And “sweet pepper” does not mean candy-sweet: it describes a family of mild peppers, from familiar blocky bells to long, tapered banana peppers. Their color, shape, and flavor make them more varied—and more useful in the kitchen—than the name suggests.
What makes a pepper “sweet”?
Sweet peppers are mild peppers, not peppers that necessarily taste sugary. The species Capsicum annuum includes both sweet and hot peppers, so the species name by itself does not tell you how much heat a particular pepper has. Bell peppers are the best-known sweet type, but they are only part of the family.
That family includes banana, cheese, cherry, and pimiento peppers as well as bells. They can be green, red, yellow, orange, purple, or other colors, and cultivars vary in shape and size. Think of “sweet pepper” as a broad culinary grouping rather than one uniform-looking pepper.
Why do bell peppers come in different colors?
Many bell peppers are harvested while still immature and green. If left on the plant, they may mature into red, yellow, orange, or another cultivar’s characteristic color. Fully mature bell peppers are generally slightly sweeter than immature green ones; Iowa State Extension also says they have higher vitamin content. The precise color and progression depend on the cultivar, so not every pepper follows the same green-to-red sequence.

A green bell pepper generally will not turn into a ripe red pepper on a windowsill: the color change happens as the fruit matures on the plant. An Ask Extension response recommends refrigerating green fruit rather than expecting it to ripen indoors. Color is therefore a useful clue to maturity in many bell peppers, not a guarantee that all colored peppers are the same variety or have followed an identical path.
How sweet peppers differ in shape and eating experience

The table describes common patterns, not a rule that every sweet pepper changes color or flavor in the same way. Cultivar variation is substantial; the color on the shelf does not, by itself, identify one universal taste.

How to choose and prepare sweet peppers
At the store
- Choose peppers that feel firm and have fresh green stems.
- Avoid wrinkling, black spots, or cuts.
Before eating or cooking
Wash peppers under cool running water. For a quick raw option, slice them into salads or sandwiches, or serve them with a dip.
Grill or roast
- Grill: Purdue Extension recommends a medium grill for about 20–25 minutes, turning the peppers occasionally.
- Oven: Halve and seed the peppers, then roast at 425°F for 20–25 minutes.
Those are Purdue Extension’s stated methods and timings; the actual time can vary with pepper size and equipment.

How to store them
For whole sweet peppers, Purdue Extension advises refrigerating them dry in a plastic bag in a drawer and using them within one week. This is household guidance for whole peppers, not a shelf-life guarantee for cut produce.
A separate USDA Agricultural Research Service report from 2015 summarized a fresh-cut storage study of 50 pepper varieties, including sweet bells and large elongated peppers as well as jalapeño and serrano types. Under that study’s cold-storage conditions, fresh-cut sweet bell and elongated peppers showed deterioration, including fluid leakage, after 10 to 14 days. That laboratory result does not establish how long cut peppers remain safe or appealing in a home refrigerator; follow household food-safety practices rather than treating the study interval as a home-storage target.

A varied pepper is a useful pepper
Sweet peppers offer cooks more than a choice between green and red. Their mildness, shapes, and range of maturity colors make them easy to use raw or cooked, while the differences between cultivars give growers and breeders many forms to work with. In the USDA ARS report, plant geneticist and research leader John Stommel put that diversity in breeding terms: “These results demonstrate that extensive genetic variation exists in peppers, which can lead to improved fresh quality via traditional breeding.”
