Yes—but an AI barista should report what a café’s records say, not declare a drink safe. A Google Cloud ADK agent can use Gemini to interpret a customer’s question and retrieve venue-maintained ingredient and allergen information from Firestore. Missing or ambiguous records, and questions about preparation or cross-contact, need a clear uncertainty response and staff confirmation.
What the system can—and cannot—answer
An allergen-aware barista is an information interface over café records. It can find the record for a drink, present recorded ingredients and allergens, and say when information is missing. It cannot establish that a record is complete or current, confirm how a particular drink was prepared, or prevent cross-contact in the café.

Keep that boundary visible in the product. Prefer wording such as “The venue’s record lists…” over an unqualified “This is safe.” Treat unknown, conflicting, or stale information as a reason to stop and escalate—not as evidence that a drink is allergen-free.

Google describes the Agent Development Kit (ADK) as an open-source framework for building, debugging, evaluating, and deploying agents. Its overview lists Python, TypeScript, Go, and Java support, and describes both workflow-style orchestration and agent-coordinated routing. For this use case, the essential job is narrower: interpret a drink question, call a controlled data-retrieval tool, and present the result within defined safety limits.

- Receive the question. The customer asks about a named drink, ingredient, or allergen.
- Retrieve venue records. The agent calls an explicitly defined tool that queries the relevant venue-approved Firestore data. Google documents a path for connecting an ADK Python agent to a remote Firestore MCP server.
- Format the response. Gemini returns the retrieved information in a constrained structure that the application can validate.
- Apply decision rules. The application checks for missing, ambiguous, conflicting, or outdated fields and sets an escalation state when needed.
- Show the answer and its limits. Present the recorded information and its source or timestamp when available; route preparation and cross-contact questions to staff.
This is an implementation pattern, not a turnkey architecture or a guarantee made by Google. The Firestore integration documentation establishes a technical connection path; it does not prescribe an allergen schema or certify the records stored in a café’s database.
Design records around venue-owned facts
There is no canonical allergen schema in the cited Firestore integration material. The venue should define and own its records, specify who may approve changes, and decide how updates are reviewed. A practical record design could separate the menu item, its ingredients and allergen declarations, and operational notes rather than relying on free-form prose alone.

- Identity: a stable drink or menu-item identifier, its display name, and any relevant variant.
- Recorded composition: ingredient information and allergen declarations maintained by the venue.
- Record context: who or what system maintains the record, when it was last reviewed, and its approval status.
- Unknowns and exceptions: fields that are unconfirmed, conflicting, or not applicable, represented explicitly rather than silently omitted.
- Operational handling: a pointer to the venue’s staff process for questions the record cannot answer, including preparation and cross-contact.
These are design recommendations, not fields mandated by Google. A successful database read only proves that data was returned; it does not establish that the information reflects the current menu or the drink actually made.
Constrain the response, then validate its meaning
Gemini’s structured-output feature can constrain a response to a schema. Google states, “You can guarantee that a model’s generated output always adheres to a specific schema so that you receive consistently formatted responses.” This concerns response format, not truth or food safety. Google also warns that JSON mode without a response schema is only a strong hint and recommends schema use and client-side validation where appropriate.

For a drink answer, an application-defined response structure could include the retrieved item identifier, recorded ingredient and allergen fields, record timestamp, unknown fields, and an escalation state. The application should validate that structure and check its contents against the retrieved records before displaying the result. The model should not be allowed to invent a missing ingredient list or turn an empty field into a reassuring answer.
- Return a source record or an explicit “no matching record” result.
- Preserve unknown and conflicting values instead of smoothing them into a confident sentence.
- Use a defined escalation state when the requested detail is absent or concerns handling.
- Keep the customer-facing wording consistent with the validated data and the venue’s approved process.
Protect the data path and change process
Only the application components that need menu information should receive access to it, and write access should follow the venue’s approval process. Google’s Firestore transaction documentation describes using security rules to validate certain transactions and batched writes. In particular, getAfter() can check document state after a set of writes but before the transaction or batch commits; the documentation also specifies access-call limits for rules in these operations.

That mechanism can enforce selected data invariants—for example, conditions that must hold across related writes—but it is not a complete security review. It does not establish that an ingredient or allergen declaration is substantively correct. Review permissions, application behavior, rule coverage, and the record-approval process as separate controls.
Build and deploy in stages
Google’s Agent Runtime quickstart walks through project and API setup, an ADK agent configured with a Gemini model and a tool, local testing, deployment, use, and cleanup. Its example uses the model identifier gemini-3.5-flash; that is an example in the quickstart, not a timeless recommendation. Model identifiers, availability, and supported regions can change, so check current Google documentation for the intended deployment region before selecting one.

- Choose the data contract first. Decide what the venue approves as a record, how unknowns are represented, and which questions always go to staff.
- Build a narrow retrieval tool. Make it return only the relevant venue records and necessary context. Do not treat arbitrary model-generated database queries as a substitute for an explicit access boundary.
- Define the response schema and checks. Validate both the structure and the relationship between the response and the retrieved record.
- Test locally with failure cases. Include missing items, ambiguous names, incomplete allergen fields, conflicting records, and handling questions—not only straightforward lookups.
- Deploy and monitor the whole path. Confirm that the deployed agent can retrieve approved data and that uncertainty and escalation behavior remain intact.
ADK’s overview names Agent Runtime, Cloud Run, and Google Kubernetes Engine as possible deployment targets; the quickstart specifically teaches Agent Runtime. The material cited here does not establish a cost, latency, or allergen-accuracy ranking among those options. Choose based on the team’s operational requirements and verify current platform support.
Keep food-safety decisions with the venue
The FDA’s allergen page discusses a 2005 Compliance Policy Guide on allergen labeling and preventing cross-contact. It also records that on May 16, 2023, the agency announced draft guidance which, if finalized, would replace existing staff guidance. That date describes a draft-guidance announcement; it should not be presented as final guidance. The page alone does not establish every current food-service obligation, local rule, or venue procedure.
For the product, the practical rule is straightforward: answer from venue-approved records, disclose when those records do not answer the question, and direct customers to staff for confirmation about preparation and cross-contact. Software can make information easier to retrieve; it cannot stand in for a food-handling process.
