Beef tenderloin is the best default for Steak Diane if you want tender, compact medallions that cook quickly in a skillet. It is not the only suitable cut: published recipes also use sirloin, New York strip, ribeye and, in one variation, top round. Choose according to the texture and steak format you prefer, then follow a recipe written for that cut’s thickness.
Which cut is best for Steak Diane?
Choose tenderloin for the most reliable tender-medallion style. Paula Deen’s recipe cuts one pound of beef tenderloin into eight slices, while Le Creuset calls for four six-ounce tenderloin steaks. Those recipes support tenderloin as a strong default, but they do not establish a controlled ranking against other cuts.

Steak Diane is made as a quick skillet steak with pan sauce in the recipes reviewed. Since cuts and portions vary, use the selected recipe’s thickness, timing and doneness directions rather than assuming every steak can be cooked for the same length of time.

How the beef cuts compare
| Cut | Why consider it | Recipe evidence |
|---|---|---|
| Tenderloin | The best default when tenderness and a compact medallion presentation matter most. | Paula Deen specifies one pound cut into eight slices; Le Creuset specifies four six-ounce steaks. Paula Deen; Le Creuset. |
| Sirloin | An accessible alternative if you want a different balance of texture and cost; actual price and tenderness depend on the steak you buy. | Publix lists sirloin among its boneless grilling-steak options. Publix. |
| New York strip | A recipe-supported alternative; consider its thickness and shape when adapting a quick-pan method. | Publix names strip as an option, and Disney Parks’ Lake Buena Vista Club recipe calls for four trimmed six-ounce strip steaks. Publix; Disney Parks. |
| Ribeye | Another recipe-supported choice if you prefer a cut with more marbling; the sources do not compare flavor or cooking results across cuts. | Publix lists ribeye as an option for its recipe’s boneless grilling steaks. Publix. |
| Top round | A variant rather than the prevailing choice in the recipes reviewed. Use directions matched to the particular steak and its thickness. | The Washington Post recipe offers four-ounce top round steaks or tenderloin medallions. The Washington Post. |
How to choose for your dinner
- For tenderness and classic medallions: buy tenderloin steaks or medallions.
- For a practical alternative: consider sirloin; the recipes also support strip and ribeye.
- For a different, leaner-style option: top round appears in one published version, but it is not as broadly represented in the recipes reviewed.
- For any cut: check thickness and shape against the recipe. A thin medallion and a thicker grilling steak will not necessarily cook in the same time.
These are practical selection considerations, not proven rankings for price, availability or taste. The recipes establish that these cuts have been used for Steak Diane; they do not provide a blind tasting, current price comparison, grade comparison or local availability check.

Follow the recipe’s doneness and safety guidance
Recipes differ in sauce ingredients and technique; for example, the Lake Buena Vista Club version uses brandy and flambé. Match the cut to the recipe you plan to follow instead of combining one recipe’s timing with another’s steak format.
Publix distinguishes traditional steakhouse medium-rare and medium temperatures from USDA recommendations. Its page says USDA recommends an internal temperature of 145°F followed by a three-minute rest. Do not describe traditional medium-rare or medium temperatures as USDA guidance.
