You can turn Nani’s voice memos into a searchable family cookbook, but an AI-generated transcript or recipe is a draft—not a recovered original. Keep the recordings and any recipe-card images unchanged, then create and review editable transcripts and recipe entries from them. To call the whole workflow “100% local,” verify that every step—from transcription through storage and backup—works without sending family material over a network.
What “100% local” means for a family cookbook
A device being an iPhone or Mac does not by itself prove that transcription, recipe structuring, search, synchronization, and backup all stay on that device. Check the data path at each stage, including whether an app uses a server, whether a model must be downloaded, and whether files sync to cloud storage. If any stage sends material off-device, describe the workflow as partly local rather than 100% local.
Apple documents different network behavior for different speech-recognition paths. Its Speech permission documentation says SFSpeechRecognizer captures audio and sends it to Apple’s servers for processing. Apple’s documentation also says SpeechAnalyzer transcriber modules do not send audio to Apple servers. These statements apply to the documented APIs; they are not a blanket guarantee about every Apple feature or third-party app.
Can you transcribe iPhone Voice Memos offline?
Apple’s built-in Voice Memos transcription has eligibility and availability limits. Apple Support lists iPhone 12 or later, supported languages, and regional limitations; check the current device, operating system, language, and region before relying on it as the only route. For developers or tools using SFSpeechRecognizer, the requiresOnDeviceRecognition setting is conditional. Apple says it prevents a request from sending audio over the network only when the recognizer supports on-device recognition, and notes that on-device requests may be less accurate. See Apple’s documentation for requiresOnDeviceRecognition. Do not assume the setting is available or silently falls back safely: verify support on the target device and confirm the chosen tool’s behavior.
Airplane mode is a useful practical check: try the intended import and transcription workflow with the device disconnected. If a step stops working, it may depend on a network connection. Passing this check is not a complete privacy audit, so also inspect the app’s processing and synchronization settings.

How to turn voice memos into recipes without losing the source
- Give each recipe a stable identity. Record a recipe ID, speaker, recording date if known, original filename, and any related card or cookbook page. Leave the original voice memo unchanged.
- Transcribe with the data path checked. Choose a method whose handling of existing recordings, offline processing, language support, and network fallback you have verified. Keep the transcript as an editable derivative, not a replacement for the audio.
- Structure the recipe while preserving what was said. Keep a verbatim transcript alongside a readable recipe. Separate ingredients as spoken from any normalized ingredient list, and keep family notes, substitutions, and distinctive wording.
- Mark gaps instead of filling them in. Use “not stated” or “confirm with Nani” for missing quantities, unclear steps, or uncertain temperatures and times. A language model cannot reliably recover an amount that the recording never supplies.
- Review against the recording. Have a family member compare the recipe with the audio. Confirm names, ingredients, quantities, temperatures, timing, and sequence with Nani where possible. A knowledgeable cook can check the sequence and units, but should not silently rewrite family shorthand.
- Export and back up the archive. Keep recipe text in a portable form and link it to the source audio and any image. Decide whether backups are encrypted and kept locally or stored in the cloud; cloud backup means the archive is not entirely local.
What to include in each recipe record
A practical entry can hold the recipe title; speaker and source details; verbatim transcript; ingredients as spoken; normalized ingredients; steps; yield; temperature and timing; family notes; uncertain passages; source-audio filename; scan or photo path; and revision history. This is an organizational approach, not a format required by Apple or an archive authority. Keep corrections traceable so later readers can tell what Nani said from what the family edited.
Apple’s DictationTranscriber documentation describes contextual strings or custom vocabulary as a way to bias transcription toward unusual words. This can help surface family names or ingredient terms, but it does not guarantee correct recognition. Check every important name and measurement against the audio.

Preserve recipe cards and other originals
If a voice memo refers to a handwritten card or cookbook page, keep that image connected to the recipe entry and preserve the physical original. The National Archives recommends scanning for electronic access and sharing while keeping originals safely stored. Its family recipe preservation guidance advises careful handling and flat storage where possible; for cards used while cooking, it recommends clear polyester film sleeves to guard against spills and greasy fingerprints. Larger collections can be kept in archival folders and boxes.

Make a cookbook that remains useful later
- Retain original audio and card images; treat transcripts and formatted recipes as editable copies.
- Keep an uncertainty marker wherever the source does not establish a detail.
- Record revisions so a future family member can distinguish a correction from Nani’s original wording.
- Use exportable text and maintain a backup plan that matches the privacy goal. A single device is not a durable archive by itself.
- Check app, operating-system, language, region, synchronization, and offline behavior before describing the complete workflow as local.
