Choose bell peppers for raw salads, sandwiches, snacks, or a familiar cooked vegetable. Choose poblanos when you want chile flavor and can accommodate mild heat, especially in roasted or stuffed dishes.
What’s the difference between bell peppers and poblano peppers?
| Feature | Bell pepper | Poblano pepper |
|---|---|---|
| Type and heat | Sweet pepper; rated 0 Scoville Heat Units (SHU). | Mild chile; NIST gives 1,000–1,500 SHU, while UF/IFAS gives 1,000–2,000 SHU. |
| Flavor | Sweet and mild. Green bell peppers often have a stronger taste that mellows as they mature, though varieties differ. | Earthy, smoky, and fruity, according to a 2026 UC ANR handout. |
| Useful for | Raw salads, sandwiches, snacks, and cooked dishes such as meat, rice, and stir-fries. | Roasting and stuffing; Illinois Extension describes stuffing poblanos with ground meat and cheese. |
| Dried form | No equivalent dried form identified by the cited sources. | A ripe, dried poblano is called an ancho. |
The main distinction is not just heat: a poblano brings a more distinctly chile-like flavor, while a bell pepper is a familiar sweet pepper. They are not flavor-equivalent.

Are poblano peppers hotter than bell peppers?
Yes. Bell peppers are rated at 0 SHU, while published typical ratings put poblanos in the low thousands: NIST’s 2025 explainer gives 1,000–1,500 SHU and UF/IFAS gives 1,000–2,000 SHU. These are reference ranges, not a promise about the heat of an individual pepper.

SHU values express pepper heat on the Scoville scale. The original taste-panel method is subjective; NIST notes that high-performance liquid chromatography (HPLC) provides a more reproducible measurement used in the food industry. Pepper heat can also vary with type and growing conditions, so a particular poblano may not match a published rating exactly.

Bell peppers
Bell peppers are sweet and mild. Green fruit often has a stronger taste than mature colored fruit, but this is not universal: varieties do not all develop the same way.
Poblano peppers
Poblanos have earthy, smoky, and fruity notes. Their flavor is more pronounced and chile-like than a bell pepper’s, even though their heat is mild compared with many chiles.

What are the best uses for each pepper?
Use bell peppers for freshness or familiar sweetness
- Slice them into salads, sandwiches, or snacks when you want crunch without chile heat.
- Add them to cooked dishes such as meat, rice, or stir-fries as a sweet, familiar vegetable.
Use poblanos for roasting or stuffing
- Stuff them with ingredients such as ground meat and cheese; Illinois Extension offers a roasted stuffed-poblano recipe.
- Roast them when the dish suits their chile flavor. Roasting and peeling are steps in that particular recipe, not a requirement for every poblano dish.
Can you substitute poblano for bell pepper?
You can when the recipe can handle mild heat and a more earthy, smoky chile flavor. Use a bell pepper instead when you need a heat-free sweet flavor or familiar raw crunch. Because the flavors differ and the cited sources do not establish a tested one-for-one substitution rule, treat the swap as a change to the dish rather than an exact equivalent.
What is an ancho chile?
An ancho is a poblano that has ripened and then been dried. It is the dried form of the poblano, not a fresh poblano under another name.
