But no menu dataset establishes exactly when or why restaurants dropped it, and Swiss steak has not disappeared everywhere.
What is Swiss steak?
Swiss steak is a method of preparing less-expensive cuts such as round or chuck, rather than the name of a particular steakhouse cut. The meat is pounded or run through a tenderizing machine, browned, then cooked slowly until tender. The U.S. House of Representatives’ historical “Meat…for Thrifty Meals” booklet includes round, rump, chuck, or veal, with flour, pounding, browning, and slow cooking in tomatoes or water. Its suggested accompaniments include potatoes, rice, or noodles.
The familiar version is often braised in seasoned tomato sauce and served over mashed potatoes, but recipes vary. Charles Perry’s 1997 Los Angeles Times history notes that tomato steak and Swiss steak coexisted in the 1930s, and that tomato became the usual braising liquid by 1950. James Beard’s 1961 version, by contrast, did not use tomatoes. Tomato sauce is common, not a requirement of every version.
Does Swiss steak come from Switzerland?
The name does not establish a Swiss origin. Food Republic associates “Swiss” with the tenderizing process, sometimes called “Swissing,” but the name’s precise history remains uncertain. The dish is an American preparation; avoid treating its name as proof of a specific European origin.

How Swiss steak became familiar
The dates in food histories describe different milestones, not a settled invention date. Food Republic’s 2025 account says the preparation appeared in the United States as early as 1915 and spread through cookbooks in the 1920s. The Los Angeles Times says the name appeared in American cookbooks in the mid-1920s. A careful summary is that Swiss steak was appearing in American print by the early twentieth century and became a familiar economical meal by mid-century.
Food Republic suggests that the dish may have surged in 1930s Chicago, a major meatpacking center, alongside the availability of mechanical tenderizing. That is a proposed explanation, not a firmly documented origin. Its later popularity fits the practical appeal of making tougher, cheaper beef satisfying through tenderizing and slow cooking, but the sources do not quantify the effects of the Depression or wartime rationing on its popularity.

Why it faded from restaurant menus
The most plausible explanation is a change in what diners could buy and what restaurants wanted to serve. Food Republic’s retrospective account argues that in the 1960s and 1970s, more luxurious cuts became more accessible in groceries and steakhouses, making Swiss steak’s economical appeal less distinctive. Its companion overview also points to the dish’s association with cafeteria food and to changing attitudes toward tougher cuts.
Those explanations help make sense of the shift, but they do not prove a single cause. The available sources do not provide a restaurant-menu dataset showing when Swiss steak declined or how many restaurants removed it. It is more accurate to say that it faded from mainstream visibility than that it vanished: home cooks continued making it, and some restaurants may still offer it as a special. Current availability varies by place and is not comprehensively mapped.

What to know if you cook it today
Vintage recipes are useful for understanding the dish, not as current food-safety instructions. The USDA Food Safety and Inspection Service explains that mechanical tenderizing can carry bacteria from the beef’s surface into its interior. For mechanically tenderized beef, FSIS recommends cooking to 145°F and resting for three minutes, using a food thermometer to check the temperature. See its mechanically tenderized beef guidance.
