Can Elemental Mapping of Cocoa Beans Help Reduce Chocolate Contaminants?

Potentially, but only as a research and quality-control aid. A 2018 study used laser ablation inductively coupled plasma triple-quadrupole mass spectrometry (LA-ICP-TQMS) to map elements inside fermented cocoa beans. The maps placed cadmium and lead mainly in the seed shell, alongside several essential elements. That location information could help scientists test how processing, genetics and growing region influence contamination. It does not show that the technique has already lowered cadmium in commercial chocolate, identify a safer cocoa origin or let shoppers screen a chocolate bar.

What the cocoa-bean mapping study actually found

The work was reported by Chemistry World on 5 January 2018, citing G. M. Thyssen and colleagues in the Journal of Analytical Atomic Spectrometry (DOI 10.1039/c7ja00354d). Its central contribution was a spatial picture: instead of measuring only the average concentration in a ground bean, the researchers measured where elements occurred within the bean’s tissues.

That distinction matters for cocoa. A single bulk result can tell an analyst that cadmium is present, but not whether it is concentrated in the outer shell, distributed through the nib, or associated with a particular tissue boundary. A map can suggest which part of the bean deserves closer study during fermentation, drying, shell removal, roasting or grinding.

The reported images showed several nutritionally essential elements and the toxic metals cadmium and lead concentrated in the seed shell. “Concentrated” describes the pattern in the mapped specimens; it is not a rule that every cocoa bean, origin or chocolate product has the same distribution.

How LA-ICP-TQMS produced an elemental map

LA-ICP-TQMS combines a microscopic sampling laser with an inductively coupled plasma and a triple-quadrupole mass spectrometer. The laser removes tiny amounts of material from selected points. The plasma converts that material into ions, and the mass spectrometer separates ions by mass-to-charge ratio so the instrument can record elemental signals as the laser moves across a surface.

The team prepared the beans in a sequence designed to make the surface measurable and to reveal both the whole-bean pattern and the interior seed:

  1. Fermentation: the beans were fermented for six days, representing a defined post-harvest condition before analysis.
  2. Drying: after fermentation, the beans were dried.
  3. Surface polishing: the researchers polished the bean surface flat. The report says this reduced interference during analysis and gave the laser a more even target.
  4. Mounting: the prepared beans were mounted on glass slides.
  5. First ablation sequence: one laser-ablation scan imaged the whole bean.
  6. Second ablation sequence: after a tissue layer was removed, a further scan imaged the inner seed.

Running two ablation sequences allowed the researchers to connect the outer shell signal with the signal revealed after that layer was removed. The result is a two-dimensional distribution map, not a consumer test and not a complete three-dimensional reconstruction of a commercial bean lot.

Why location inside the bean is important

Cocoa beans are processed as tissues, not as chemically uniform pellets. The shell is normally separated from the nib before or during industrial processing, while the nib is roasted and ground into cocoa mass. If a contaminant is preferentially located in the shell, that distribution could become a practical variable for researchers studying shell removal and other processing steps.

However, the shell result does not prove that shelling makes chocolate safe. Contaminants can vary between beans, can be present in more than one tissue, and can be affected by processing losses, cross-contamination and blending. The study did not report a validated before-and-after commercial process measurement showing how much cadmium or lead was removed by shelling.

The maps also included essential elements. Their presence is scientifically useful because it gives researchers a way to examine nutrient distribution alongside toxic-element distribution. A process that changes one element may affect another, so a future study could evaluate safety and nutritional consequences together rather than treating cadmium as an isolated signal.

Could mapping reduce cadmium in chocolate?

Mapping could contribute to reduction indirectly by helping researchers identify where contamination enters the production chain and which interventions are worth testing. A plausible development pathway would look like this:

  1. Locate the signal: map cadmium and lead in beans from multiple farms, harvests and processing conditions.
  2. Separate causes: compare patterns associated with soil and growing location against patterns associated with genotype, fermentation, drying and storage.
  3. Test processing: measure matched samples before and after shell removal, roasting, winnowing and other steps, using validated quantitative methods as well as images.
  4. Check transfer: determine whether a lower signal in a bean tissue corresponds to a lower concentration in cocoa liquor, powder or finished chocolate.
  5. Validate at scale: repeat the work across enough lots to establish variability and confirm that a proposed control works outside the laboratory.

The 2018 report reached the first stage and proposed the technique for investigating the others. It did not document a reduction in contaminant levels in commercial chocolate, establish a processing recipe, or provide a purchasing guide.

What the study established—and what remains unknown

Question What is reported What is not established
Which analytical method was used? Laser ablation inductively coupled plasma triple-quadrupole mass spectrometry (LA-ICP-TQMS). A performance comparison against another mapping or bulk-analysis method.
How were beans prepared? Six-day fermentation, drying, polishing, mounting on glass slides and two ablation sequences. Whether that preparation represents all commercial fermentation and drying practices.
Where were elements observed? Several essential elements, cadmium and lead were reported mainly in the seed shell. A universal distribution rule for all cocoa varieties, farms or products.
Did the method lower contamination? No reduction in chocolate contaminant levels was documented. How much cadmium or lead any industrial step removes.
How robust were the measurements? The accessible report describes the imaging approach and qualitative distribution. Sample count, detection limits, quantitative validation and a complete list of mapped elements.
Can consumers use the method? No consumer screening procedure is provided. A home test, product ranking or origin-based safety conclusion.

These gaps are not minor technical footnotes. Sample count and detection limits determine how confidently a pattern can be generalized. Quantitative validation determines whether a bright or dark map region corresponds to a meaningful concentration difference. Without those details, the images are best treated as a way to generate and test hypotheses.

How processing, genetics and geography could be investigated

Processing comparisons

Researchers can map beans at defined points before and after fermentation, drying, shelling and roasting. They would need paired samples from the same lot, consistent subsampling and independent concentration measurements. That design could show whether an apparent shell concentration is reduced by a specific operation or merely redistributed into dust, equipment residues or nib material.

Genetic comparisons

Different cocoa genotypes may take up, transport or store elements differently. Mapping several genetically characterized lines under comparable soil and climate conditions could help separate inherited uptake traits from environmental effects. The reported study proposed this use; it did not establish which genotype has the lowest cadmium or lead.

Geographic and soil comparisons

Growing location can influence available metals through soil chemistry, rainfall, land use and other environmental factors. A useful geographic study would combine maps of individual beans with field metadata and bulk measurements from many lots. The 2018 findings do not show that one country, region or farm produces safer chocolate than another.

Why imaging is not a substitute for routine contaminant testing

Industrial and regulatory decisions generally require validated concentrations in a defined material, such as cocoa powder or finished chocolate. LA-ICP-TQMS imaging samples points or lines across a surface and produces a spatial signal. Converting that signal into a reliable mass concentration requires calibration, quality controls, representative sampling and validation against an established reference method.

Imaging and bulk testing answer different questions:

  • Imaging asks: where in the bean is an element located, and how does its pattern change between tissues?
  • Bulk testing asks: how much of that element is present in a representative sample of an ingredient or product?
  • Process validation asks: does a defined intervention consistently reduce the concentration in the material that reaches consumers?

A map can guide the design of the second and third tests, but it cannot replace them. Nor does a shell signal by itself reveal the final concentration after beans are blended, roasted, milled and combined with other ingredients.

For processors, the finding is a reason to measure shell and nib streams separately during controlled trials, not a license to claim that shell removal solves cadmium. A credible intervention study would report the starting and ending concentrations, the number of lots, the processing conditions and whether essential elements changed as well.

For regulators and standards bodies, spatial evidence may help prioritize questions about sampling and lot variability. Any enforceable limit still needs concentration data from representative finished products and a method whose accuracy and precision have been demonstrated.

What consumers can—and cannot—conclude

  • You cannot identify a low-cadmium chocolate from the 2018 maps alone.
  • You cannot infer that a particular country or cocoa origin is safer.
  • You cannot reproduce LA-ICP-TQMS mapping with ordinary cocoa beans and household equipment.
  • You should not treat removal of visible shell fragments as proof that a product is free of cadmium or lead.
  • The study does provide a scientifically plausible route for understanding contamination before a validated control is adopted.

Product safety depends on the actual ingredient lot, manufacturing controls and applicable regulations. Those factors are separate from the location pattern observed in the mapped specimens.

The practical verdict

Elemental maps of cocoa beans could help cut chocolate contaminants by revealing where cadmium, lead and essential elements reside and by enabling controlled studies of processing, genetics and growing location. The 2018 work is an enabling measurement study, not evidence of a finished contamination-reduction technology. Until follow-up research demonstrates a repeatable decrease in validated concentrations, the shell finding should guide experiments rather than consumer purchasing decisions.
