There is no evidence-based universal winner among stainless steel, aluminum, and porcelain-coated steel broiler pans. Choose by checking the exact pan’s fit, rack-and-tray construction, oven rating, care instructions, and compatibility with your appliance—not by material name alone.
What matters more than the material label
A broiler pan is often a two-piece set: a tray catches drippings while a rack holds food above them. But designs differ. Racks may be wire or slotted, and their material may differ from the tray’s. Wolf, for example, says its current broiler pans use a wire upper rack, while older models used a slotted porcelain rack; its pans are porcelain-coated steel and the wire racks are nickel-plated steel (Wolf cleaning and care; Wolf product information).

Before comparing materials, check the pan dimensions against your oven cavity and consult the appliance manual. If you are replacing a supplied pan, verify compatibility with the specific oven model. Do not assume a material name guarantees a particular temperature limit or suitability for every cooking surface.

| Material and example | Construction and stated specifications | Care and cautions |
|---|---|---|
| Stainless steel | Sur La Table lists a two-piece 18/0 stainless steel pan with a broiling grate and bottom tray, in 9 × 12-inch and 12 × 16-inch sizes. | The retailer lists this product as dishwasher safe and intended to withstand broiling temperatures. Those claims apply to this model, not every stainless pan. |
| Aluminum | Nordic Ware’s Naturals Classic is an uncoated aluminum two-piece pan with a ribbed, slotted rack and drip pan. The listing gives interior dimensions of 12.8 × 8.4 inches and an oven rating of 500°F / 260°C. | Nordic Ware recommends hand washing. Dishwasher detergent may discolor this pan; the manufacturer describes that discoloration as cosmetic. Prolonged contact with acidic foods such as vinegar or tomato products may darken, pit, or corrode the aluminum. |
| Porcelain-coated steel | Wolf describes its pan body as porcelain-coated steel. Current models use a nickel-plated wire rack; older models used a slotted porcelain rack. | Wolf directs users to hand wash its porcelain-coated parts after cooling with hot water and mild detergent. Its instructions prohibit dishwasher use, foil on the pan, and use on surface burners or induction cooking surfaces. |

Which material should you choose?
Use the product’s construction and instructions to decide. The available product descriptions do not provide a controlled comparison of heat performance, warping, corrosion, chipping, or service life across the three materials, so they do not support naming one as best overall.
- Consider stainless steel if a particular pan fits your oven and its maker confirms broiler suitability and the cleaning method you want. The cited Sur La Table model is listed as dishwasher safe, but that does not establish the care requirements of other stainless pans.
- Consider aluminum if the listed dimensions and 500°F / 260°C oven rating meet your needs. The cited Nordic Ware model’s care guidance favors hand washing and cautions against prolonged contact with acidic foods.
- Consider porcelain-coated steel when you need a replacement that is compatible with an appliance that specifies it. Check the rack construction and follow the appliance maker’s instructions; Wolf’s restrictions are specific to Wolf products.
Capron Manufacturing describes porcelain enamel as providing a smooth surface and avoiding the need for seasoning. Those are the manufacturer’s stated benefits, not independent proof of superior nonstick performance or longer life (Capron Manufacturing porcelain enamel information).

Check these details before buying
- Measure the oven and pan. Compare the pan’s stated dimensions with the available space and the appliance manual. Interior dimensions and overall dimensions are not necessarily the same measurement.
- Confirm appliance compatibility. Follow any model-specific replacement guidance. A broiler pan may be intended for the oven broiler only; Wolf says its broiler pan is not for surface burners or induction cooking surfaces.
- Inspect the whole set. Confirm whether it includes a tray and rack, and whether the rack is wire or slotted. Check the rack’s material separately from the tray’s.
- Verify the temperature limit. Look for an explicit oven or broiler rating in the product instructions. Do not infer an unlimited rating from stainless steel, aluminum, or porcelain coating.
- Read the care instructions. Check dishwasher guidance, abrasive-cleaner restrictions, acidic-food cautions, and foil warnings for the exact product. These instructions are not interchangeable between materials or brands.
Use and care are product-specific
Stainless steel
The cited Sur La Table listing calls its two-piece model dishwasher safe. Check the instructions for any other pan before putting it in a dishwasher or using abrasive cleaners; the listing does not establish care rules for stainless steel products generally.
Aluminum
For Nordic Ware’s Naturals Classic, the maker recommends hand washing and warns that dishwasher detergent may cause cosmetic discoloration. It also cautions that prolonged contact with acidic ingredients can darken, pit, or corrode the aluminum. Follow the full product instructions, including its ventilation guidance and warning not to leave food unattended while broiling.
Rank #3
- Sturdy stainless-steel broiling pans withstand the high temperatures of broiling and clean up in the dishwasher
- Bottom trays can be used separately for roasting or baking
- Two pieces
Porcelain-coated parts
Wolf says to let its porcelain-coated parts cool, then hand wash them with hot water and mild detergent. Do not put its pan or rack in the dishwasher, and do not line its pan with aluminum foil: Wolf warns that foil can melt and adhere. These directions apply to Wolf’s products, not automatically to all porcelain-enamel cookware.
