The closest alternative to a steam oven is a lidded pot with a perforated steamer basket: it cooks food with moist heat, without the cost or space of another appliance. For quick portions, a covered microwave-safe dish can do much the same. Choose an air fryer or oven instead when you want browned, crisp food—not the tender, moist result of steaming.
No appliance makes every meal healthier by itself. The ingredients, added salt and fat, cooking time, and method matter more than owning a particular machine.

Which steam-oven alternative should you choose?
| Method | Best for | What it does well | Main trade-off |
|---|---|---|---|
| Stovetop steamer basket | Vegetables, fish and shellfish | Closest simple substitute for steam cooking; moist heat without added oil | Needs a pot, lid and water; does not brown food |
| Microwave steamer or covered microwave-safe dish | Small portions and quick cooking or reheating | Fast moist cooking, often with little or no added water | Heating can be uneven; no oven-style browning |
| Pressure cooker | Beans, rice, soups, stocks and stews | Convenient enclosed, moist cooking | Does not produce crisp surfaces |
| Air fryer | Small batches of food you want browned or crisp | Dry convection cooking can create a crisp surface | Not equivalent to steaming; capacity depends on the model |
| Convection or conventional oven | Baking and roasting larger portions | Useful for browning and cooking larger quantities | Dry heat can dry food; some meals need more preheating or cooking time |
| Sautéing, braising or poaching | Stovetop meals cooked with oil or liquid | Flexible methods that can use modest amounts of added fat or liquid | Usually needs more hands-on attention |
Health Canada describes steaming with a basket on the stovetop or in a microwave, and lists rice, stews, soups, stocks and beans among common pressure-cooker foods. Its healthy cooking-method guide offers a useful starting point for matching a method to a dish.

Stovetop steaming
Put a small amount of water in a pot, set a perforated basket above the water, add the food and cover the pot. The food cooks in the steam rather than sitting in the water. This is a straightforward option for vegetables, fish and shellfish when you want tenderness and moisture rather than browning.

A basic stovetop steamer basket is the most direct substitute if you already have a suitable pot and lid. Keep the water below the basket and check that the pot does not boil dry.
Microwave steaming
For a small portion, use a microwave-safe steamer or a microwave-safe dish with a cover. Add a little water when the recipe calls for it, and vent the cover so steam can escape. This is convenient, but microwave heating may be uneven; arrange food evenly and stir, rotate or turn it where appropriate.

How do microwave cooking and steaming affect nutrition?
The U.S. Food and Drug Administration says, “Microwave cooking does not reduce the nutritional value of foods any more than conventional cooking.” It adds that microwave cooking may preserve more vitamins and minerals because it can be quicker and use no added water. The result depends on the food and cooking conditions; the FDA does not establish a universal nutrient-retention ranking across appliances. See the FDA and USDA microwave guidance for the relevant cooking and safety details.
Steaming, microwaving and other moist methods can avoid adding cooking oil, but that alone does not determine the nutrition of the meal. Ingredients, added salt and fat, portion size and preparation all matter. The American Heart Association includes baking, blanching, braising, grilling, poaching, roasting, sautéing, steaming and stir-frying among cooking techniques to consider; its guide to cooking methods supports choosing a method that suits the food and limits unnecessary additions.

When should you use a pressure cooker?
Choose a pressure cooker for moist dishes that benefit from cooking in a closed vessel, such as beans, rice, soups, stocks and stews. It is a practical choice for those foods, but not a way to reproduce a steam oven’s browning or an air fryer’s crisp surface. Health Canada lists these foods among common pressure-cooker uses in its cooking-method guide.

Air fryer: crispness and browning
An air fryer cooks with circulating hot air, so it is a dry-heat option rather than a steam substitute. It may suit food you want browned or crisp, especially in a smaller batch. Whether the meal is a healthier choice depends on the recipe and ingredients; an air fryer does not make every food healthy or guarantee a particular calorie reduction.

- Fits Most Oven Pans - Use the pans you already have. This spacious oven fits most standard 9”x13” oven pans with handles. That means you can go from straight from oven to table. Plus, the included baking/broiling pan fits perfectly, making it easy to insert and remove food. Toasting rack also included.
- Convection Heating - The powerful convection fan circulates warm air throughout the oven for fast, even baking. Other functions include: baking, broiling, toasting, and keeping food warm.Dedicated Toast Timer - Get perfect toast every time using the dedicated toast timer. It allows for predictable shade selection with every use.
- Temperatures in the oven will be lower than your set point. This is due to advanced heating elements used in this oven. Temperature dial settings have been calibrated to provide expected results for most recipes taking into account the advanced heating elements.
- 60-minute Timer - The 60-minute precision timer features stay-on functionality for longer baking tasks. Dedicated precision toast timer. 3 rack positions for improved cooking flexibility. Removable crumb tray for easy cleaning
The British Heart Foundation says air fryers cook 20 to 25 per cent faster than a fan oven. That is a cooking-time comparison, not a health or nutrient-retention result, and the source page’s publication year is not stated. See the British Heart Foundation’s air-fryer explainer.
Convection or conventional oven: larger portions
Use an oven for baking and roasting, especially when cooking larger quantities. Dry heat can create browning, but it may also dry food if the time or temperature is unsuitable. A convection oven circulates hot air; neither it nor a conventional oven provides the moist cooking result of steaming.
How to pick a method for the meal
- Want moist, tender vegetables or fish? Steam them in a stovetop basket or microwave-safe covered dish.
- Need a quick small portion? Microwave it, taking care to promote even heating.
- Cooking beans, rice, soup or stew? Consider a pressure cooker.
- Want a crisp or browned surface? Use an air fryer or oven, with the understanding that these use dry heat.
- Want stovetop flexibility? Sauté, braise or poach, adjusting added oil and salt to the recipe.
Also consider batch size, counter and storage space, cleanup and how much attention the dish needs. If moisture retention is the priority, choose steaming or another moist method. If crispness is the priority, choose dry heat. There is no established cross-appliance figure that ranks all these methods by nutrient retention.
Microwave safety: avoid cold spots
Microwaves may heat unevenly, leaving cold spots. For meat and poultry, follow the food’s cooking instructions, arrange pieces evenly, stir or rotate or turn them when appropriate, allow the specified standing time and check the internal temperature with an instant-read thermometer. Use cookware labeled for microwave use, and vent covered dishes so steam can escape. USDA’s recommendations are included in the FDA and USDA microwave guidance.
