The secret ingredient is a 12-ounce can or bottle of coffee stout beer. In the recipe for My Husband’s Smoky Bison Chili, it adds rich flavor with subtle coffee and chocolate notes—not a hidden spice blend. “Best” is the author’s personal verdict; the recipe does not report a controlled taste comparison.
What goes into the chili
The recipe makes 10 servings and lists 30 minutes of preparation, 2 hours of cooking and 2 hours 30 minutes total, according to the AOL/Allrecipes recipe published in 2025. Its base is ground bison, with three cans of beans, fire-roasted diced tomatoes, peppers and aromatics.
- 2 pounds ground bison
- Avocado oil, chili powder, ground cumin, smoked paprika, salt, dried oregano and black pepper
- Garlic, yellow onion and green bell pepper
- Chipotle peppers in adobo, an Anaheim chile pepper and 12 ounces of coffee stout beer
- Three cans of beans and fire-roasted diced tomatoes
How to make it on the stovetop
- Season the bison with the recipe’s spices, then brown it in a Dutch oven with avocado oil.
- Add garlic, onion and green bell pepper; cook until the vegetables soften.
- Stir in the chipotle peppers, coffee stout, beans, tomatoes and Anaheim pepper.
- Simmer the combined chili for 30 minutes. For the stovetop version, the recipe suggests adding ¼ teaspoon liquid smoke in place of smoking the bison.
A Dutch oven is the cookware specified for browning the bison and cooking the chili; a smoker is not necessary for the stovetop route.
Stovetop or smoker: which method to choose?

How to serve it
