Can You Remove PFAS From Food by Washing, Peeling, or Cooking It?

Generally, no. Washing and peeling are not established ways to remove PFAS (per- and polyfluoroalkyl substances) that food has absorbed, and cooking is not a dependable decontamination method. Cooking has changed measured PFAS concentrations in some specific animal foods and preparation studies, but the direction and size of the change depend on the food, the chemical and the method. A lower concentration in one cooked sample does not mean the meal is PFAS-free.

Why PFAS can be present in food

PFAS are a large family of chemicals used in many industrial and consumer applications. Food can contain them when crops or animals are raised in contaminated soil, water or air. The U.S. Food and Drug Administration (FDA) also identifies possible contributions from food processing and from equipment or cookware that contacts food.

Environmental uptake is selective

Contamination at a production site does not automatically mean every food grown or raised there contains detectable PFAS. Uptake depends on the particular PFAS and on the food species, tissue and growing conditions. Two foods from the same area can therefore have different results, and a non-detect in one sample does not clear all foods from that location.

Processing and contact materials are additional pathways

PFAS can enter at more than one point in the food chain. Environmental contamination is the main concern in official food-safety discussions, but the FDA notes that processing and food-contact materials may also matter. That is why a kitchen treatment cannot be assumed to reverse contamination that occurred before the food reached your home.

What FDA food testing actually shows

FDA has tested more than 1,900 food samples from the U.S. market through its Total Diet Study and targeted assignments. Its results are a picture of the foods and chemicals included in those sampling programs, not a prevalence rate for every food sold in every place.

FDA sampling result What the number means Important limit
1,290 of 1,352 fresh and processed foods (over 95%) had no PFAS detected above the method detection limits Most samples in this broad set were below the laboratories’ reporting thresholds for the PFAS tested “Not detected above the method detection limit” is not proof that a sample contains absolutely zero PFAS
46 of 67 seafood samples (69%) had one or more PFAS detected PFAS appeared frequently in this Total Diet Study seafood subset This denominator applies only to the 67 seafood samples in that study
60 of 81 seafood samples (74%) in a 2022 targeted survey had one or more PFAS detected The targeted survey produced a similar, but separate, seafood result Do not combine its denominator with the Total Diet Study or treat either as the rate for all seafood

Seafood appears more often in the FDA’s positive findings than the overall mix of fresh and processed foods. That pattern can guide attention, but it does not tell you the PFAS level in a particular fillet, brand or fishing area. The FDA evaluates PFAS individually in food samples and says it does not yet account for possible additive effects when several PFAS occur together. It is exploring ways to assess co-occurrence.

Does washing remove PFAS?

There is no validated household washing procedure that removes PFAS already taken up by a food. The FDA’s information on plant uptake explains why the chemical can be distributed within plant tissues; it does not provide a rinsing or produce-wash protocol that makes the food safe from PFAS.

What rinsing can and cannot do

  • Rinse produce under running water for ordinary food hygiene and to remove soil, grit and some surface residues.
  • Do not treat rinsing, soaking or commercial produce washes as PFAS-removal steps.
  • Do not infer that a cleaner-tasting or visibly cleaner surface reflects a lower PFAS concentration.

A wash might remove a contaminant that is loosely sitting on the surface, but the available evidence does not establish that scenario as a practical PFAS-control method for food. PFAS behavior differs across chemicals and foods, so a result for one surface residue would not establish protection for absorbed contamination.

Does peeling remove PFAS?

Peeling has not been shown to reliably make produce PFAS-free. Plants can take up different PFAS in different ways, and concentrations can vary between species and plant parts. Without a validated relationship between peel concentration and the edible interior for a particular food and chemical, removing the skin is not a dependable intervention.

Why a peel is not a universal barrier

Some contaminants are concentrated on an outer surface, while others move into internal tissues. PFAS uptake is chemical- and plant-dependent, so the presence or absence of PFAS in a peel cannot be generalized from one crop to another. Peeling can also remove nutrients and edible material without addressing contamination inside the food.

Peel produce when a recipe, texture preference or ordinary food-safety advice calls for it. Do not peel specifically on the assumption that the remaining portion has been decontaminated.

Does cooking destroy or remove PFAS?

Cooking evidence is food- and method-specific. Official scientific reviews summarized by the European Food Safety Authority (EFSA) describe studies in which heating changed measured concentrations in different directions. A systematic review of thermal processing in animal-derived foods likewise concludes that the evidence is too limited to support a general household instruction.

Concentration in the food is not the same as removal from the meal

When a cooked sample shows a lower concentration, several explanations are possible: some chemical may have moved into drippings or cooking liquid, the portion may have lost mass, or the test may reflect a different matrix after heating. A higher concentration can result when water or fat is lost and PFAS remains in the tissue. Unless a study measures the food, cooking liquid, drippings and other outputs together, it cannot show that PFAS left the meal altogether.

Results differ by food and method

Question to ask Why it matters
What food was studied? Seafood, blubber, meat, dairy and plant foods have different composition and PFAS-uptake behavior.
Which cooking method was used? Boiling, roasting, frying, baking and other methods change moisture, fat and contact with liquids in different ways.
Which PFAS were measured? Individual PFAS have different chemical properties; a result for one compound does not establish a result for the whole family.
Where was the change measured? A concentration in the remaining food is not the same as a mass balance showing removal from the entire meal.

An example of an increase after cooking

EFSA describes a study in which roasting beluga blubber increased concentrations of some hydrophilic PFAS in the remaining tissue. Loss of other components during roasting can make the residual tissue test higher even if the total amount in the original portion has not increased. This example is a warning against assuming that heat always lowers PFAS measurements.

Evidence gaps for terrestrial animal foods

The systematic review of cooking animal-derived foods reports that evidence for terrestrial animal products is lacking. That limitation prevents a result from a narrow seafood or laboratory study from becoming advice for beef, poultry, pork, eggs or dairy. It also leaves insufficient evidence for a universal temperature, cooking time or recipe that reliably removes PFAS.

How to interpret a “non-detect” result

Analytical laboratories use a method detection limit: the lowest concentration they can reliably distinguish from background under that method’s conditions. When FDA reports no PFAS above the method detection limits, it means the tested chemicals were below those thresholds in those samples. It does not establish absolute absence, and it does not cover every PFAS that could exist.

  • A non-detect applies to the sample tested, not automatically to all foods from the same farm, fishery, processor or region.
  • Different laboratories and methods can have different detection limits.
  • A test for selected PFAS cannot answer whether every member of the broader PFAS family is absent.
  • Testing one serving cannot predict the concentration in every batch or future harvest.

What to do if food comes from a known contaminated area

If a local, state or tribal authority has issued an advisory for food produced or caught in a specific area, follow that advisory rather than trying to treat the food in your kitchen. FDA says it provides technical consultation to states dealing with foods grown or produced in known contaminated locations. The applicable agency may identify foods to avoid, serving limits, testing results or safer alternatives.

Use official, location-specific information

  1. Identify the exact production, growing or fishing location, not just the store or distributor.
  2. Check the relevant state, local or tribal health, agriculture, environmental or fish-and-game authority for current advisories.
  3. Follow restrictions on species, harvest area, serving frequency and vulnerable groups exactly as written.
  4. Ask the agency whether the advisory covers home-grown produce, private wells, home-raised animals or recreationally caught fish; coverage can differ.
  5. Do not substitute washing, peeling or a cooking temperature for an advisory’s instructions.

Practical choices for everyday shoppers

For people without a location-specific advisory, FDA recommends eating a varied, well-balanced diet. Its current information says most foods not grown or produced in particular geographic areas with known PFAS contamination have not had detectable levels to date.

Vary sources instead of relying on a kitchen treatment

Variety reduces dependence on one food, producer or harvest area and supports good nutrition. It is a risk-management choice, not a guarantee that any individual food is PFAS-free. Pay particular attention to official advisories for locally caught seafood, because FDA’s sampling found PFAS more often in seafood than in the broad fresh-and-processed-food set.

Keep normal food hygiene separate from PFAS control

Wash produce, hands, utensils and work surfaces according to routine food-safety guidance. Cook foods to temperatures that control pathogens and improve digestibility. Those practices remain important, but they should not be advertised or understood as PFAS-removal technologies.

Products and shortcuts that are not established solutions

The evidence summarized by FDA, EFSA and the systematic review does not support recommending a produce wash, peeler, cookware change, countertop appliance or water filter as a product that reliably removes PFAS from food. Water treatment addresses PFAS in drinking water; it does not establish a method for extracting PFAS that is already inside food.

Be cautious of claims that promise “PFAS-free” meals after a particular recipe, temperature or rinse. A credible claim would need to identify the food, PFAS measured, starting concentration, complete cooking or washing conditions, detection limits and what happened to the liquid, fat or waste. A single before-and-after concentration is not enough to prove removal.

A quick decision checklist

  • Is there an official advisory? Follow it and avoid relying on kitchen treatment.
  • Is the food from a location without a known advisory? Use a varied, balanced diet and ordinary hygiene.
  • Are you considering washing? Wash for cleanliness, not PFAS decontamination.
  • Are you considering peeling? Peel for culinary or routine food-safety reasons, not as a proven PFAS barrier.
  • Are you considering cooking? Cook for pathogen control and quality; do not assume heat removes PFAS.
  • Did a test report “not detected”? Check which PFAS, food, sample and detection limit were included.

The practical answer

Washing and peeling have no established, reliable PFAS-removal effect, while cooking can produce different concentration changes depending on the food, PFAS and method. Because the available evidence does not support a universal decontamination recipe, the sound response is to follow official local advisories, interpret testing within its detection limits and maintain a varied, well-balanced diet.
