To keep a YouTube stream running while hiding OBS, enable its system-tray option, then use the window’s Minimize button—not the close button. In OBS, open Settings > General > System Tray and select Always minimize to system tray instead of task bar. OBS stays open in the tray while it streams.
Minimize OBS to the system tray

Start your stream as usual, then click the window’s Minimize button. OBS will move to the system tray and remain running.

Do not click X if you mean to keep OBS open. The tray setting changes what the minimize button does; it does not turn the close button into a minimize control. An OBS forum clarification makes this distinction.
Start OBS already minimized
If you want OBS to open minimized, its documented launch parameter is --minimize-to-tray. OBS separately documents --startstreaming to start streaming automatically. These options control startup behavior; their documentation does not promise unattended or uninterrupted streaming. OBS launch parameters

Keep YouTube stream information visible
Minimizing OBS hides its interface, not the YouTube stream dashboard. For a smaller view of stream status and information, open YouTube’s Live Control Room and choose Pop-out dashboard to display the Live Control Panel. YouTube says the panel is available for streams using an encoder or webcam. It is a monitoring option, not a way to keep the OBS encoder running. YouTube Help: Create a live stream via webcam
What minimizing does—and does not—change
Minimizing OBS changes where its window appears; it does not itself improve stream stability or protect against a sleeping computer, network loss, or encoder failure. Keep the computer awake and the network and OBS available for the stream to continue. The cited OBS and YouTube documentation does not establish that minimizing prevents those interruptions.
