test results. Without the procedure, a decimal number cannot be compared fairly with another decimal number.

Published examples and their conditions

Model or workflow Published retention statement Condition and qualification
Mazzer Mini range, hopper-fed Approximately 8 g Mazzer defines this as coffee in the chamber between the burrs and chute when used with a full hopper. The company says to purge this coffee after changing fineness when extraction time is affected.
Mazzer Mini range, single dosing Approximately 0.1 g Mazzer reports this at a steady level after the first three doses. It is a different operating condition from the full-hopper figure.
Mazzer ZM Less than 0.45 g This is a Mazzer product-page claim for a grinder described as suitable for single dosing. The retrieved product page does not state a test protocol.
Mazzer Philos Negligible retention Mazzer ties the claim to a specific dose-finisher and chute-knocker procedure, rather than presenting it as a universal result for every workflow.

The figures above come from Mazzer’s FAQ and product pages, not from a common independent test. Read the stated conditions before comparing them: Mazzer FAQ, Mazzer ZM product page and Mazzer Philos product page.

Does single dosing reduce retention?

It often can, because single dosing minimizes the standing column of beans and lets you clear the grinder between doses. It does not automatically produce zero retention. Coffee can remain on burr surfaces, in the chamber or in the chute, and static can hold grounds against the exit path.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Single dosing also changes the measurement. A grinder may retain little after the first few doses once its internal surfaces are coated, while the first dose after a cleaning or bean change behaves differently. Conversely, a hopper-fed grinder may hold more old coffee but provide a stable, convenient workflow for repeated doses of the same bean.

A practical single-dose routine

  1. Weigh the beans before grinding and keep the dose consistent.
  2. Use only the anti-static or declumping practices allowed by the grinder’s instructions.
  3. Run the grinder until the motor has completed its normal cycle; do not force a stalled mechanism.
  4. Tap or operate the chute-clearance device specified by the manufacturer.
  5. Weigh the grounds delivered and note any difference from the input dose.
  6. When changing beans or grind size, discard or repurpose the purge dose if the old coffee would affect your recipe.

For the Philos, Mazzer instructs users to grind into the canister, actuate the chute knocker several times and use the dose finisher while the motor is running. The company attributes negligible retention to that complete procedure, so omitting one step changes the claim’s conditions.

How to compare grinders fairly

Start with your brewing and workflow requirements, then examine the grinder’s design. No available source establishes a universal flat-versus-conical winner or a same-protocol, cross-brand retention ranking.

Comparison axis What to examine Why it matters
Brew-method fit Espresso, pour-over, batch brew or a combination; usable adjustment range at each method. A grinder optimized for one narrow range may be frustrating when switching methods.
Burr design Flat or conical geometry, diameter, tooth pattern, material and the manufacturer’s stated roast or flavor intent. Geometry is only one part of the cutting system.
Adjustment Adjustment granularity, markings, backlash and the ability to return to a known setting. Repeatable adjustment saves dialing-in time and helps reproduce recipes.
Retention Mass retained, dose size, hopper or single-dose workflow, purge and measurement method. A number without conditions is not a useful head-to-head comparison.
Cleaning access Whether the chamber can be opened easily and whether the design preserves the setting during routine cleaning. Accessible cleaning helps control stale grounds without creating new calibration work.
Parts support Exact replacement-burr and service-part compatibility for the model. Burrs are not interchangeable simply because two grinders share a diameter.
Workflow Hopper-fed service versus changing beans or methods dose by dose. The best specification is the one that fits how you actually prepare coffee.

Espresso, filter and batch brewing

Espresso magnifies small changes because a narrow grind range controls flow through a compact coffee puck. Fine adjustment, stable burr spacing and low variation between doses are especially valuable. Filter and batch brewing usually tolerate a wider particle-size range, but repeatability still matters when you are comparing recipes or brew ratios. A grinder marketed for espresso should not be assumed to perform equally well for coarse settings unless the maker specifies that range.

Cleaning, burr wear and calibration

Ground coffee oils and particles accumulate in the burr chamber and chute. Mazzer’s burr tutorial recommends frequent cleaning—daily or at least weekly as guidance—while emphasizing that the exact routine belongs to the grinder’s manual: Mazzer burr tutorial. Unplug or safely isolate the grinder as directed before opening it, and never introduce liquid where the manufacturer forbids it.

Routine cleaning checklist

  • Empty or isolate the hopper according to the manual.
  • Remove the accessible upper burr carrier or chamber parts using the specified tool and sequence.
  • Brush and vacuum loose grounds from the burr area and chute; avoid forcing debris deeper into the motor housing.
  • Reassemble without cross-threading or overtightening.
  • Run the manufacturer’s recommended purge dose before judging the new grind.

Mazzer states that routine Philos cleaning does not require calibration, and that the Mini’s setting remains unchanged during its described chamber-cleaning procedure. Those are model-specific instructions, not a rule for every grinder.

When burr replacement requires calibration

Burr edges wear gradually, so a grinder may need a finer setting to reach the same brew time. Replace burrs at the interval specified for your model, or sooner if output, noise or adjustment range changes materially. Mazzer recommends original replacement burrs for its relevant models. After burr replacement—or after removing and reinstalling burrs—Mazzer says recalibration is required. Confirm the exact procedure and compatible part number in the model’s manual; a generic burr that appears to fit may not align or perform correctly.

Common retention and consistency problems

The first dose after changing grind size tastes wrong

Old grounds can remain in the chamber and chute. Purge enough coffee to clear the previous setting, then weigh the next dose. The required purge depends on the grinder and the size of the change; do not apply the Mini’s approximately 8 g hopper-fed figure to another model.

The grinder clumps or sprays grounds

Static, humidity, bean freshness and chute design can all contribute. Clean the chute, check that declumping parts are seated and use only manufacturer-approved anti-static methods. The SCA static study’s light-wetting result is evidence for one tested approach, not a universal instruction.

The setting drifts after cleaning

Check that the carrier is fully seated, threads are clean and the adjustment lock is engaged. If the burrs were removed and reinstalled, follow the model’s recalibration procedure. A grinder that cannot return to a repeatable zero point may need service even if its burrs are sharp.

Retention rises over time

Inspect the chute and chamber for oily buildup, compacted grounds or a damaged declumper. Compare input and output weights using the same dose and procedure, and record whether the hopper level changed. A valid comparison requires identical conditions; changing several variables at once hides the cause.

A buying decision that survives the marketing claims

Choose the burr geometry and model that match your brew range, roast preferences and workflow, then verify adjustment repeatability, cleaning access, parts availability and retention under the exact operating method you plan to use. Treat manufacturer figures as useful specifications and instructions, not as independent rankings. The most defensible comparison is one that names the model, dose, hopper or single-dose method, purge steps and measurement point instead of relying on “flat,” “conical” or “zero retention” as shortcuts.
