Yes—some green tomatoes exposed to frost can ripen indoors, provided they are still firm and had reached mature-green or breaker stage. Tomatoes that froze through often turn mushy as they thaw, so sort fruit by its condition rather than treating every tomato from a frost-hit plant alike.
Which tomatoes can still ripen?
Two things matter most: how mature the tomato was and whether the fruit itself froze.

Check maturity
- Breaker-stage fruit: A pink blush means ripening has begun; these tomatoes can continue ripening off the vine.
- Mature-green fruit: Shiny green skin and a white-to-light-green star at the blossom end indicate a tomato that may ripen indoors. Its flavor may not develop as fully as fruit ripened on the vine.
- Immature fruit: Matte green tomatoes are less likely to ripen successfully. Use them promptly in a suitable green-tomato recipe rather than storing them in hopes they will turn red.
Check for freeze damage
A light frost does not necessarily mean the fruit froze. Firm, intact tomatoes may be worth saving. Soft, split, visibly damaged fruit—or fruit that froze through and then thawed—is unlikely to retain a good fresh texture. An Adams County Master Gardener response about tomatoes frozen in a hard freeze explains, “Freezing breaks the cell walls of the fruit.” That applies to fruit that froze through, not automatically to every tomato exposed to a light frost. What to do with tomatoes after frost
Sort the harvest
- Keep firm, intact breaker-stage and mature-green tomatoes for indoor ripening.
- Set aside immature fruit for a green-tomato dish.
- Do not count on soft or thawed, fully frozen tomatoes to ripen into good fresh fruit. The extension response above advises discarding frozen tomatoes because of their poor texture and flavor. If a damaged tomato seems otherwise usable, choose an appropriate cooked use and use it promptly.

Store sound fruit
Put wrapped tomatoes in a single layer in a box, or place them in a covered container with newspaper or cardboard. Keep the container dark and out of direct sunlight; avoid packing fruit tightly. Wash gently if needed and dry thoroughly before storage. Excess moisture can encourage mold, while overly dry conditions can cause shriveling.
Check the fruit every few days. Remove tomatoes that have ripened and any that are decaying so they do not spoil the rest.

Choose a storage temperature for speed or keeping time
Extension recommendations give slightly different practical ranges, rather than one exact optimum. Follow one source’s guidance instead of treating the figures as a guarantee; temperature, maturity, variety and freeze severity affect how fruit responds.

Can you make green tomatoes ripen faster?
For faster ripening, place a ripe tomato or banana with the green fruit. Ripe tomatoes release ethylene, which stimulates ripening. To slow the group, remove tomatoes as they color and ripen, and store them separately. Keep the fruit out of direct sunlight; sunlight is not a substitute for a suitable storage temperature.

What to expect from indoor ripening
Indoor ripening is most promising for firm fruit that was already mature green or beginning to blush. Even when it turns red, a tomato ripened indoors may be less flavorful than one ripened on the vine. Published extension timings are estimates, not guarantees, and the cited guidance does not establish a success-rate percentage for tomatoes exposed to frost.
