Not by themselves. An AI-created menu is a lead, not proof that a dish is safe. No authoritative source has established an AI-specific accuracy rate, validation standard, or connection between generated menu text and a restaurant’s live recipe and kitchen controls. Before ordering, confirm the current ingredients, substitutions, preparation method, and cross-contact controls with restaurant staff who can answer for that location and day.

What an AI-created menu can—and cannot—establish

A generated menu may summarize dishes, translate descriptions, or produce an ingredient list. Those functions can be convenient, but they do not show that the information came from the restaurant’s current purchasing records, recipe card, or kitchen. A system may have copied an old web page, inferred ingredients from a dish name, or filled gaps with plausible-sounding text. Without a documented connection to verified, current restaurant data, you cannot know which process produced the answer.

The available evidence does not show that all AI menus are wrong. It shows an evidence gap: no authoritative evaluation has measured an AI-generated restaurant menu’s allergen error rate, and no standard requires a generated claim to be checked by a chef or manager. Treat the output as an unverified claim until a responsible member of the restaurant confirms it.

Food-allergy safety also involves more than the ingredients deliberately added to a recipe. Cross-contact occurs when a food that is otherwise safe touches an allergen-containing food. Shared fryers, grills, cutting boards, utensils, gloves, storage containers, sauces, garnishes, and accidental substitutions can all matter. A text-only menu normally cannot describe those controls for your specific order.

The information you need before calling a dish safe

Ingredients in the actual recipe

Ask what is in the specific dish as it is prepared at that location. Ingredient names can hide allergens in sauces, marinades, spice blends, toppings, desserts, and garnishes. Ask about every component rather than relying on the dish title or a short AI-generated list. If the restaurant uses a packaged ingredient, staff may need to check its current label.

Substitutions and changes

Restaurants may change suppliers, recipes, portion components, or side dishes. A substitution requested at the table can introduce a new allergen or remove a component that staff normally use to identify a dish. Confirm the final version you intend to order, including bread, sauces, dressings, and complimentary items.

Preparation and cross-contact

Ask how the kitchen will prepare your order and whether it can keep the allergen away from the food. Relevant details may include a shared fryer, grill or oven surface; common tongs; flour or batter in the cooking area; a buffet utensil; and whether the work surface can be cleaned before preparation. The right questions depend on your allergen and the restaurant’s equipment.

A person accountable for the answer

Reliable confirmation comes from staff who can consult the recipe or kitchen procedures and communicate the request to the cook. FARE advises telling the manager and kitchen staff about the allergy, not only mentioning it casually to a server. If answers are vague, contradictory, or based solely on the menu, you have not received a meaningful safety confirmation.

The nine major food allergens in the United States

FDA identifies nine major food allergens in the United States. A menu that flags one of these items still does not answer every individual allergy question or guarantee that cross-contact did not occur.

Major allergen What a diner still needs to verify
Milk Dairy in sauces, butter, cheese, cream, and shared equipment
Egg Batters, mayonnaise, pasta, desserts, and egg-washed surfaces
Fish Fish sauces, broths, shared grills, and mixed seafood preparations
Crustacean shellfish Shrimp, crab, lobster, shared fryers, and seafood prep areas
Tree nuts Nut oils, pesto, desserts, garnishes, and supplier changes
Wheat Breads, noodles, breading, sauces thickened with flour, and shared fryers
Peanuts Satay-style sauces, desserts, oils, garnishes, and shared utensils
Soybeans Soy sauce, marinades, tofu, emulsifiers, and cooking oils
Sesame Buns, tahini, spice blends, dressings, and finishing seeds

Allergies outside this list still require the same direct conversation. The list is a labeling category, not a complete description of every person’s medical risk.

Why menu labeling and food law do not make an AI menu a guarantee

Federal menu-labeling rules

FDA’s federal menu-labeling rule applies to qualifying chain restaurants and similar retail food establishments that are part of a chain of 20 or more locations, operate under the same name, and offer substantially the same menu items. The rule requires calories for standard menu items and written availability of specified additional nutrition information. It is a nutrition-disclosure rule, not a promise that every item has a complete, verified allergen profile.

The Food Code and local adoption

FDA’s 2026 Food Code is a model code for retail food and food service. Local, state, tribal, territorial, and federal regulators use it as a basis for developing or updating their own rules. Adoption and enforceable requirements can differ by jurisdiction, so the existence of the model code does not mean every restaurant follows identical provisions. Do not use a general reference to the Food Code as proof that a particular dish is allergen-safe.

Packaged-food labels versus made-to-order meals

FDA consumer guidance tells people to check packaged-food labels each time because ingredients can change. That is useful when a restaurant opens a package, but it should not be extended into a claim that a made-to-order dish—or an AI-generated description of one—has equivalent verification. Restaurant staff must still confirm the current recipe and preparation.

What the available reaction evidence does and does not show

A 2020 study by Oriel and colleagues in Journal of Allergy and Clinical Immunology: In Practice analyzed voluntary, self-reported registry information about restaurant reactions. It reported that “13.7% of individuals still had an allergic reaction” in instances where staff were informed and menu information was available. It also attributed 16.9% of reported reactions to hidden food allergens. These percentages describe the study’s submitted reports, not the probability that any individual diner will react and not an AI error rate. The study predates widespread AI-created menus.

The practical lesson is narrower and important: disclosure and menu information can still leave uncertainty, especially when an allergen is hidden in a sauce or another component. Use the findings to justify specific questions about ingredients and preparation, not to calculate your personal risk from a restaurant or technology.

The 2022 FDA Food Code text also states that food allergy affects approximately 4% of the U.S. population, or twelve million Americans. That is the estimate presented in the 2022 Food Code text, not a newly measured 2026 prevalence figure.

How to verify a restaurant meal, step by step

  1. Review the restaurant’s current menu. Look for the location-specific menu and note the exact dish, sides, sauces, and customization options. An AI version can help you identify questions, but do not treat it as the authoritative menu.
  2. Call ahead when the allergy is significant or the menu is complex. FARE recommends discussing accommodation in advance and, where possible, choosing a less busy time. Ask whether a manager or chef can review the dish and the kitchen’s cross-contact controls.
  3. State the allergy before ordering. Use plain language such as “I have a sesame allergy; even a small amount could make me ill.” Tell the server that the request must reach the manager and the cook.
  4. Ask about the complete dish. Confirm every ingredient, sauce, garnish, side, substitution, and packaged component. Ask what oil, broth, seasoning blend, or breading is used when relevant.
  5. Ask how it will be prepared. Discuss shared fryers, grills, pans, utensils, cutting boards, gloves, storage, and cleaning. Ask whether the kitchen can prepare the meal separately and whether that request is practical during the current service.
  6. Use a chef card if it improves communication. FARE describes wallet-sized cards that list allergies and preparation instructions intended to avoid cross-contact. You can make your own or use a template. A card communicates a request; it is not a certification and does not replace the conversation.
  7. Confirm the final order at handoff. Recheck that the plate matches the agreed preparation and that sauces or garnishes were not added. If a different item arrives, stop and ask before eating.
  8. Decline when the answer is not reliable. FARE says diners may choose not to eat when staff cannot understand the allergy or provide answers they consider dependable. That is a risk decision, not an accusation that the restaurant acted improperly.

Settings that deserve extra caution

  • Buffets: Shared serving utensils, drips, and frequent replacement of trays make cross-contact difficult to assess.
  • Bakeries: Flour and other airborne or surface residues can be widespread, and products may share equipment.
  • Premade foods: Staff may not be able to alter a recipe or verify every supplier ingredient.
  • Restaurants using your allergen extensively: A kitchen that handles the allergen in many dishes may have more opportunities for contact and more complicated storage and cleaning.

FARE presents these as situations that may increase exposure risk or make ingredient knowledge harder, not as a universal prohibition. The restaurant’s actual procedures and your clinician’s advice remain decisive.

How to judge an AI answer before you rely on it

Information source What it may provide What you must still establish
AI-generated menu Readable descriptions, possible ingredients, translation, or a starting list of questions Whether the text is current, sourced from the restaurant, complete, and checked by staff; preparation and cross-contact controls
Restaurant server or manager Location-specific answers and a way to communicate the request to the kitchen That the person consulted the current recipe and understands your allergy and the requested controls
Chef card A concise written statement of your allergy and preparation request That staff read it, can comply, and confirm the actual dish
Packaged-food label used by the restaurant Declared ingredients for that package at that time Whether the package is current, how it is handled, and whether other components or equipment create cross-contact
Nutrition menu or calorie statement Calories and specified nutrition information where the federal rule applies Allergen ingredients, substitutions, preparation, and cross-contact

Use four practical tests for any information source: Is it tied to the restaurant’s current recipe and ingredient records? Does it address preparation and cross-contact, not only ingredients? Can a responsible staff member confirm it for the actual order? Is it current for this location and date? An AI answer that fails any of these tests remains unverified.

What to do if a reaction may be starting

People with known food allergies should follow the treatment plan supplied by their clinician. FDA consumer guidance states, “Any allergic reaction has potential to lead to anaphylaxis.” Anaphylaxis can be life-threatening. If you suspect a serious reaction, use prescribed emergency medication according to your plan and seek emergency medical help immediately; do not wait for a menu explanation or for symptoms to resolve on their own.

Bottom line for diners and caregivers

An AI-created menu can help you prepare questions, but it cannot certify a dish. Decide only after the restaurant confirms the current ingredients, substitutions, preparation, and cross-contact controls for your order. If staff cannot provide answers you trust, choose another meal or another restaurant. The decisive evidence is what the kitchen is using and doing now—not what generated text says it should be doing.
