AI vs. Lab Testing for Detecting Smoke Taint in Wine Grapes

Laboratory analysis plus a representative microfermentation and disciplined sensory tasting is still the most defensible way to assess smoke-tainted grapes. AI and electronic-nose (e-nose) systems can rapidly infer treatment groups, chemical-marker levels or sensory outcomes from wine readings, but the published evidence does not show that an AI sensor can directly detect odorless, bound smoke compounds on intact grape bunches or replace laboratory testing for harvest, buyer, insurance or release decisions.

Use AI/e-nose tools, where available, as rapid screening or process support. Base a consequential decision on representative, variety-separated samples; an appropriate free- and bound-phenol laboratory panel; and, when the question is what wine the fruit may produce, a small-lot microfermentation followed by blind sensory assessment.

Why smoke-taint assessment is difficult

Wildfire smoke exposes vines to a changing mixture of volatile compounds. Grapes may absorb volatile phenols such as guaiacol, 4-methylguaiacol and cresols. Plant metabolism can then attach sugars to some of those molecules, creating glycosylated or otherwise bound forms that are largely odorless in the fruit but can release aroma-active compounds during crushing, fermentation, aging or consumption.

That chemistry creates two separate questions. First, what smoke-related compounds are present in the sampled grapes or wine? Second, will a finished wine smell or taste smoky, medicinal, ashy or otherwise objectionable to a particular taster? A chemical result answers the first question only partially, and an e-nose pattern is an indirect answer to either question. Neither should be treated as a universal “tainted” switch.

Variety, site, smoke composition, exposure timing, fruit maturity, processing and fermentation all influence the outcome. Compounds can also occur naturally in grapes, so a positive measurement does not automatically indicate perceptible smoke damage. Oregon State University (OSU) Extension therefore cautions that grape analysis alone often cannot reliably predict the risk of smoke-affected wine.

What AI and electronic noses actually do

An electronic nose uses an array of chemical sensors to produce a pattern from a headspace or liquid sample. A machine-learning model is trained to associate those patterns with labels or target measurements supplied by conventional methods. In the smoke-taint evidence, the model reads a wine or related sample and infers a treatment class, estimated marker concentration or sensory descriptor. It is not a magic detector that identifies every smoke molecule on an untouched bunch.

The 2020 field-trial study

A study published in Sensors in 2020 exposed vines to low- and high-density smoke, included a misting treatment and controls, and produced wines from five research treatment groups. A low-cost e-nose was used on the wines. The treatment-classification model reported 97% accuracy across 300 samples.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

That figure belongs to the study’s dataset, treatment design and model. It is not a general commercial accuracy guarantee. The work did not demonstrate independent validation across arbitrary vineyards, varieties, wildfire mixtures, seasons or sensor hardware. A model trained on one experimental system can perform impressively on similar samples yet fail when the crop, climate, smoke chemistry or winemaking process changes.

Reported model-fit statistics

Target and sample context R R² Slope (b) How to read it
Berries one hour after smoke 0.98 0.95 0.97 Strong fit to the study’s estimated chemical target
Berries at harvest 0.99 0.97 0.96 Strong fit under the study’s harvest conditions
Wines 0.99 0.98 0.98 Strong fit for the tested wines and target method
Consumer sensory model using 12 descriptors 0.98 0.96 0.97 Strong fit to the study’s sensory dataset

These are correlations and model-fit results, not clinical-style sensitivity and specificity from an independent validation set. The paper specifically notes that smoke-derived phenols can be metabolized into odorless glycoconjugates. Its models could infer contaminant levels from sensor readings, but the e-nose could not directly “sniff” those contaminants from grape bunches.

Where an AI screen can help

  • Rapid triage: A grower or winery could flag lots that merit immediate laboratory or microfermentation work, provided the model has been validated for that operation.
  • Process monitoring: Repeated readings might reveal differences among tanks or treatment groups when the same sensor, preparation and model are used consistently.
  • Research and method development: Sensor data can be combined with chromatography and sensory scores to search for useful patterns.

Before relying on any product, ask which varieties, smoke conditions, sample types and target laboratory methods were used for training; whether the model was tested on independent vineyards; how drift and calibration are handled; and whether results are accepted by the buyer, insurer or contract that governs your lot. The reviewed evidence does not establish a validated AI product that replaces an accredited laboratory panel.

What laboratory analysis measures

Laboratories can measure selected free volatile phenols and, depending on the panel, bound or glycosylated smoke-related compounds. OSU’s analytical chemistry service lists free-phenol analysis for guaiacol, 4-methylguaiacol and the ortho-, para- and meta-cresols. Its bound-phenol analysis uses acid hydrolysis to estimate total smoke phenols. The listed instrumentation includes LC-MS/MS, LC-QToF, GC-MS/MS and GC-QToF.

Free versus bound compounds

  • Free phenols are volatile and can contribute directly to aroma. They are commonly measured in juice or wine.
  • Bound phenols are attached to sugar or other molecules. They may be odorless in grapes but can release volatile phenols during fermentation or later processing.
  • Total or hydrolyzed results estimate what may become available under the laboratory’s specified hydrolysis conditions; they are not a guaranteed prediction of what a particular commercial fermentation will release.

A 2024 peer-reviewed biomarker study analyzed samples from different varieties, sites and exposure levels with liquid-chromatography mass spectrometry. It reported 73 differentially expressed metabolites and structural assignments for 15 compounds, including guaiacol and syringol derivatives and novel glycosylated intermediaries. The finding shows that smoke-taint chemistry extends beyond a one-marker model; it does not make every identified metabolite a validated routine diagnostic.

Sample amounts and listed OSU fees

When accessed on October 9, 2026, OSU’s service page listed at least 50 mL of wine per variety or five to six frozen grape clusters per variety for its stated preparation. The listed fee was $225 per sample for free-phenol analysis and $270 per sample for bound-phenol analysis, with lower per-sample rates for larger batches. Fees, capacity, accepted matrices and turnaround can change during harvest or wildfire surges, so confirm them directly before shipping material.

Laboratory chemistry is objective evidence, but interpretation still requires context. Natural background levels vary by variety and site, and no universal concentration guarantees that consumers will perceive taint. Conversely, a low result on one panel cannot prove that a lot will taste acceptable if the panel omitted relevant compounds or the sample was not representative.

Why a grape result may not predict the wine

Fermentation changes extraction, metabolism and the balance between free and bound compounds. A grape sample can therefore understate or overstate the aroma and flavor of the wine made from it. OSU Extension recommends pairing chemical analysis with a representative microfermentation and sensory evaluation when the decision depends on the likely wine outcome.

Microfermentation as a bridge to production

A microferment turns a small, documented portion of the lot into wine under controlled conditions. It does not reproduce every detail of a commercial tank, but it exposes the fruit to crushing, skin contact, yeast activity and fermentation so that potential smoke expression can be judged more directly. The resulting wine can also be submitted for free- and bound-phenol analysis.

OSU’s guidance describes collecting at least 40–50 clusters across the relevant block and using a food-grade or stainless vessel for destemmed berries. A five-gallon food-grade fermentation bucket is simply a suitable container in that protocol; it is not a smoke detector and does not replace analytical testing.

A defensible smoke-taint assessment workflow

1. Contact the intended laboratory before collecting

Explain whether you have grapes, juice, a microferment or finished wine and what decision the result must support. Ask:

  • Which free and bound marker panel is appropriate?
  • What sample volume, container, freezing or preservative procedure is required?
  • What is the current turnaround and surge capacity?
  • Does the laboratory’s accreditation cover the requested analysis?
  • Will the report meet the buyer’s, insurer’s or contract’s documentation rules?

Laboratories differ in analytes, extraction methods, reporting units and acceptance criteria. Do not collect first and discover later that the sample type or quantity is unsuitable.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

2. Build a representative, variety-separated sample

Walk the relevant vineyard area and collect clusters throughout the block rather than taking fruit from a single edge, row or visibly damaged vine. Combine the representative fruit as the laboratory directs, keep each variety separate and label every container with block, variety, date, sampling location and collector.

Smoke exposure can vary with wind, canopy position, topography and proximity to a fire. If a buyer or insurer has prescribed collection rules, follow them exactly and preserve chain of custody. Photographing the block, recording weather and smoke timing, and retaining a written sampling map can make the result more useful in a later claim or contract discussion.

3. Time sampling close to harvest

OSU’s microfermentation advice says assessment is generally more accurate when sampling is as close to harvest as feasible. An early sample may require a later follow-up because compounds and their bound forms can change as fruit matures. The guidance gives more than 22 °Brix as a general guide for sampling, while noting that some varieties are normally picked at lower Brix. Follow the variety’s commercial maturity and the laboratory’s instructions rather than forcing every block to one number.

4. Use a microferment when wine outcome matters

  1. Collect at least 40–50 clusters distributed across the block, keeping varieties and management zones separate.
  2. Destem the representative berries into a clean food-grade or stainless vessel sized for the protocol.
  3. Record fruit weight, Brix, acidity or other measurements requested by the laboratory, and document the yeast, temperature, skin-contact and pressing conditions used.
  4. Ferment according to the laboratory or extension protocol, avoiding improvised differences among comparison lots.
  5. Retain enough wine for sensory work and any requested free- and bound-phenol analysis.

The exact protocol matters: a short, warm or highly extractive microferment may not behave like the intended commercial process. Treat it as a standardized decision aid, not a promise that a full-scale tank will be identical.

5. Run a controlled sensory evaluation

Sensory work is subjective, but a consistent design makes it more informative. Use multiple tasters where possible. Screen them with known impacted and unaffected reference wines, code samples blind, taste each sample at least twice and leave at least two minutes between samples to reduce carryover. Serve samples in a consistent order and record aroma, flavor, finish and descriptors such as smoky, ashy, medicinal or burnt.

OSU notes that many people are not sensitive to smoke taint. A single person’s “I do not smell smoke” is therefore weak evidence, just as one person’s strong reaction may not represent the entire consumer or buyer population. Keep the tasting notes with the sample identity and date, and distinguish a panel consensus from an individual threshold.

6. Interpret chemistry, sensory results and the business requirement together

Share the complete record with the winemaker, buyer, laboratory and insurer as appropriate. Ask the laboratory to explain the analytes, reporting limits, uncertainty and whether a result is elevated relative to a relevant baseline. Ask the buyer or insurer which evidence it accepts and whether a specific contract or claim threshold applies.

OSU reports that the U.S. Department of Agriculture’s Risk Management Agency has not established a specific smoke-compound threshold for determining smoke damage. Extension guidance discusses values that some laboratories consider elevated and says results should support elevated guaiacol and 4-methylguaiacol in the described insurance context, but those compounds can occur naturally. Do not convert any quoted value into a universal sensory cutoff without confirming the governing policy or contract.

How to choose evidence for a specific decision

Harvest or segregate a block

Start with representative sampling and laboratory chemistry. If timing allows, add a microferment and sensory panel before blending exposed fruit with unaffected lots. A rapid AI screen can prioritize which blocks to test first, but it should not be the sole basis for accepting fruit.

Release a finished wine

Use the finished wine for laboratory analysis and blind sensory evaluation. Grape chemistry from an earlier date is supporting information, not a substitute for examining the wine that will actually be sold.

Support an insurance or buyer discussion

Follow the collecting party’s prescribed sampling and chain-of-custody rules. Preserve raw laboratory reports, sample identifiers, microfermentation notes, sensory scores and photographs. Confirm in writing which analytes and thresholds the policy or contract recognizes; a research statistic or an AI score is not automatically admissible evidence.

Common failure modes and fixes

  • Testing one bunch or one row: Smoke exposure is spatially uneven. Fix: sample throughout the block and document the map.
  • Combining varieties: Varieties can differ under similar exposure. Fix: keep varieties separate from collection through reporting.
  • Sampling too early and treating it as final: Fruit chemistry can change before harvest. Fix: sample close to harvest and plan a follow-up when an early test is unavoidable.
  • Testing only free phenols: Bound compounds may later release during fermentation. Fix: ask whether a bound or hydrolyzed panel is needed.
  • Turning a concentration into a sensory verdict: Natural baselines and individual sensitivity vary. Fix: combine chemistry with microfermentation and a controlled panel.
  • Quoting the 97% e-nose result as commercial accuracy: The number came from 300 samples in a specific 2020 research model. Fix: describe the dataset and require external validation before operational use.
  • Using an unvalidated home tasting: Carryover, expectation and insensitive tasters can obscure taint. Fix: blind-code samples, use references, repeat tastings and allow at least two minutes between samples.
  • Ignoring laboratory capacity: Harvest-season demand can affect turnaround. Fix: reserve capacity and confirm current instructions before shipping.

What current research does—and does not—show

USDA Agricultural Research Service work running from September 1, 2022 through August 31, 2027 is investigating additional smoke-taint compounds and potential in-process sensors. Wine Australia’s WA Ph2200 project ran from January 2023 through January 2026 to develop rapid analytical methods for early detection; its project description identifies preliminary trials as unpublished. These efforts show active method development, not a finished, universally validated commercial test.

The available evidence does not establish one model that has been externally validated across commercial varieties, regions, smoke types, seasons and sensor hardware. It also does not provide a direct comparison proving that AI/e-nose screening can replace a particular accredited laboratory panel for insurance, contract or release decisions. The practical choice is therefore complementary: use fast inference to support triage where its validation is clear, and use chemistry, microfermentation and sensory evidence for consequential decisions.

Practical bottom line

For grapes exposed to wildfire smoke, ask the laboratory what to collect, sample each variety representatively near harvest, test both free and relevant bound markers, and make a controlled microferment when the predicted wine matters. Use blind, repeated sensory evaluation with more than one taster. Treat AI and e-nose readings as indirect, model-dependent evidence unless the specific system has been independently validated for your fruit and accepted by the decision-maker. That combination gives a buyer, winemaker or insurer a traceable picture of both the chemistry and the wine’s likely sensory risk.
